AVOCADO HUMMUS 1 can garbonzo beans ½ ripe avocado 1 Tbsp. fresh lemon juice ½ garlic clove, minced Salt to taste 1 Tbsp. olive oil Water to desired consistency Combine all ingredients in a blender. Blend until smooth. Serve with vegetables or whole wheat chips/crackers. GREEN SMOOTHIE ½ cup spinach 1 ripe banana ½ ripe avocado ½ cup frozen or fresh berries ½ cup water (plus more if needed) Combine all ingredients in a blender. Blend. Add water until you reach desired consistency. ENERGY BALLS 2 cups oats 1 cup shredded, unsweetened coconut 1 T. chia seeds 1 T. hemp seeds ¼ cup coconut oil ½ cup peanut butter (or other nut butter) 6-8 dates 2 Tbsp. water Add all dry ingredients into a food processor and pulse for about 30 seconds. Add the dates, water, melted coconut oil and nut butter. Pulse for another minute or two. Scrape the mixture down until it is all mixed together well. Scoop a spoonful out at a time and form into balls.
