They meet all legislative requirements valid at the date of manufacture. Its principle characteristics are easy cleaning, robust manufacture, safe and reliable operation. The materials utilised, anodised aluminium, stainless steel and plastics have been selected with due regard to hygiene regulations and ensure that the machine has a long life. Note: When the machine is not used: • Make sure that it is off. V 230 • Re-position the slice thickness control to zero. Do not remove the labels placed on the machine. Only replace them if damaged. Service Instructions V 400 2-3 2 — Safety 2.1.2 Mechanical safety devices The slicer is manufactured according to EEC 89/392 and 91/368 standards, from their initial publication up to September 1993. The mechanical safety devices are: • The last slice device remains lifted in a condition of steadiness, only with the feed carriage in load position. • Product holder removable only with the slice thickness control on 0 (slice thickness plate positioned to protect the blade). After removing the product holder the slice thickness plate is mechanically clamped. • Protection devices mounted on the product holder prevent the operator from any accidental contact with the blade. • Blade guard. This fixed ring protects that part of the blade which is not used for the cutting operation. • A special mechanical safety device which permits sharpening of the blade, keeping the fingers of the operator away from the cutting edge of the blade. 2-4 Service Instructions 2 — Safety 2.2 RP-M353CE/M373CE 2.2.1 Electrical safety devices The electrical safety devices in accordance with the EN 60204 standards are: • Start and stop pushbuttons. • Control circuit provided with electric servo-control; in the case of blade clamping the machine must be restarted manually. • Device to stop the rotation of the blade if the clamping handle of the blade guard is released. Note: The following cannot be sliced: • non-edible products. • foodstuffs with bones. • frozen products. How to load the product to be cut 3-6 1. Check that the slicer is off and set the slice thickness control to zero. 2. Push the product holder towards the operator. Service Instructions 3 — Operation 3. Move the feed carriage away from the slice thickness plate to the end of its travel (i.e. the loading position) and lift up the last slice device. WARNING: DANGER OF INJURY: • TAKE CARE THAT THE LAST SLICE DEVICE DOES NOT SWING DOWN WHEN LOADING FOOD ON TO THE FEED CARRIAGE. • THE LAST SLICE DEVICE (PUSHER) WILL SWING DOWN WHEN THE PRODUCT HOLDER IS MOVED FORWARD. 4. Place the product to be cut against the wall of the pusher towards the slice thickness plate. 5. Rotate and push the last slice device on the product to be cut. Service Instructions 3-7 3 — Operation 3-8 6. Set the slice thickness control to the desired thickness. 7. Press pushbutton to switch on the machine. 8. At a constant speed, push the foodstuffs towards the slice thickness plate. Feed the product holder to the blade stroke end, then return to the operator and repeat the operation. 9. After cutting the product, re-position the product holder towards the operator. Press pushbutton to stop, re-position the slice thickness control to zero, and unload the product. Service Instructions 3 — Operation Sharpening If a product is not regularly cut the blade must be sharpened following the instructions given in 3.1.6. Maintenance All cleaning and maintenance operations must only be carried out with the machine disconnected and isolated from the mains supply and the slice thickness control on zero. All cleaning and maintenance operations must be carried out whilst wearing protective gloves. Check the electric cable It is recommended to check for any wear of the electric cable at regular intervals. Spare parts In the event that replacement parts need to be fitted, request only original spare parts. Service Instructions 3-9 3 — Operation 3.1.5 Cleaning The machine must be cleaned once a day or more frequently if necessary. Clean all the parts using a cloth sprinkled with water and washing up liquid (do not use strong detergents) and a brush. WARNING: DO NOT USE A WATER JET. WARNING: PERFORM THE CLEANING OPERATIONS WITH GREAT CARE: DANGER OF INJURY. Feed carriage cleaning For a quick feed carriage and product holder cleaning: 3 - 10 1. Position the slice thickness control to zero. 2. Release the product holder clamping handle by rotating it in a counterclockwise direction. Service Instructions 3 — Operation 3. Push the product holder towards the operator until it clicks. The click will inform the operator that the product holder is clamped. 4. Remove the feed carriage from the slice thickness plate (in the loading position) and lift up the last slice device at the end of the stroke. 5. Wash the feed carriage. WARNING: OCCASIONAL MOVEMENTS MAY LET THE LAST SLICE DEVICE (PUSHER) FALL DOWN AGAIN. 6. Let down the pusher. 7. Lift up the feed carriage and take it up, then wash the product holder. Service Instructions 3 - 11 3 — Operation Component removal Product holder 1. Position the slice thickness control to zero. 2. Release the product holder clamping handle by rotating it in a counterclockwise direction. 3. Push the product holder towards the operator until it clicks. The click will inform the operator that the product holder is clamped. 4. Lift the product holder by slipping it out from its support. Note: The slice thickness control must be set at zero. 3 - 12 Service Instructions 3 — Operation Slice deflector 1. Rotate the slice support and keep it away from the blade. Blade cover 1. Loosen the blade cover fastener handle by rotating it in a counterclockwise direction. 2. Push the handle in the direction indicated by the arrow to lift the blade cover from the blade. 3. Lift the blade cover. WARNING: DURING ANY CLEANING OPERATIONS, TAKE CARE TO AVOID ACCIDENTAL CONTACT WITH THE BLADE. Service Instructions 3 - 13 3 — Operation Blade cleaning DANGER: DURING ANY CLEANING OPERATIONS TO THE BLADE, TAKE CARE TO AVOID ACCIDENTAL CONTACT WITH THE BLADE. 1. Press a damp cloth on the front side of the blade and move slowly from the center towards the edge in the direction of the arrow. 2. Follow these instructions to clean the back side of the blade. 3. With a cloth dry both sides of the blade following this procedure. 4. Insert a damp cloth between the blade and the protection ring. Pull it outwards and rotate it to clean the internal side of the protection ring. IMPORTANT: Leave all the parts to soak in warm water and washing-up liquid (do not use strong detergents) and clean them by using a brush or a cloth. Rinse them in warm water and dry them. To assemble the machine carry out the reverse of the disassembly procedure. 5. 3 - 14 After cleaning reposition the blade cover, insert the fastener and screw in a clockwise direction to clamp the blade cover. Service Instructions 3 — Operation 3.1.6 Blade sharpening If the cut is not adequate, the blade must be sharpened. The intervals between the sharpening operations depend on the use of the slicer and the kind of products being cut. This operation must only be carried out by qualified personnel. The blade must be replaced when its diameter is 10 mm less than when original (see 3.1.2 and 3.1.3). WARNING: REPLACEMENT OF THE BLADE IS A DANGEROUS OPERATION. IF THE CUT IS INADEQUATE AFTER SHARPENING, REPLACE THE STONES. CONTACT AVERY BERKEL FOR ASSISTANCE. Service Instructions 3 - 15 3 — Operation Sharpening operation WARNING: WEAR PROTECTIVE GLOVES. For correct sharpening of the blade follow these instructions: 1. Clean the blade to remove any greasy residue, as in 3.1.5. 2. Make sure that the machine is off. 3. Set the slice thickness control to zero to make sure that the blade is covered by the slice thickness plate. WARNING: DURING THE FOLLOWING OPERATIONS THE BLADE MUST ALWAYS BE COVERED BY THE DETACHABLE GUARDS. 4. 3 - 16 Lift the sharpener cover. Service Instructions 3 — Operation 5. Pull the sharpener release handle. 6. Rotate the device to the blade. 7. The blade sharpener is now correctly placed. 8. Push pushbutton to start the machine. 9. Sharpening: rotate the lever and bring the two grinding wheels near the blade. The blade is simultaneously sharpened and the burrs removed. Note: The sharpening operation will take 10-15 seconds. STOP 10. After sharpening press the stop pushbutton . Service Instructions 3 - 17 3 — Operation 11. Pull the handle to reposition the sharpener to its original position. 12. Lower the sharpener cover. Cleaning of the grinding wheels The grinding wheel and its pin can easily be removed from the sharpener by pulling in the direction of the arrow. For satisfactory sharpening the grinding wheel must always be clean. Remove dirt and grease with alcohol and the special brush supplied. 3 - 18 Service Instructions 3 — Operation 3.1.7 Guides lubrication This operation must be performed after cleaning the slicer or whenever sliding is difficult. Use Berkel slicer oil. Lubrication of the guide bar for the product holder 1. Drop some oil on the bar. 2. Let the product holder slide on the guide bar. Lubrication of the guide bar for the product holder carriage 1. Push the product holder towards the operator. 2. Pour the lubricating oil into the special carriage bar lubricator. 3. Push the product holder to and fro and repeat the operation. If large quantities of bread or cheese are usually cut, a teflon coating is recommended (Optional accessory 97). Note: The following cannot be sliced: • non-edible products. • foodstuffs with bones. • frozen products. How to load the product to be cut 3 - 22 1. Check that the slicer is off and set the slice thickness control to zero. 2. Push the product holder towards the operator. Service Instructions 3 — Operation 3. Rotate the carriage handle anticlockwise, to loosen the sliding carriage. 4. Remove the feed carriage from the slice thickness plate and lift the selfclamping pusher. 5. Rotate the carriage handle clockwise, to lock the sliding carriage. 6. Place the product on the (clamped) feed carriage towards the slice thickness plate. 7. Rotate and press the self-clamping pusher on the product to be cut. Service Instructions 3 - 23 3 — Operation 3 - 24 8. Rotate the carriage handle anticlockwise to loosen the sliding carriage. 9. Rotate the handle of the feed carriage clamping device to release it. 10. Set the slice thickness plate to the thickness desired. 11. Press pushbutton to start the machine. Service Instructions 3 — Operation 12. At a constant speed push the foodstuffs towards the slice thickness plate. Feed the product holder to the blade stroke end, then return to the operator and repeat the operation. 13. After cutting the goods re-position the product holder towards the operator. The rotation of the blade stops by pressing pushbutton . Re-position the slice thickness control to zero and unload the product. Sharpening If the product is not regularly cut the blade must be sharpened following the instructions given in 3.2.5. Service Instructions 3 - 25 3 — Operation Maintenance All cleaning and maintenance operations must only be carried out with the machine disconnected and isolated from the mains supply and the slice thickness control on zero. All cleaning and maintenance operations must be carried out whilst wearing protective gloves. Position the slice thickness control to zero. 2. Release the product holder by rotating the product holder clamping handle in a counterclockwise direction. Service Instructions 3 — Operation 3. Push the product holder towards the operator until it clicks. The click will inform the operator that the product holder is clamped. 4. Lift the product holder from the carriage. Note: The slice thickness control must be set at zero. Slice deflector 1. Rotate the slice deflector and keep it away from the blade. Service Instructions 3 - 29 3 — Operation Blade cover 1. Loosen the blade cover fastener handle by rotating it in a counterclockwise direction. 2. Push the handle in the direction indicated by the arrow to lift the blade cover from the blade. 3. Lift the blade cover. WARNING: ONCE THE BLADE COVER IS REMOVED, AN INTERLOCKING DEVICE STOPS THE ROTATION OF THE BLADE. Blade cleaning DANGER: DURING ANY CLEANING OPERATIONS TO THE BLADE, TAKE CARE TO AVOID ACCIDENTAL CONTACT WITH THE BLADE. 3 - 30 1. The suggested height of the working table is about 800 mm. It must be checked that the product holder is not clamped and the product to be cut can be easily loaded (see 3.1.2 and 3.1.3). 4.1.2 Electrical supply The machine must be installed in the proximity of a mains socket. Check that the power supply voltage corresponds to that described on the information label and that it is connected to an adequate earth. 4.1.3 1. Connect the plug. 2. Check that the blade cover fastener handle is screwed tight. 3. Check that the blade sharpener is lowered and the protective cover is closed. Preliminary cleaning Before connecting the plug clean off the protective oil from the machine. Follow the instructions given in Section 3.1.5. Note: The working table must always be cleaned. Service Instructions 4-3 4 — Installation 4-4 4. Press the pushbutton to switch on the machine (the light is illuminated). 5. The blade must rotate in the direction indicated by the arrow. 6. In the case of a machine with a threephase motor, follow the instructions below if the blade rotates in the direction opposite to that indicated by the arrow: a. Stop the machine by pressing pushbutton . b. Disconnect the plug and reverse the wires in the plug as indicated. Service Instructions 4 — Installation 7. c. The suggested height of the working table is about 800 mm. It must be checked that the product holder is not clamped and the product to be cut can be easily loaded (see 3.2.2). 4.2.2 Electrical supply The machine must be installed in the proximity of a mains socket. Check that the power supply voltage corresponds to that described on the information label and that it is connected to an adequate earth. 4.2.3 1. Connect the plug. 2. Check that the blade cover fastener handle is screwed tight. 3. Check that the blade sharpener is lowered and the protective cover is closed. Lift the machine and loosen the screw or the gain (4) on the bracket (3). 2. Slowly rotate the thickness plate till to center it to the diameter of the knife, with an even opening of 1 - :1,5 mm as shown in figure 6-1. 3. Loosen the 2 screws (4) and draw the thickness plate near to the knife (2), as shown in figure 6-2. 2. Fasten the thickness plate in the right position, by firmly tightening the 2 screws (4). Service Instructions 6 — Technical Information 6.2 Sharpener settings/adjustments The knife must be replaced once its diameter reaches 10 mm less than its nominal value. The reduction of the knife diameter could require a correct adjustment of the sharpener, which should be positioned in this way: 1. Lift up the protection cover (pos 1 figure 6-3) and rotate the sharpener into its sharpening (pos 2) position. 2. Remove the caps (pos 2 and 3, figure 6-3), loosen the screw (pos 4 figure 6-4), lower the sharpener as necessary by checking, that both stones are positioned, as regards the knife, as shown in figure 6-4 and figure 6-5; then fasten the screw (pos 4). 3. Loosen the screw (pos 5 figure 6-4), put the sharpener into its not operating position (figure 6-3), rotate the cam (pos 6 figure 6-4) anticlockwise till the end of the stroke. Loosen the screw pos.8 and rotate the excentric either clockwise or anticlockwise (pos 9 figure 6-4) and check that the movable guard (pos 7 figure 6-3) juts out over the knife edge, as shown in figure 6-3 and then fasten the screw 8 (pos 8 figure 6-4). 4. Reset the sharpener into its sharpening position (figure 6-4) and meantime rotate the cam clockwise (pos 6 figure 6-4), checking that there are no interferences in the rotation between the trimming stone and the movable guard (pos 7 figure 6-4) then fasten the screw (pos 5). To clean all accessible parts, use a cloth moistened with water and detergent (a non aggressive one): do not use water jets! For effectual cleaning follow the instructions given in Section 3. 7.2.2 Knife control Check the knife diameter and replace the knife when its diameter is 10 mm less than when new. 7.2.3 Knife sharpening When the slicing is not satisfactory, it is necessary to sharpen the knife. Before sharpening the knife, clean the sharpening stone.
