What really sets this destemmer apart from the competition is the infinite adjustability, allowing for a higher quality destemming and handling of your fruit. With dual independently driven variable speed motors, one to adjust the cage speed,

and the other to adjust the beater bar speed, you can now dial in your destemmer specifically to the varietal and minimize the amount of jacks and stems going into your must.
This machine is equipped with a devise to adjust the axial position between the cage and shaft, thus obtaining different clearances between rubber shoes and cage. This is particularly helpful when processing mechanically harvested grapes, in order to assure the effective removal of leaves and shoots from the inner cage surface.

Destemming Unit
The cage holes are of decreasing diameter and their drawn edges are burr free for better grape handling and less jacks and broken stems in your must.
Destemmers
The grape feeding is lead by a screw auger positioned at the beginning of the beating shaft to help provide consistent feed for better destemming. The infinite speed variation between the cage and beater bars guarantees a perfect soft destemming with any type of grape.

Multiple Rubber Cones System Rubber cones set with a special manufacturing shape assembled on two shafts counter-rotating at different speeds.
Multiple Rubber Cones Advantages: Crushing Capacity equal/higher than that of cylinders of more than double outer diameter (progressive crushing without the possibly of product accumulation inside the feed hopper).
Crushing / No Crushing System Wheel mounted crushing unit slides allowing both the crushing function cut out and a comfortable cleaning operation. A reference switch enables the crusher operation only when in position. The system also allows for the crushing operation prior to destemming if desired.
Soft Tooth shaped product passage (high efficiency with small cone size and low rotation speed). The rubber cones will not crush your seeds. Adjustable clearance between cones (from 2 to 32mm) to carry out the requested crushing, avoiding skin and stalk tearing.

Sorting Tables are a great addition to your crush pad in order increase the quality of the your high end wines. Having a sorting table allows you to go through your fruit post or even predestemming and remove any undesirable berries or clusters.

Vibrating Tables
Our sorting tables stand alone in the industry. Unlike standard sorting tables using a screened application, our tables use a series of rolled bars. This rolled bar system is not only very gentle on the fruit, it is far more effective at removing MOG (materials other than grape) and juice then

The ATI Softpress, in the standard version, is an open press composed of a cage perforated on the entire circumference with a central tubular membrane in the tank with extra-thick pure rubber. The membrane inflation occurs rapidly during tank rotation, and thanks to the cylindrical form it takes, the product is uniformly distributed over the entire perforated surface of the cage at 360°. This makes it possible to combine the advantage of the central

membrane (better ratio between draining surface and thickness of the material being pressed) with the advantages of the elastomeric membrane (better cleaning and homogeneous distribution of the pressure even at low pressure levels). As a result, musts pressed with elastomeric membranes, (due to greater dripping capacity and reduced work time) have less oxidation, less browning, and less skin laceration.

Tight on space in your winery? Rectangular tanks are the most effiecient way to maximize the space in your winery. They are great for smaller areas, narrow basements, vaulted cellars, and space restrictions at the entrances. They are constructed entirely of AISI-304 stainless steel. All inner edges of the tank are made without corner welds. The inner surface is smooth and easy to clean. These tanks have a sloping bottom which allow for easy removal of the remainder of your must or wine. Lifting hooks are welded onto the top of these tanks to make transporting them with a forklift very easy.

These rectangle tanks come with an upper manway port, a rectangle manway, a two way relief valve, 1/2” inert gas valve, a level indicator, sample port, racking port, and drain port. These can also be made with cooling jackets for temperature control.
Hybrid Fermenting Tanks Satisfying the fine taste of the wine-maker we are combining the stainless steel’s wellknown facilities with the incomparable qualities of the selected oak in these hybrid tanks. These hybrid fermenting tanks are designed for maximal extraction of the desired components from the fermenting must and dignifying them with oaken nuances. Temperature control and the abilities for pump-over or punch downs allows the winemaker to completely control the process.
Stackable rectangle tanks are also available. They can feature all the above options and can stacked 3 high when full. They currently come in 1000 and 1500 liter capacities.

The Experience®
The Experience® is Garbellotto’s latest creation. Designed as a one ton fermenting vat that doubles as a 1000 Liter (264 Gallon) aging vessel. Made of the finest French Oak at the toast level of your preference your wines are destined to make a statement of character. The Experience® has a fully sealable stainless lid, making it more than just a fermentation vat. It is also fully rotatable and easy to dump into you press. It includes a 2” tri-clover total drainage port coming off the bottom of the vat, which includes a ball valve. They are also stackable which allows for a smaller footprint in your winery that standard barrels.

Quality
Wines fermented in oak vats benefit from the antioxidizing effect of the tannin combined with the micro-oxygenation of the wood. This brings out a more limpid production of the wine or must along with a more stable aroma and color.
Precision
The Vats are given a slight curving using direct fire to the vats, technically called “bombè” so the hoops are always perfectly watertight thus avoiding the long term sagging of the stave.

All Garbellotto’s casks go through a strict double control procedure. First with steam and then with water to check the exact capacity and ensure they are perfectly watertight. The Staves are curved evenly from end to end without weakening the belly of the stave. This ensures the thickness of the stave is the same all along the entire stave allowing for a more solid cask. Our casks also use a double arch on the heads (for casks over 1500 liters) which creates the perfect holding power for long term usage. This system of cask building avoids the heads of the cask needing additional cross supports which can weaken the staves over time.

Garbellotto’s Small Cask and Barrels come from the best forest in Europe, France (Allier, Never, Vosges, etc.) Slavonia, Bosnia, and Balkans. They can be made from one particular forest or a blend of forests.
The craftsmanship of Garbellotto’s barrel is first class. It’s obvious that they have been building barrels for over 200 years and have truly perfected the art. The six narrowly spaced hoops are slightly wider than most other cooperages use giving a solid construction for years to come. The head hoops are 2.75” followed by a 2” hoop followed by the middle barrel hoops which are 2 3/8”.
Small Casks (550, 750, 1000 Liter)
Small cask combine the convenience of large casks with the refining speed of barrels. With convenient accessories found on large casks like valves and small doors, small casks do not need to be moved for racking and cleaning. They can easily be stacked and add another level of ambiance to your cellar. This can be a big time and space saver for your winery.

Garbellotto’s barrel stave curving is carried out with direct fire using pieces of seasoned oak to avoid aromatic interference. This is followed by a slow delicate toasting in conditions of controlled humidity to ensure the maximum aromatic efflux from the wood. Toasts can be light, medium, medium strong, and strong. The heads are toasted seperately and then assembled.

Vintner’s Vault Monster Plus This Glycol heater is designed as an on demand heater for use with existing tank installed thermostats and fluid control solenoids. The heater will only supply warm glycol when the tank mounted thermostat asks for it, by opening the solenoid valve. This glycol heater can be plumbed into single tanks, multiple tanks, hard lined glycol systems, or simultaneously.

Stackable Chillers
As your winery grows so will your cooling demands. Our stackable chilling systems are a perfect fit because you can increase the cooling capacity of them by just adding extra modules without replacing the entire chiller.
These systems come with a insulated reservoir tank and dual circulation pumps. One for pumping glycol to the processes (wine tanks, air-handlers) and one pump for circulating glycol through the coils.
Besides being able to add modules to the chilling system, the system is energy efficient by only running the smallest module needed, for the current cooling demand. For example a 20 ton chilling system would have a 5, and two 7.5 ton modules. When not in peak cooling demand you will only be running the 5 ton module, saving you money on electricity.
We also set them with a pressure switch so when there is no cooling demand from the temperature control valves on your tanks or your thermostat in your winery the system shuts itself off. As soon as a solenoid valve opens because of a cooling demand the until automatically turns itself back on.

The Mono series rotary pump is a progressive cavity must pump that is used in the wine and agricultural industry. The operation of this pump is characterized by a stainless steel eccentric feed auger, a stainless steel rotor and a non-toxic food grade rubber stator that guarantees a good seal. The product is conveyed by the screw inside the stator and is driven by the rotor into the outlet pipe. The pump provides enough pressure allowing you to move your must to wherever you need it. Crossflow Filters Our crossflow filters, manufactured in Italy, by Velo Acciai are designed with the objective of having a big filter area in a very small space. This is possible thanks to the particular capillary polypropylene membranes made exclusively for Velo Acciai which have a filter area of over 18 square meters for each module; these membranes have an internal diameter of 1.8 mm with the choice of 2 different pore size (0.2 μ and 0.45μ) depending on the type of liquid to be filtered.

To maintain high filtration flow rates during the operating cycle, the filters are equipped with a system of automatic backwash of the membrane, the Back Wash System.
Reverse Osmosis Filtration Reverse Osmosis (RO) is a special type of filtration which has many applications in the production of quality wines. Unlike traditional wine filtration, the filtrate which passes through the filter membrane does not contain the flavor and color components of the wine. It contains virtually no anthocyanins, phenolics, tartaric, malic, or citric acids. Thus the characteristics that make up a fine wine, never actually go through the filter. With an RO filtration plant, unlike a traditional filter, you generally keep what does not go through the filter. Depending on what the winemaker is trying to ac-
complish, the filtered material is either discarded, or may be further treated and blended back into the wine. Because the filter membrane is so tight (10,000 times tighter than a sterile filter), large flows of wine are recirculated across the filter surface (Cross Flow) to scrub the membrane and keep it from fouling. Only the smallest molecules present in wine can pass through the filter membrane. Manly water and ethanol which make up 75%, acetic acid 60%, ethyl acetate 40%, and latic acid 15%.

Centrifugal clarifiers can be employed in a variety of process stages in wineries. The most common application is for must clarification to remove impurities like broken cells, dirt and soil, pesticide residue, bacteria, fungi or grape decay. They can also be used in the clarification of lees in place of costly lease filters to minimize loss in the production processes.

The centrifuge process may also be employed in the place of filtration to clarify finished wines in preparation for bottling. This includes all forms of still and sparkling wines. Another excellent application for a Centrifuge is to spin off yeast and large particles after fermentation or in many cases during fermentation to remove yeast and stop the fermentation. Practically Perfect
In 2001 Borelli introduced the EVO valves with a new internal profile. With over 1,200 machines now equipped with our EVO valves, our engineer’s are very proud of what they accomplished but never stopped improving. The Evo has now evolved into the EVO2, which is rich in new technological advancements.
No Thread in Contact with the Liquid
For the best in sanitation practices, Borelli has successfully eliminated any thread contact with the fluid. There is only a small sanitary TIG weld that has been perfectly polished. The wide passage surfaces and the extreme accuracy of the finish allow easy sanitization of the valve.
Adaptable to any filling system
Gravity, low depression, high vacuum or light pressure. The Evo valve performs it’s work perfectly adapting itself to all filling systems with perfect levels in the bottle without the aid of external leveling devices.
High Standard of Performance
The new internal profile enables high productivity of the filling valve. With this innovating valve the filling speed can reach throughputs of 1,600 liter/ hour with a filler equipped with 10 valves having an external section of 15 mm (standard valve for glass bottles.) This performance can be obtained also through the gravity system, slower but more suitable for the bottling of wines and distillers, since it does not expose liquids to flows of contaminated air.
Self-Levelling
The air return hole is located under the slider and therefore the valve is completely closed if there is no bottle under it. Besides the advantage of preventing any oxidation of the filling liquid, this devise guarantees perfect levels without using external levelling systems

3. Opening System for Sterilization and Drying
For the washing before and after the bottling the valve is equipped with a forced-opening system by means of a clip to fit to the rod. This very simple device enables an effective use of the steam during sterilization and is very useful in the stage after bottling to maintain the valve open for perfect drying.

4. New Profile of the Valve Body
The new design of the profile enabled Borelli to insert a technopolymer bushing between the body of the valve and the slider. With this devise we gave an ultimate solution to the problem of possible grips, typical of the sliding of stainless steel on stainless steel surfaces. Besides, the particular position of this bushing prevents any contact with filling liquid even in the case of breakage of the internal gasket.

5. External Guide on Selflubricating Bush
Borelli also introduced a guide outside the body working on a self-lubricating bushing. This devise, allows for maintaining greater mechanical tolerance in the internal guide, the one between the body of the valve and the slider, with the advantage of higher resistance to wear and better mechanics of the whole valve.
6. New Profile of the Point
The new profile maximizes the passage of the liquid while the de-aeration tube enlarged to 8 mm ensures optimal performances even with particularly foaming wines or liquids.

The new gasket improves the descent of the liquid on the wall of the bottle and consequently the evacuation of the air outwards, increasing the performance of the valve.

The pneumatic cylinders with air recycling were introduced on borelli group fillers and monoblocks since before 2005. Borelli’s engineers have asserted that the mechanical system in the lifting cylinder is not the most reliable solution from the technical point of view. For this reason, pneumatic cylinders are mainly used on isobaric fillers and high performance fillers. Borelli has equipped all of it’s fillers, from the small semiautomatic rotary machine to the medium capacity lines, with pneumatic cylinders abandoning the mechanical spring cylinder technology all together.
Constant Thrust on the Whole Stroke

The cylinder maintains constant thrust throughout the entire stroke which leads to optimal pressure on the valve while working and slight resistance during the mechanical descent on the cam. The working capacity is thus greatly improved, while at the same time reducing the wear and time until possible breakage occurs.
The New Futura & Alexa Corkers
In the scope of the innovation of Borelli’s new range they have introduced two new corkers. The Alexa S2.0 for natural straight corks for a throughput of 2,000 bottles per hour and the new Alexa V2.0 and Futura V2.0 for aluminum screw caps with a throughput of over 2,000 bottles per hour respectively. The Futura has been completely revised to improve the adaptability of the single turrets on the various models of monoblocks. This solution allows for installing on the same chassis any closing turret or multiple closing turrets and thus cancelling the extra design cost. This extreme flexibility leads to a wider choice of affordable options for your bottling line.
Longer Stroke and Constant Thrust equals Fewer Adjustments, more Efficiency
The stroke of our cylinders is 150 mm, with it’s constant pressure will require less frequent adjustments of the height of the tank. It is possible to maintain the same height of tank for bottles ranging in variation of up to 40 mm. This advantage is a huge time saver when bottling, that means saving money on labor!
Easily Adaptable Thrust
Another advantage is the ability to vary the pressure of the cylinder simply by regulating the inlet pressure of the air circuit. In this way the thrust is easily adaptable to the type of valve fitted on the machine and the type of bottle used. To vary the thrust of a mechanical spring cylinder the only way is to change out the spring entirely, not a very efficient option.
No Wear
The Blue Section corresponds to the moving parts of the pneumatic cylinder.
It is well known that springs deteriorate over time and lose their original thrust. Springs require frequent maintenance to maintain full efficiency. The pneumatic cylinder does not wear and keeps developing the same thrust regardless of the number of hours worked.

Isobaric Bottling Lines allow for the bottling of all carbonated beverages. Iso meaning same and baric relating to pressure means the bottling line fills the bottles under pressure allowing for fast filling without creating any foam. The filler tank on the bottling line is pressurized and so are the bottles prior to filling.
Descrambling Tables are a great way to feed your empty bottles into your bottling line. Having a table where cases of empty glass can be turned over and automatically fed into the bottling line can save both time and money. They can also decrease the number of staff required to feed the bottling line.
Our Isobaric bottling lines can be equipped with any of the options found on the rest of Borelli’s bottling lines. Crown capping is the most popular closure for carbonated beverages like sparkling wines, beers and sodas however these lines can be built with several different closure devises. The Tecna Rinsers can also be placed in front of the isobaric filler as well. Borelli’s Isobaric Bottling Lines can also bottle still wines. Saccharomyces cerevisiae strain of medium vigor, noted for its ability to enhance mouth-feel, particularly for barrel fermented Chardonnay matured on yeast lees. Cru-Blanc is a relatively high producer of glycerol. This strain can also contribute fruity aromatics during fermentation such as tropical fruit, pear and grapefruit. Malolactic fermentation by lactic acid bacteria proceeds well following alcoholic fermentation by this yeast.

The Australian Wine Research Institute (AWRI) has produced a new hybrid wine yeast strain using non-GMO techniques to increase flavor and aroma diversity in red and white wine, as well as increasing palate intensity, mouth-feel and fruit concentration. This stable hybrid strain, was developed by mating a closely related Saccharomyces kudriavzevii yeast with AWRI 838, which has the same parentage as the efficient, reliable fermenter Maurivin PDM.

A Saccharomyces cerevisiae strain that exhibits complex aromatics during fermentation, often described as ‘old world wine’ characters reminiscent of complex, indigenous natural ferments.
