E1036IL and E1036ES CHIEFTAIN SERIES WET HEAT BAINS MARIE USERS INSTRUCTIONS SECTION 1 - GENERAL DESCRIPTION SECTION 2 - CONTROLS and OPERATION SECTION 3 - COOKING HINTS SECTION 4 - CLEANING and MAINTENANCE This appliance has been CE-marked on the basis of compliance with the Low Voltage and EMC Directives for the voltages stated on the Data Plate. IMPORTANT This appliance must only be installed by a competent person in compliance with the regulations in force at the time. UK regulations are listed on the front of the Installation and Service Manual. Regular servicing by a qualified person is recommended to ensure the continued safe and efficient performance of the appliance. WARNING - THIS APPLIANCE MUST BE EARTHED! Upon receipt of this manual, the installer should instruct a responsible person (or persons) as to the correct operation and maintenance of the unit. This equipment is designed FOR PROFESSIONAL USE ONLY and be operated by QUALIFIED persons. It is the responsibility of the supervisor or equivalent to ensure that the user wears SUITABLE PROTECTIVE CLOTHING. Attention should also be drawn to the fact that some parts of the appliance will, by necessity, become VERY HOT and could cause burns if touched accidentally. Both models are of an open cabinet type base with a storage shelf and are mounted on adjustable tubular legs. Additional features include a water inlet swivel arm, swivel drain tap, stainless steel hob and water well with lift out, perforated stainless steel false bottom plate. The E1036ES is designed to be located across one end of a central suite. After loading containers or pans into well, adjust control as necessary. The actual setting is dependent upon a number of factors, i.e. type and quantity of food, etc. It is not practical to quote specific settings. It should be noted that thick, milky liquids such as custard, porridge, etc. will normally require lower settings than thin soup, vegetables, scrambled egg, etc. SECTION 2 - CONTROLS and OPERATION CONTROLS The E1036IL model element is controlled by a single simmerstat. The E1036ES model elements are controlled by two simmerstats. Red neon indicates that power is available. (i.e. - isolating switch is ON) Amber neon indicates that power has been selected by simmerstat. Water Level The appliance should be operated with the well filled with water to level mark indicated in rear wall. It takes 5 gallons of water to fill E1036IL model to level mark and 12 gallons of water to fill E1036ES. NEVER TURN ON THE POWER WHEN THE WELL IS EMPTY. DO NOT ALLOW THE WELL TO BOIL DRY. THIS MAY CAUSE SEVERE DAMAGE TO THE ELEMENTS AND THE WELL STRUCTURE. OPERATION The appliance is designed to store hot food in containers prior to serving. It maintains proper serving temperature without drying out or otherwise detracting from food quality. An energy regulator enables water temperature in the well to be controlled and in turn, this controls food temperature. The control knob is marked progressively up from 1 to FULL ON. The appliance will heat up indicated quantity of water from cold to 80o C in approximately 1 hour. The water will be maintained at this temperature with knob at Position 2. Higher settings will be required depending on quantity of food being kept warm. Always insert perforated base trays in well when unit is in use. A drain valve is provided with a swinging outlet pipe to permit draining of well contents. SECTION 4 - CLEANING and MAINTENANCE Cleaning is best undertaken on a daily basis after completion of work while unit is still warm. Turn power OFF at isolating switch. Lift out base plate and drain well. Clean well and hob with hot soapy water, rinse, drain and dry thoroughly. Persistent grease and stains should be removed with detergent or proprietary cleaning pads. It should be noted that stainless steel may be marked easily by certain scouring pads (including nylon types) so care should be taken. Wash perforated base plate and dry it thoroughly. Return to correct location in well of appliance. Warning Do not attempt to clean this appliance with a jet of water or steam clean.
