Recipe: Porterhouse Steak with Roasted Vegetables and Maple Mustard Glaze
Ingredients: 4 porterhouse steaks, 1 large sweet potato diced, 2 large carrots diced, 3 large Ruby Lou potatoes diced, 1 tbsp. grainy mustard, 3 tbsp. maple syrup 3 tbsp. olive oil, 2 tbsp. chopped fresh herbs such as basil, chives and parsley. Salt and pepper to taste. Method: 1. Preheat the oven to 180oC. 2. Place the diced vegetables in a large bowl. 3. In a smaller bowl stir together the mustard, maple syrup and oil. 4. Pour the glaze mixture over the vegetables and stir well to coat. 5. Tip the vegetables onto a large baking tray and spread evenly. 6. Cook the vegetables for around 40 minutes (time will vary depending on your oven and the size of the pieces). 7. When the vegetables are almost done, preheat the grill or pan and cook the steak to your liking, and then let it rest for a few minutes. 8. Plate up the steak with a good serving of roasted vegetables on the side and some fresh herbs on top.

1. Turn on the BBQ to bring the hotplate or grill up to sizzling temperature 2. Pat the meat dry and drizzle on some good quality oil and season with salt and pepper on both sides (preparation is key!) 3. Get the meat cooking on one side - for a rare or medium steak turn only once when you see moisture on the surface of meat.. To enjoy your steak well-done you can turn it over again once moisture re-appears and reduce temperature until cooked. 4. Give the steak a rest for a couple of minutes after it comes off the hotplate 5. Test for doneness by pressing on the meat - the more firm the meat the more done it is.

RECIPE: Spicy Rump Steak with BBQ Potatoes

Ingredients: 1 kg Sliced Rump steak 2 tbsp olive oil 1 garlic clove, crushed 1 tsp chilli powder 2 tsp dried thyme 750g red potatoes 1 tsp ground coriander 1/2 tsp cracked black pepper Method: Combine olive oil, garlic, chilli, thyme, coriander, pepper and barbecue sauce in a small bowl. Place steaks in a large, shallow glass or ceramic dish. Spoon spice mixture over steak. Turn to coat, cover and refrigerate for 1 hour if time permits. Meanwhile, cook potatoes in large saucepan of boiling water for about 7 to 8 minutes or until just tender. Drain and rinse under cold water. Set aside for 10 mins. Cut diagonally into 1cm thick slices. Transfer potato to a bowl and add a little more olive oil. Toss to coat. Heat barbecue grill on medium-high heat. Place steaks on the grill. Season with salt and cook for 4 to 5 minutes each side for medium, or until cooked to your liking. Transfer to a plate and cover with foil to rest. Cook potato slices on BBQ for about 2 minutes each side or until charred slightly. Serve steaks and BBQ potato with salad.

Ingredients: 4 Rankin Cod fillets 1 tbsp unsalted butter, plus some to oil roasting pan 2 tbsp extra virgin olive oil 6 garlic cloves, chopped 1 cup breadcrumbs 1⁄4 cup parsley, chopped 1⁄4 teaspoon kosher salt 1⁄4 teaspoon fresh ground black pepper 1 egg, beaten 4 lemon wedges, for serving Method: Preheat oven to 200 ° C. Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown. Remove pan from heat and add the bread crumbs, parsley, salt and pepper. Mix to moisten the crumbs and seasonings. Dredge each fish fillet in the beaten egg first. Then dredge each fish fillet into the crumb mixture. Place the coated fish fillets in an oiled roasting pan for the oven. Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky when cooked. Serve with lemon wedges.

Serves 4 King Prawns BBQ Style Serves 4 Ingredients: 1kg Large King Prawns 3 cloves garlic, peeled and coarsely grated 1 long red chilli, finely chopped 1 small bunch fresh coriander, washed & finely chopped 1 lemon zest Squeeze of lemon juice Pinch of sugar Pinch of Sea Salt 3 tbsp olive oil Method: Mix all ingredients together to make marinade. Pour over the prawns ensuring all are coated well. Refrigerate for 20 minutes. Barbecue the prawns in shell on a hot grill for 2-3 minutes each side or until just cooked. Squeeze over a little more lemon juice and serve.

Ingredients: 4 portions of Salmon – skin off 1⁄2 cup breadcrumbs, fresh 1⁄2 cup pine nuts 1 1⁄2 tbsp Dijon mustard 1 tbsp shallot, minced fine 1 tbsp olive oil 1 tbsp butter Method: Preheat oven to 170 ° C. Spread the breadcrumbs and pine nuts in a baking dish and bake for 10 minutes. Wash the salmon fillets. Pat dry and brush with the Dijon mustard. RECIPE: Chicken Leg Fillet – Butter Chicken Curry
Serves 4
Ingredients: 1 kg Beef Steak diced, 2 capsicums – any colours, 1 large red onion sliced into wedges, 15 medium bamboo or wood skewers, Ingredients: 1 cup olive oil, 1/2 cup fresh lemon juice, 1 tsp salt, 1 tsp black pepper, 4 garlic cloves crushed, 3 tbsp dill chopped, 2 dry bay leaves. Method: Combine all of your marinade ingredients in a large bowl and combine. Add diced steak into the marinade bowl stirring well to coat. Marinate beef in the refrigerator 4 to 6 hours, stirring a few times while marinating to make sure meat is evenly coated. If after being refrigerated the oil in the marinade has firmed up, let the marinated meat sit at room temp 30 minutes before skewering. Soak bamboo or wooden skewers at last 30 min before skewering. Slice veggies and skewer them with meat onto Bamboo skewers. Brush/ pour remaining marinade over skewers. Grill skewers over med/high heat for about 8-10 minutes or until you’ve reached the desired doneness, rotating every 2-3 minutes for even grilling. Remove skewers from grill and let them rest at least 5 minutes before serving.

Ingredients: 1kg Chicken leg fillets ( diced ), 2 tablespoons olive oil 50g butter 2 tbsp fresh ginger, grated Salt 2 cloves garlic, finely chopped 3 tsp ground coriander seed 3 tsp ground cumin 1 tsp ground cardamom ½ tsp ground allspice ½ tsp chilli powder 4 tbsp tomato paste 1 ½ cups tomato puree 2/3 cup natural yoghurt 1 cup thickened cream Coriander leaves Method: In a large non-stick pan, heat ¼ the oil and ¼ of the butter over medium-high heat. Brown ¼ of chicken pieces for about 3 minutes, then remove from the pan and set aside. Repeat with the rest of the oil, butter and chicken. Reduce the heat to medium-low. In the oil left in the pan, saute the ginger and garlic for a minute or two, then add the ground spices and cook for a further minute. Add tomato paste to the mixture and cook for another minute. Return chicken to the pan, along with tomato puree, yoghurt and cream. Simmer for 10 minutes or until chicken has cooked through. Taste and add a pinch of salt if necessary. Serve with basmati rice topped with extra yoghurt and scattered with coriander leaves.

Ingredients: 16 Lamb Rib Chops ½ cup chopped rosemary 2 tbsp minced garlic 1 whole lemon - zested 1 tsp Red Chili Flakes ¼ cup Extra Virgin Olive Oil Sea salt & ground black pepper Method : In a small bowl, mix together the rosemary, garlic, lemon zest, red chili flakes and olive oil. Place the lamb rib chops in a large sized resealable bag. Season the lamb well with salt and black pepper and pour the herb mixture into the bag ensuring all chops are coated well. Cover and refrigerate for 6-8 hours minimum but overnight is preferable. Remove the lamb 15 minutes before cooking. Preheat grill to medium high. Grill the chops on each side for 2-3 minutes for medium, allow lamb to rest for 5 minutes before serving. Serve with a salad of your choice.

BBQ Sausages – The Perfect Cooking Method

Ingredients: 1kg Premium Beef Mince, 1 tbsp olive oil, 1 large brown onion chopped, 3 garlic cloves crushed, 1/4 cup instant gravy powder, 1 cup Massel beef stock, 400g can diced tomatoes, 1.2kg sebago potatoes peeled & chopped, 50g butter, chopped, 1/2 cup milk, 1/4 cup grated tasty cheese. Method: Preheat oven to 200°C. Heat oil in non-stick frying pan over medium-high heat. Cook mince in 2 batches, stirring with wooden spoon to break up mince for approx 10 minutes or until browned. Transfer to a bowl. Add onion and garlic to pan and cook for 3 minutes or until softened. Return mince to pan and add gravy powder. Cook through stirring for 1 minute. Add stock and tomato and bring to the boil. Reduce heat to medium-low and simmer ( stirring occasionally) for 25 to 30 minutes or until thickened. Meanwhile cook potato in a saucepan of boiling salted water for 10 to 12 minutes or until tender. Drain and mash until smooth. Add butter and milk and stir until butter has melted and mixture is combined. Spoon mince mixture into a 1.4 litre casserole dish. Top with potato mixture and sprinkle with cheese. Bake for 20 to 25 minutes or until golden.
