Thursday, August 7, 2008 — Eden Prairie News — Page 17 ON BUSINESS Auto Racing Challenge Deli Express, the nation’s largest supplier of hot and cold sandwiches sold through convenience stores, was recognized with the 2007 Vendor Partnership Award from the Army & Air Force Exchange Service (AAFES). The award recognizes Deli Express for its outstanding service to AAFES through continued sales growth and effective promotions and programs, according to a news release. “AAFES provides products and services to military families worldwide, generating funds that supplement military morale, welfare and recreation programs. Deli Express hot and cold sandwiches, bakery items and other food goods are sold at AAFES Shoppettes (on-base convenience stores) both domestically and overseas.” AAFES sales of Deli Express food items were up 44 percent in 2007 over 2006. Today AAFES is Deli Express’ third largest retail customer. Founded in 1955, Deli Express sandwiches can be found in more than 26,000 convenience stores, drug stores, vending machines, and other grocery outlets across the country. EDUCATION NOTES New president appointed to HTC According to a news release from the Minnesota State Colleges and Universities Web site, “Cecilia Y.M. Cervantes was appointed president of Hennepin Technical College today by the Minnesota State Colleges and Universities Board of Trustees. Cervantes, 59, is president of the College of Alameda in Alameda, Calif. Previously, she served as associate vice president for lifelong learning and career-technical education at El Paso Community College District in Texas; provost of the Transmountain campus of El Paso Community College District; associate campus director for instruction and associate professor of reading at Doña Ana Community College in New Mexico and vice president of academic affairs at Western New Mexico University. Cervantes also serves on the board and executive committee of the American Association of Community Colleges. ‘I am pleased that we attracted such a talented leader to our system, said Chancellor James H. McCormick. ‘Hennepin Technical College has many outstanding programs, and under Dr. Cervantes’ leadership, I am confident that the college will expand its innovative approaches to benefit students and the community.’ Ruth Grendahl, vice chair of the Board of Trustees, who participated in candidate interviews, said, ‘I believe Dr. Cervantes will lead the college in developing more partnerships with business and industry to ensure graduates receive a well-rounded education, one that equips them to be highly qualified workers and engaged citizens.’ ‘I am excited to be part of the next successful chapter of Hennepin Technical College,’ Cervantes said. ‘I will work diligently with my Hennepin Technical team to ensure that the college remains as the top provider of technical education in this area and beyond. She holds a bachelor’s degree in Spanish, a master’s degree in education from the University of Texas, El Paso, and a Ph.D. in curriculum and instruction from the University of Colorado. Cervantes’ appointment becomes effective Oct. 1. She will replace Marvin Patterson, who has been serving as interim president since former president Kathryn Jeffery resigned. Hennepin Technical College serves more than 8,200 students in credit courses annually and provides a wide array of diplomas, certificates and associate degree programs. SCOUTING NEWS Earns Eagle Scout Calvin Patrick Peters, 18, of Eden Prairie, has earned the Eagle Scout Award, the “highest rank advancement award the Boys Scouts of America offers to Scouts.” Calvin will be recognized for the award this Thursday, at 7 p.m., at the Eden Prairie United Methodist Church. According to a news release, “each candidate must earn 21 merit badges and successfully complete a community project to earn his Eagle. Calvin planned, coordinated and executed a blood drive through Memorial Blood Centers. This event was held on March 8, 2008, at Victory Lutheran Church. Calvin had a personal goal of 56 units and a total of 57 were collected.” Additionally, Calvin, son of Tim and Kay Peters has served as Asst. Patrol Leader, Patrol Leader, Librarian, Asst.
