Do you have a Carbon Monoxide alarm in your home? There is a new law that requires carbon monoxide (CO) alarms be installed in homes. Known by the chemical formula “CO”, it is a colorless, odorless, poisonous gas that kills about 200 people in the U.S. every year. You can’t taste, see or smell it. Because it sneaks up on its victims and can take lives without warning, its nickname is the “silent killer”. What are the SOURCES of “CO”? Carbon monoxide is a by-product of incomplete combustion. Unsafe levels of carbon monoxide in the home can be produced by malfunctioning or poorly vented fuelburning appliances, such as furnaces, ranges, water heaters, and room heaters. The amount of CO in the air may rise to a level that can cause illness or death. What are the SYMPTOMS of “CO” poisoning? Victims may initially suffer flu-like symptoms including nausea, fatigue, headaches, dizziness, confusion, and breathing difficulty. Because CO poisoning often causes a victim’s blood pressure to rise, the victim’s skin may take on a pink or red cast. If a person continues to inhale CO, he or she could have breathing difficulty, cardiac trauma, brain damage, go into a coma, or even death. How to AVOID “CO”? Have your fuel-burning appliances inspected by a qualified technician at least once a year. They should be knowledgeable about fuel-burning appliances and carry insurance, be bonded and licensed. Dredge it in the flour to coat lightly. Melt 2 tbsp. of butter with 2tbsp. oil over medium-high heat in large sauté pan. Add chicken and cook just until brown, about 3 minutes per side. Transfer the chicken to a plate. Add the broth, lemon juice, and capers to the same pan. Bring the broth mixture to a boil over mediumhigh heat, scraping up the brown bits from the pan for extra flavor. Return the chicken to the pan. Simmer until just cooked through, about 5 minutes. Transfer the chicken to a platter. Whisk the remaining 2 tbsp. of butter into sauce. Pour the sauce over the chicken, garnish with parsley, and serve. (Serves 4) Enjoy with Chardonnay or Sauvignon Blanc!
