Instructions 1. Follow the recipes found on pages 12-15 of this manual for making pasta dough. There are many variations to the ingredients for the dough, please ensure you read the recipe guide carefully. 2. Plug the power cord into a power outlet. 3. To use the Flat Roller, close the cover and slide the two Plastic Safety Covers up and over the Spaghetti Cutter and Fettuccine Cutter. The Plastic Safety Covers are designed to cover rollers or cutters which are not being used at the time. The Flat Roller presses the pasta dough into thinner sheets otherwise the pasta will not cut properly. 4. Adjust the Flat Roller to the widest setting ‘1’ by turning the Flat Roller Thickness Controller. Please note that ‘1’ is the widest setting and ‘9’ is the thinnest setting. To adjust, you have to pull the controller out and turn to the desired setting. It will click and lock the setting into place.
5. Select the desired speed by pressing the ON/OFF Speed Switch. Press the switch marked ‘I’ up to operate at low speed, press the switch marked ‘II’ down to operate at high speed. When the switch is in the middle, it means the power is OFF.
6. When switched ON to either HIGH or LOW speed, all rollers and cutters will operate at the same time. Then you can feed the dough through the Flat Roller.

Instructions (cont) 7. Once the dough has passed through, adjust the Flat Roller to the next thinnest setting and feed the dough through again. Repeat the same procedure until the desired thickness has been achieved. NOTE: Please refer to the pasta dough recipes section of this manual on pages 12-15 for more details on how to make your pasta successfully. 8. When you are ready to use either the Fettuccine Cutter or Spaghetti Cutter, slide the plastic cover over the unneeded roller and cutter, and pass the flat pasta through the desired cutter. CAUTION: When using the Electric Pasta Machine for the first time, it is recommended that you feed some pasta dough through the Fettuccine and Spaghetti Cutters a few times to help remove any residual machine oil thoroughly. Dispose of pasta dough immediately as this is not suitable for consumption.
NOTE: We recommend that you do not operate the Electric Pasta Machine for more than 30 minutes at one time. Allow a rest period of 15 minutes between each use to prevent overheating.

Pasta Dough Recipes Ingredients: 3 eggs (eggs should be at room temperature for best results). 300g plain flour (this measurement is approximate. You can add more or less according to the size of the eggs).
Red Pasta Dough Use the same pasta dough recipe as above and add 1 tablespoon of tomato paste for each egg used. Mix it into the beaten eggs before adding the flour.
Green Pasta Dough Follow the pasta dough recipe and add 125g of fresh spinach or 75g of thawed frozen spinach for each egg used. Cook spinach in salted water to enhance the colour and squeeze out any excess water. Finely chop and mix with eggs before adding the flour.
Mixing Dough Making perfect pasta is an art that will take time to perfect. Do not expect perfect results immediately, but with practice you will learn to make delicious pasta for the whole family. 1. Pour the flour into a heap. Make a well in the centre with your fingers.
2. Break the eggs one by one into the well.
3. Beat the eggs gently with a fork until the yolks and whites are evenly mixed together.

Pasta Dough Recipes (cont) 4. Using the fork, gradually mix in the flour from the inside of the well into the egg mixture until the egg mixture is no longer runny. Be careful not to break the wall of flour, otherwise the egg mixture will escape.
5. Quickly use both hands to mix in the remaining flour over the egg mixture so that it is completely covered.
6. Begin working the dough with your hands until all the flour has mixed and combined with the eggs. The dough should feel moist but not sticky. If it is sticky add some more flour until you have the right consistency. Wrap the dough in plastic wrap.
7. Scrape away any dough that might be stuck to the work surface, and wash your hands to remove any flour and egg. Unwrap the dough and begin kneading.
8. Continue until the dough is uniform and very smooth. Wrap the dough immediately with plastic wrap and leave it sit for 20 minutes before rolling it out.

Pasta Dough Recipes (cont) Rolling the Dough It is preferable to roll the dough before putting it through the machine. This allows the dough to be stretched rather than be compressed through the rollers of the machine. It will also create more absorbent pasta. 1. Remove the dough from the plastic wrap. Knead it again for about a minute so that the moisture that has collected on the surface is worked back into the dough. Flatten the dough a little bit with your hands to form a round disk and place it on the work surface.
2. Roll the dough out until it is approximately 1cm in thickness. You may need to fold the pasta 5-10 times, adding flour in the middle. This is a very important step to creating perfect pasta.
3. Cut the dough into pieces that will fit through the width of the machine. With the rollers at the widest setting, feed the dough through. Hold the dough as it comes through, but do not pull or stretch the dough.
4. Reduce the width of the rollers by one notch at a time. Run all the pieces through the machine once on each thickness setting or until desired thickness has been achieved. Lay pasta sheets on dry tea towels or a table cloth till you have completed rolling the batch and ready to cut.

5. For lasagne sheets cut the rolled dough into 20cm strips. For fettuccine or spaghetti cut the pasta to 30cm lengths and pass through the cutters.
NOTE: If the rollers won’t cut, this means the dough is too soft. In this case you should pass the dough through the smooth rollers, after adding some flour to the mixture. When the dough is too dry and cannot be caught by the cutting rollers, add a little water to the mixture and pass it through the smooth rollers once again. Allow the pasta to dry for at least 1 hour before cooking.

Solution
The Pasta Machine does not turn on?
• Please check that the power cord is plugged into the outlet correctly and switched on. • Check there is power to the outlet by testing with another product.
During processing, the Pasta Machine suddenly stops working?
• The appliance may have overheated due to long continuous working time. Disconnect from the power outlet and allow the Pasta Machine to cool down. To prolong the life of the appliance, it is recommended that you do not use for more than 30 minutes continuously. Allow to cool for 15 minutes before restarting.
Why do the rollers not cut the dough?
• The dough is too soft. Add some flour to the mixture and pass through the flat rollers. • The dough is too dry and cannot be caught by the cutting rollers. Add a little water to the mixture and pass it through the flat rollers once again.
