Today, the Royal Gorge Company water operator needs to add a calculated amount of Clorox to the cistern to bring the residual up to at least 0.2 ppm. Correct this today. BAR-No soap and dispensed paper towels at the bar handsink. KITCHEN-The rubber door gasket on the Walk-In Refrigerator door is in poor condition. Replace the door gasket with a suitable, continuous door gasket (not small individual pieces). KITCHEN-The wheeled cart under the mixer is not a smooth and washable surface (2x4's covered with floor boards). KITCHEN-The mopsink faucet leaks. BAR-The plywood cover on the floorsink has not been polyurethaned or painted. BAR-The back wall of the bar does not have vinyl cove base installed along the wall/floor junction. First inspection for this seasonal restaurant, opening this Saturday, 3/10/12. Also inspection of the bar area that will be used in conjunction with the new liquor license. The liquor license is a Hotel/Restaurant license, however the routine, daily liquor service will be wine and beer only, and a designated bar area is provided. There are no utensil washing facilities in the bar (only a handsink) so all utensils, glasses, etc. will go to the dishmachine in the kitchen. The chef requested information about a digital food thermometer. The thermometer that I use is a COMARK PDT300 waterproof digital thermometer with a calibration function, this thermometer also has the required thin probe tip for thin food items such as fillets, burgers, etc. I provided a new handout with information on handling raw eggs and handwashing requirements. Approved to open for the season. Make sure the chlorine residual in the water supply is corrected TODAY, and follow-up by returning the CIVCS form to me. A second inspection will be conducted later during the season.
