It is the user’s responsibility to see that the spit roaster is properly assembled, positioned, operated and maintained. Failure to properly follow the instructions in this manual could result in bodily injury and/or property damage. FOR YOUR SAFETY IF YOU SMELL GAS:         Turn OFF gas supply at the gas cylinder. Turn the control knob to the OFF position. Open the roasting hood Extinguish all naked flames; do not operate any electrical appliances including mobile phones. Ventilate the area. Check for leaks as detailed in this manual. If a problem is found other than a loose gas connection, do not try to fix that problem yourself. If odour continues or you have a fire you cannot extinguish, call your fire department. Do not call from near the LPG gas cylinder because your telephone is an electrical device and could create a spark resulting in fire and or explosion. PRECAUTIONS:            Leak test all connections after each cylinder refill. Never check for leaks with a lit match or open flame. Use the method outlined later in this manual. Do not store or use gasoline or other flammable vapours and liquids in the vicinity of this or any other appliance. Any Propane (LPG) cylinder not connected for use shall not be stored in the vicinity of this or any other appliance. This appliance is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they are given close, continuous supervision and instruction concerning use of the appliance by a person responsible for their safety. Children should be supervised to ensure that they do not play with the appliance. If the power supply cord is damaged, it must be replaced by the manufacturer, its service agent or similarly qualified persons in order to avoid a hazard. Take appropriate measures to ensure that all electrical connections are not exposed to moisture in any way. Turn off the rotisserie motor and disconnect it from the appliance when not in use, and before cleaning. Store the motor only in a clean, dry location, protected from the weather. The power supply cord should be regularly examined for signs of damage and the appliance is not to be used if the cord is damaged. Parts sealed by the manufacturer or his agent must not be altered by the user. IMPORTANT:             READ ALL OPERATING INSTRUCTIONS THROUGH BEFORE FIRST LIGHTING. Do not perform any servicing on the spit roaster yourself. This includes internal adjustment of the regulator and gas valves. Servicing can only be carried out by authorised technicians. When the gas cylinder is replaced or reconnected, check all connections for leaks before lighting. Do not store chemicals or flammable materials near this appliance. People with flammable clothing such as nylon etc. should keep well away from the spit roaster when it is operating or still hot. Do not leave food unattended on the spit roaster. Do not leave the motor running unattended. Fat fires are the most common cause of problems in barbeques. They are caused by a buildup of grease in the drip tray and the inside of the spit roaster frame. A fat fire can be very difficult to put out, and will be dangerous if it spreads to the gas hose. You should keep your spit roaster clean to avoid this occurrence. Fat fire damage is not covered under warranty. In the case of fat fire, turn the gas cylinder off, disconnect and remove the cylinder to a safe distance only if it is clearly safe to so. If in doubt, call the Fire Brigade, dial 000. Particular care must be taken when removing the drip tray. Hot fat can cause serious injury. Do not touch grease tray until the appliance has completely cooled. Minimum clearances from combustible materials must be: Sides 600mm; Rear 600mm; Above 1000mm Never leave burners on HI for more than 10 minutes unless actually cooking. If the burner makes a hissing sound when lit, it may be burning inside. Turn burner off, allow it to cool and try again. Do not allow build-up of unburned gas. Switch burner off when not lit. Make sure that the cylinder is positioned on the support hook whenever the hose and regulator is connected to avoid accidental movement of the spit and possible overstretching of the gas hose. The Roaster must be used in a well ventilated area. Do not obstruct the flow of combustion air to the burner when the roaster is in use. ONLY USE THIS GAS SPIT OUTDOORS. WHERE TO USE YOUR GAS SPIT: This appliance shall only be used in an above ground open-air situation with natural ventilation, without stagnant areas, where gas leakage and products of combustion are rapidly dispersed by wind and natural convection. Any enclosure in which the appliance is used shall comply with one of the following: 1. An enclosure with walls on all sides, but at least one permanent opening at ground level and no overhead cover. (See Figure F1). 2. Within a partial enclosure that includes an overhead cover and no more than two walls. (See Figures F2 & F3). 3. Within a partial enclosure that includes an overhead cover and more than two walls, the following shall apply--i. at least 25% of the total wall area is completely open; and ii. at least 30% of the remaining wall area is open and unrestricted. (See Figures F4 & F5). 4. In the case of balconies, at least 20% of the total of the side, back and front wall areas shall be and remain open and unrestricted. OTHER POINTS: This roaster is designed for use outdoors, away from any flammable materials. It is important that there are no overhead obstructions. It is important that the ventilation openings of the appliance are not obstructed. The roaster must be used on a level, stable surface. Your gas spit should not be placed under any surface that will burn. Strong winds and low temperatures can affect the heating and performance of your gas spit so factor in these elements when positioning your spit for cooking. The appliance should be protected from direct draughts and shall be positioned or protected against direct penetration by any trickling water (e.g. rain). Never use your gas spit in a garage, porch, shed, breezeway or any other enclosed area. Your gas spit is to be used outdoors only, at least 60cm from the back and side of any combustible surface. Do not obstruct the flow of ventilation air around the gas spit housing. This gas spit is not intended to be installed in or on recreational vehicles and/or boats. Before assembling your barbeque, you should ensure your barbeque is suited to the type of gas which you are going to use. This appliance is for use with propane gas only. This is a low pressure roaster and must only be used with the hose and regulator supplied. Your roaster is designed for use with 4kg or 9Kg portable propane gas cylinders in accordance with the requirements of AS 4557 and AS/NZS1596. The cylinder should be filled by a filled by a reputable gas supplier and visually inspected and rechecked at each filling. Always keep cylinder in an upright position, even when not in use and during transport. Always close the cylinder valve when the roaster is not in use. Keep the LP cylinder in place on the support hook, or when not connected, at least 2 metres away from the appliance. Do not subject the cylinder to excessive heat. CONNECTING TO A PORTABLE PROPANE (LPG) CYLINDER: Before connection, ensure that there is no debris caught in the head of the gas cylinder, regulator, burner and burner ports. Spiders and insects can nest within and clog the burner / venturi tube at the orifice. A clogged burner can lead to a fire beneath the appliance. Before connecting the cylinder, inspect the hose fittings and rubber seals. If there is any sign of splitting or wear. Have the hose replaced. Take the hose and connect the regulator end of it the gas cylinder. You won’t need a spanner here, just turn the fitting in an anticlockwise direction and hand tighten as much as you can. This should seal it sufficiently. Ensure the gas cylinder is secure on its support hook, and that it remains upright at all times. Only use on a firm, level surface. Propane Cylinder (not included) Connection thread of roaster is 5/8-18UNF (3/8“ SAE). Connection thread at the cylinder is POL (left hand). DO NOT USE A NAKED FLAME TO TEST FOR GAS LEAKS. IF A LEAK PERSISTS, CALL AN AUTHORISED PERSON GAS CYLINDER SAFETY: NEVER STORE YOUR GAS CYLINDER INDOORS. If you store your roaster indoors, ALWAYS disconnect the cylinder first and store the cylinder safely outside. Cylinders must be stored out doors in a well ventilated area out of reach of children, and must not be stored in a building, garage or any other enclosed area. Do not connect your roaster to a gas cylinder exceeding 9kg capacity. Never connect an unregulated gas cylinder to your roaster. HOSE AND REGULATOR SAFETY: The regulator and hose assembly supplied with the roaster are suitable for Propane (LPG)) only, in accordance with the requirements of AS 4557 and AS/NZS1596. A gas regulator adjusted to have an outlet pressure of 2.75kPA is supplied and fitted for connection to the Propane (LPG) cylinder. Hose diameter 8mm The pressure regulator and hose assembly supplied with the roaster must be used. Replacement pressure regulators and hose assemblies must be those specified by the roaster manufacturer. When connecting the hose and regulator assembly to the gas cylinder, take care to avoid unnecessary twisting or kinking of the flexible hose. After the assembly has been secured, check for leaks as follows. Never operate this roaster without a regulator. The regulator supplied with this appliance is the correct type for use with this appliance. BEFORE USE CHECK FOR LEAKS Never check for leaks with a naked flame, always use a soapy water solution TO CHECK FOR LEAKS: (1) Make 50ml of leak detecting solution by mixing one part washing up liquid with 3 parts water. (2) Ensure the roaster control valve is OFF. (3) Connect the regulator to the cylinder as outlined above. Ensure the connections are secure then turn ON the gas at the cylinder. (4) Brush the soapy solution onto the hose and all connections from the gas cylinder to the roaster. If bubbles appear you have a leak, which must be rectified before use. If the hose connection to the roaster is loose, use two spanners to tighten it, one to hold the fitting, the other to tighten the nut. (5) Retest after fixing the fault. (6) Turn OFF the gas at the cylinder after testing. If a leak is detected and cannot be simply rectified, do not attempt to solve the issue, consult your store of purchase. Tools required: Philips head screwdriver and an adjustable spanner. Please read all instructions thoroughly before proceeding. Find a large, clean area in which to assemble your gas spit. Check that you have all the parts before proceeding. Empty all the loose parts out of the body. Assembly of the gas spit involves many large components. It is advisable to have two people assemble the unit. Make sure all the plastic protection (usually a blue film) is removed before assembling. Before assembly, carefully turn the gas spit over onto its back. Put some soft cushions or protective mat or similar on the floor to protect the body and hood STEP 1: Separate the motor parts (#6, #7, #11, #12) ready for assembly. (Keep the metal retaining strap around the motor in place.) Do both sets of legs. Tighten firmly with a spanner. Ref # 16 Ref # 15 Ref # 17 STEP 3: Bolt the spit rod support poles (#14) onto the legs assemblies (#15). Bolt the leg assemblies (#15) onto the body (#18). Bolt the Leg Cross Braces (#22) into place between the leg assemblies. Tighten all bolts and nuts firmly. Ref# 9 Ref #11,12 STEP 6: Fit the cooking grills (#8), charcoal tray (#10) and grease tray (#20). (The cooking grills normally need to be removed when spit roasting). Ref # 2 Ref # 2 Ref # 3,4,5 Ref # 1 Ref # 6,7 Keep the set screw of the counterweight vertical the spit rod STEP 8: Fitting the shaft assembly to the charcoal spit: Firstly, lower the height of the spit shaft support bracket so that it is at the same level as the motor bracket. Fit the meat onto the shaft and fit the shaft in place on the rest bracket (not engaged into the motor). Next adjust the counterweight so that the meat is in balance. Lastly, raise the spit shaft support bracket so that the shaft can be engaged into the motor. The cooking grills can be used without the spit in place or with the spit shaft at its higher positions only. When using the spit shaft, the roasting hood can only be closed with the spit shaft near its lowest position. STEP 9: Unscrew the igniter cap and insert the supplied AA battery with the “ + “ end outwards. PLEASE NOTE: Upon receipt, your roaster will be covered in a thin layer of oil which is used in the manufacturing process, this needs removing prior to first use with either hot soapy water or a remover such as white spirit. If you don’t remove this prior to getting the roaster hot on the first occasion, the burnt oil will tarnish the metal, especially on the inside. Avoid rubbing the screen printed areas on the roaster with thinners or similar agents as they may damage the printing. ROTISSERIE AND MOTOR WARNING: The rotisserie and motor must not be exposed to water or damp conditions or used when raining. The AC Motor can be plugged using an extension lead from indoors, however it should not be used in wet conditions as that may result in electrocution. Disconnect and remove the motor from the roaster whenever it is not in use. IMPORTANT NOTE: Due to the heating and cooling of the roaster and vibrations caused by the spit rotations, some of the screws may become loose during transit or use. PLEASE tighten the screws periodically in particular the 4 screws on the motor MUST be checked every time you cook as these are mounted upside down, so they are particularly venerable to becoming slack (a motor falling off could be a disaster half way through the cooking process). LIGHTING INSTRUCTIONS FOR GAS USE: Always conduct a leak test before first use, and whenever cylinder is refilled or swapped. 1. Turn the control knob clockwise to OFF position. Make sure that the cylinder valve is OFF. 2. Open the hood of the roaster. 3. Remove the cooking grills and charcoal tray. 4. If spit roasting, set up, balance and check the meat BEFORE lighting. Set the spit at its highest setting. Make sure that the motor is working and power is available. Remove the spit shaft and meat assembly for lighting. 5. Connect the regulator to the gas bottle. 6. Turn the gas supply ON at the gas cylinder. 7. Ensure that the roasting hood is open. 8. Push IN the control knob and turn it anti-clockwise to the HI position, at the same time hold IN the ignition button (a clicking sound will be heard) this should light the burner. Keep pressing the knob IN for a further 15 seconds, then release it and observe if the burner remains lit. If not, repeat this process. 9. If the burner has not lit after retrying once, wait 5 minutes and repeat previous step. WARNING: If the burner still fails to ignite, turn the control knob OFF (clockwise) and also turn the cylinder valve OFF. Wait five minutes before attempting to relight from Step 6. 10. Once the burner is lit, visually check that there is a gas flame the whole length of the burner (every burner port has a flame). If not, turn the control knob to OFF, turn the gas supply OFF, wait till the burner has cooled, and follow the instructions in the maintenance section of this instruction manual to clean the burner ports. 11. If the burner does not light with the ignition spark it can be lit manually with a long reach lighter from the inside. Consult your retailer if necessary to rectify the ignition. Adjust the heat by turning the knob between the HI and LOW positions. Use heavy duty oven mitts with the burner on LOW when adding back the cooking grills or spit shaft and meat assembly for cooking. To turn the burner OFF, turn the control knob clockwise to the OFF position. If you wish to shut down the roaster, close the cylinder valve and then turn the control knob on the appliance clockwise to the OFF position. Before cooking for the first time, operate the roaster for about 15 minutes with the lid closed and the gas turned on LOW. This will “heat clean” the internal parts and dissipate odour from the protective oil finish. Clean your roaster after each use. DO NOT use abrasive or flammable cleaners, as it may damage some parts of the product and may start a fire. Clean with warm soapy water. WARNING: Accessible parts may be very hot. Keep young children away from the hot appliance at all times (even while cooling down!). It is recommended that protective gloves (e.g. heavy duty oven gloves) be used when handling potentially hot components. The hood must be in the open position for lighting Do not smoke at any time when attempting to ignite the roaster burners. Do not leave the roaster unattended when alight LIGHTING INSTRUCTIONS FOR CHARCOAL: The charcoal can be lit in the usual way with a couple of firelighters under a small pile of charcoal directly in the charcoal tray, or the gas burner can be used to ignite the charcoal. NEVER use the gas burner and firelighters at the same time. When using charcoal: NEVER keep the gas burner going once the charcoal is lit. NEVER attempt to light the gas burner with already lit charcoal in the unit. NEVER light the charcoal with both the gas burner and firelighters at the same time. NEVER use liquid or gel firelighters of any kind. The gas burner should only be lit without the charcoal tray in position. The hood must be in the open position for lighting Do not smoke at any time when attempting to ignite the roaster burners. Do not leave the roaster unattended when alight TO LIGHT THE CHARCOAL USING THE GAS BURNER: Follow above “LIGHTING INSTRUCTIONS FOR GAS USE. STEPS 1 to 11. Once the burner is safely lit, turn the control to LOW, leave the hood open. 1. Put the charcoal into the large section of the charcoal tray (the side with some holes in the 2. 3. 4. 5. bottom). Do not put into the small section (that is meant to catch the majority of oil falling from the spit roast). Do not fill the charcoal higher that the top edge of the charcoal tray. Using appropriate heavy duty mitts, position the filled charcoal tray onto its support position above the burners. Turn the burner control knob to HI. When charcoal is lit, turn the gas cylinder valve OFF, then turn the burner control knob clockwise to the OFF position. Use heavy duty oven mitts when adding back the cooking grills or spit shaft and meat assembly for cooking. STORAGE OF THE APPLIANCE: Storage of this appliance indoors is only permissible if the cylinder is disconnected and removed from the appliance. When the appliance is not to be used for a period of time it should be stored in a dry dust free environment protected from the elements. If covering the roaster, ensure that it is cooled, cleaned, and well ventilated. Using a couple of sponges in between the roaster and a a vinyl cover helps promote ventilation to avoid mould. Clean the burner holes if required with a heavy-duty pipe cleaner. If the hose is replaced it must be spanner tightened and a leak test performed. Only use the correct parts supplied from your local Barbeques Galore Store. Incorrect parts or unauthorised and safety tested modification may result in serious injury and /or property damage. CLEANING AND MAINTENANCE: CAUTION: All cleaning and maintenance should be carried out when the roaster is cool and with the fuel supply turned OFF at the gas cylinder. Disconnect and remove the motor from the appliance when cleaning. CLEANING: “Burning off” the roaster after every use (for approximately 15 minutes) will keep excessive food residue to a minimum. Remove the charcoal tray and light the gas burner as outlined above. Run the burner on HI with the roasting hood open for 15 minutes. Switch OFF the controls and the cylinder when done. OUTSIDE SURFACE: Use mild detergent or baking soda and hot water solution. Non-abrasive scouring powder can be used on stubborn stains, then rinse with water. 3M Stainless Steel Cleaner and Polish is a great product to protect the finish. Stainless steel left uncleaned and unprotected will rust. If the inside surface of the roaster lid has the appearance of peeling paint, baked on grease buildup has turned to carbon and is flaking off. Clean thoroughly with strong hot soapy water solution. Rinse with water and allow to completely dry. NEVER USE OVEN CLEANER. INTERIOR OF THE ROASTER FIREBOX: Remove excess residue using a brush, scraper and/or cleaning pad then wash with a soapy water solution. Rinse with fresh water and allow to dry. COOKING GRILLS: Use a mild soapy water solution. Non-abrasive scouring power can be used on stubborn stains then rinse with fresh water. CLEANING THE BURNER ASSEMBLY: Turn the gas OFF at the control knob and disconnect the cylinder. Remove cooling grills and spit accessories. Clean the burner with a soft brush or blow clean with compressed air and wipe with a cloth. Clean any clogged ports with a heavy duty pipe cleaner or stiff wire (such as an opened paper clip). Inspect burner for any damage (cracks or holes). If damage is found, replace with a new burner. Use only correct parts supplied from your local Barbeques Galore store. Reinstall the burner, check to ensure that the Gas valve orifice is correctly positioned and secured inside the burner inlet (venturi). SERVICING: We recommend that your roaster should be serviced annually by a competent authorised person. Follow this brief guide for some simple DO’s and DON’T’s for successful spit roasting. The most common problem is that the carcass falls off the spit shaft during cooking, or the meat is not cooked properly (either undercooked, or overcooked). These problems will be avoided if you follow these step by step instructions. Actual cooking times depend on the fuel and can be influenced by the weather conditions, especially wind. Allow up to: 1 hour for each 4kg of lamb (so up to 5 hours for a 20 kg lamb, but may be done in 4 hours) 1 hour for each 3kg of beef (so up to 5 hours for 15kg of beef, but may be done in 4 hours) 1 hour for each 2kg of pork (so up to 5 hours for 10kg of pork, but may be done in 4 hours) 15kg of meat will feed roughly 20 to 30 people. The only way to know for sure when food is safely cooked is to check the meat temperature with a thermometer. Check the temperature at multiple places in the thickest parts of the meat (e.g. the inner area of the hip, under the leg, between the shoulder blades, mid-thigh). Avoid touching the bone with the thermometer probe as that will give a false reading. Well done should be above 82 Celsius. Medium should be above 71 Celsius. Rare is not recommended for spit cooking. As a rule the equipment required to set up for spit roasting is:  A large table to prepare  An outdoor rated electric extension lead  Carving knives and chopping boards, meat forks, tongs  A meat thermometer  Fuel supply and some reserve (this roaster can use charcoal, or gas, and use the gas to light the charcoal. If using charcoal, allow 5kg of charcoal per hour of cooking (so 20kg of pork can take up to 8 hours to cook, using 40 kg of charcoal). The gas burner on HI takes around 3 hours to burn 1kg of gas, so a full 9kg cylinder will give you around 27 hours burning on HI.  A small shovel or very long tongs to manoeuvre the lit charcoal.  Basting brush, sauces, marinades, seasonings, rubs or condiments.  Wood chips or chunks if you are adding some flavour  A hand spray water bottle is helpful to control any excess flare  2m of light wire to tie down neck or other loose parts  Pliers, a hammer and a screwdriver for any adjustments to prongs etc.  Heavy duty heat resistant mitts are a must.  Aluminium foil is helpful to protect any protruding parts from over charring. The carcass needs to be well balanced onto the shaft so that it turns easily. If it is well balanced, then the motor will turn up to 40kg without a problem. If the balance is average, the safe limit is 30kg. if the balance is very poor, the motor will become permanently damaged during use. Before you purchase a whole carcass: 1. Check the weight 2. Ask the butcher to trim off any excess fat 3. Measure the length to ensure it will fit the spit shaft. PREPARATION: This needs to be done ideally BEFORE starting the spit roaster in order to be able to check the balance and fit while the roaster is not hot. 1. Lay the carcass on a suitable table with everything you need close at hand. 2. Fit the two spine braces into the carcass rib cage area from the inside out, as far apart from each other as possible. Don’t lock into place until the shaft is in place. 3. Fit the shaft through the rear end of the carcass, thread it through the spine braces and out through the front of the carcass. 4. Loosely fix the spine brace locks into place. 5. Slide a large prong onto each end of the shaft. Tighten all the prongs and fittings firmly, but not finally. 6. Set the assembly into the (cold switched OFF) spit just to check the balance. It should be able to spin evenly from all positions without much effort. Adjust the prongs and braces for best possible balance. This may require starting again from Step 1 a couple of times. Getting the balance right at this stage is worth the extra effort. 7. Once you are happy with the balance, tighten all screws very firmly. 8. Use the wire to tie down any loose parts. 9. Fix aluminium foil around any protruding pieces. It is usually helpful to also use aluminium foil around the rib cage to slow down cooking in that area. 10. Fit the counterbalance to the shaft. This may need to be adjusted during cooking to keep the roast as well balanced as possible. 11. Before starting the roaster, check again that the spit will turn freely. Test with the motor on and the hood closed if applicable. (Note that the hood can only be closed with the shaft near its lowest position. The cooking grills cannot be used together with the spit shaft in most circumstances). 12. Start the shaft at its highest position, check the heat and lower if necessary. Always use heavy duty heat resistant mitts. Keep a close watch on proceedings and adjust balance, height and heat as required. HANDY HINTS:       Don’t “score” the flesh as that will create unnecessary flare ups. Marinate with lemon juice or vinegar and rub with salt before cooking for a crispy skin It can be very dangerous to carve the meat while it is still on the spit shaft. Don’t spit roast frozen or very cold meats. Take all sensible hygiene precautions to avoid cross contaminating cooked food with uncooked food. Don’t leave raw or cooked food too long without refrigeration. If using charcoal, allow up to an hour for the charcoal to be ready form when first lit. Using the gas burner to start the charcoal will normally cut that down to about 30 minutes. Start initially with 4 to 5 kg of charcoal. Spread the charcoal more to each end of the charcoal tray, away from the rib cage area which has less meat, so will cook much faster. The charcoal is ready when it is all glowing red with a grey ash covering.
