With dual independently driven variable speed motors, one to adjust the cage speed, Eccentric Mechanism and the other to adjust the beater bar speed, you can now dial in your destemmer specifically to the varietal and minimize the amount of jacks and stems going into your must. This machine is equipped with a devise to adjust the axial position between the cage and shaft, thus obtaining different clearances between rubber shoes and cage. This is particularly helpful when processing mechanically harvested grapes, in order to assure the effective removal of leaves and shoots from the inner cage surface. 5 Destemming Unit The cage holes are of decreasing diameter and their drawn edges are burr free for better grape handling and less jacks and broken stems in your must. Destemmers The grape feeding is lead by a screw auger positioned at the beginning of the beating shaft to help provide consistent feed for better destemming. The infinite speed variation between the cage and beater bars guarantees a perfect soft destemming with any type of grape. Having a sorting table allows you to go through your fruit post or even predestemming and remove any undesirable berries or clusters. 11 Our sorting tables are all custom built to order and can come in a number of different lengths, widths and heights to meet your wineries specific sorting needs. Unlike standard sorting tables using a screened application, our tables use a series of rolled bars. This rolled bar system is not only very gentle on the fruit, it is far more effective at removing MOG (materials other than grape) and juice then that of the screened style sorting tables. The bars also drop in 2 or 3 sections depending on the unit to further assist in the removal of any MOG that may have remained in the destemming process. Our vibrating tables can additionally act as a hand sorting area if desired. The membrane inflation occurs rapidly during tank rotation, and thanks to the cylindrical form it takes, the product is uniformly distributed over the entire perforated surface of the cage at 360°. This makes it possible to combine the advantage of the central Cake Breaking membrane (better ratio between draining surface and thickness of the material being pressed) with the advantages of the elastomeric membrane (better cleaning and homogeneous distribution of the pressure even at low pressure levels). As a result, musts pressed with elastomeric membranes, (due to greater dripping capacity and reduced work time) have less oxidation, less browning, and less skin laceration. Rectangular tanks are the most effiecient way to maximize the space in your winery. They are great for smaller areas, narrow basements, vaulted cellars, and space restrictions at the entrances. They are constructed entirely of AISI-304 stainless steel. All inner edges of the tank are made without corner welds. The inner surface is smooth and easy to clean. These tanks have a sloping bottom which allow for easy removal of the remainder of your must or wine. Lifting hooks are welded onto the top of these tanks to make transporting them with a forklift very easy. Tanks These rectangle tanks come with an upper manway port, a rectangle manway, a two way relief valve, 1/2” inert gas valve, a level indicator, sample port, racking port, and drain port. These can also be made with cooling jackets for temperature control. Hybrid Fermenting Tanks Satisfying the fine taste of the wine-maker we are combining the stainless steel’s wellknown facilities with the incomparable qualities of the selected oak in these hybrid tanks. These hybrid fermenting tanks are designed for maximal extraction of the desired components from the fermenting must and dignifying them with oaken nuances. The Experience® 39 Quality Wines fermented in oak vats benefit from the antioxidizing effect of the tannin combined with the micro-oxygenation of the wood. First with steam and then with water to check the exact capacity and ensure they are perfectly watertight. The Staves are curved evenly from end to end without weakening the belly of the stave. This ensures the thickness of the stave is the same all along the entire stave allowing for a more solid cask. Our casks also use a double arch on the heads (for casks over 1500 liters) which creates the perfect holding power for long term usage. This system of cask building avoids the heads of the cask needing additional cross supports which can weaken the staves over time. Getting 25 to 35 years of usage is the normal lifespan of our casks, however they can greatly outlast that lifespan. Our stackable chilling systems are a perfect fit because you can increase the cooling capacity of them by just adding extra modules without replacing the entire chiller. This is possible thanks to the particular capillary polypropylene membranes made exclusively for Velo Acciai which have a filter area of over 18 square meters for each module; these membranes have an internal diameter of 1.8 mm with the choice of 2 different pore size (0.2 μ and 0.45μ) depending on the type of liquid to be filtered. Filtration To maintain high filtration flow rates during the operating cycle, the filters are equipped with a system of automatic backwash of the membrane, the Back Wash System. Reverse Osmosis Filtration Reverse Osmosis (RO) is a special type of filtration which has many applications in the production of quality wines. Unlike traditional wine filtration, the filtrate which passes through the filter membrane does not contain the flavor and color components of the wine. It contains virtually no anthocyanins, phenolics, tartaric, malic, or citric acids. Thus the characteristics that make up a fine wine, never actually go through the filter. With an RO filtration plant, unlike a traditional filter, you generally keep what does not go through the filter. Depending on what the winemaker is trying to ac- complish, the filtered material is either discarded, or may be further treated and blended back into the wine. Because the filter membrane is so tight (10,000 times tighter than a sterile filter), large flows of wine are recirculated across the filter surface (Cross Flow) to scrub the membrane and keep it from fouling. Only the smallest molecules present in wine can pass through the filter membrane. Manly water and ethanol which make up 75%, acetic acid 60%, ethyl acetate 40%, and latic acid 15%. The most common application is for must clarification to remove impurities like broken cells, dirt and soil, pesticide residue, bacteria, fungi or grape decay. They can also be used in the clarification of lees in place of costly lease filters to minimize loss in the production processes. Bottling Lines Practically Perfect In 2001 Borelli introduced the EVO valves with a new internal profile. With over 1,200 machines now equipped with our EVO valves, our engineer’s are very proud of what they accomplished but never stopped improving. The Evo has now evolved into the EVO2, which is rich in new technological advancements. No Thread in Contact with the Liquid For the best in sanitation practices, Borelli has successfully eliminated any thread contact with the fluid. There is only a small sanitary TIG weld that has been perfectly polished. The wide passage surfaces and the extreme accuracy of the finish allow easy sanitization of the valve. Adaptable to any filling system Gravity, low depression, high vacuum or light pressure. The Evo valve performs it’s work perfectly adapting itself to all filling systems with perfect levels in the bottle without the aid of external leveling devices. High Standard of Performance The new internal profile enables high productivity of the filling valve. With this innovating valve the filling speed can reach throughputs of 1,600 liter/ hour with a filler equipped with 10 valves having an external section of 15 mm (standard valve for glass bottles.) This performance can be obtained also through the gravity system, slower but more suitable for the bottling of wines and distillers, since it does not expose liquids to flows of contaminated air. Self-Levelling The air return hole is located under the slider and therefore the valve is completely closed if there is no bottle under it. Opening System for Sterilization and Drying For the washing before and after the bottling the valve is equipped with a forced-opening system by means of a clip to fit to the rod. New Profile of the Valve Body The new design of the profile enabled Borelli to insert a technopolymer bushing between the body of the valve and the slider. With this devise we gave an ultimate solution to the problem of possible grips, typical of the sliding of stainless steel on stainless steel surfaces. Besides, the particular position of this bushing prevents any contact with filling liquid even in the case of breakage of the internal gasket. 3 5. External Guide on Selflubricating Bush Borelli also introduced a guide outside the body working on a self-lubricating bushing. This devise, allows for maintaining greater mechanical tolerance in the internal guide, the one between the body of the valve and the slider, with the advantage of higher resistance to wear and better mechanics of the whole valve. 6. New Profile of the Point The new profile maximizes the passage of the liquid while the de-aeration tube enlarged to 8 mm ensures optimal performances even with particularly foaming wines or liquids. 7. Borelli’s engineers have asserted that the mechanical system in the lifting cylinder is not the most reliable solution from the technical point of view. For this reason, pneumatic cylinders are mainly used on isobaric fillers and high performance fillers. Borelli has equipped all of it’s fillers, from the small semiautomatic rotary machine to the medium capacity lines, with pneumatic cylinders abandoning the mechanical spring cylinder technology all together. Constant Thrust on the Whole Stroke Bottling Lines The cylinder maintains constant thrust throughout the entire stroke which leads to optimal pressure on the valve while working and slight resistance during the mechanical descent on the cam. The working capacity is thus greatly improved, while at the same time reducing the wear and time until possible breakage occurs. The New Futura & Alexa Corkers In the scope of the innovation of Borelli’s new range they have introduced two new corkers. The Alexa S2.0 for natural straight corks for a throughput of 2,000 bottles per hour and the new Alexa V2.0 and Futura V2.0 for aluminum screw caps with a throughput of over 2,000 bottles per hour respectively. The Futura has been completely revised to improve the adaptability of the single turrets on the various models of monoblocks. This solution allows for installing on the same chassis any closing turret or multiple closing turrets and thus cancelling the extra design cost. Longer Stroke and Constant Thrust equals Fewer Adjustments, more Efficiency The stroke of our cylinders is 150 mm, with it’s constant pressure will require less frequent adjustments of the height of the tank. It is possible to maintain the same height of tank for bottles ranging in variation of up to 40 mm. This advantage is a huge time saver when bottling, that means saving money on labor! Easily Adaptable Thrust Another advantage is the ability to vary the pressure of the cylinder simply by regulating the inlet pressure of the air circuit. In this way the thrust is easily adaptable to the type of valve fitted on the machine and the type of bottle used. To vary the thrust of a mechanical spring cylinder the only way is to change out the spring entirely, not a very efficient option. No Wear The Blue Section corresponds to the moving parts of the pneumatic cylinder. It is well known that springs deteriorate over time and lose their original thrust. Springs require frequent maintenance to maintain full efficiency. Iso meaning same and baric relating to pressure means the bottling line fills the bottles under pressure allowing for fast filling without creating any foam. The filler tank on the bottling line is pressurized and so are the bottles prior to filling. Descrambling Tables are a great way to feed your empty bottles into your bottling line. Having a table where cases of empty glass can be turned over and automatically fed into the bottling line can save both time and money.
