Kettles, CHILLtherm®, Braising pans Kettles electrolux kettles Key Points • Electrolux kettles are designed to guarantee excellent results in terms of energy savings, heating time reduction and automation of the cooking process • Construction: internal kettle and jacket in nickel-chromed steel - molybdenum steel (AISI 316); structure, lid and panels in nickel-chromed steel – make the equipment resistant to corrosion and wear through time • Energy savings are guaranteed by reduced heating times. Vessel tilts more than 90° 5 6 electrolux kettles Heating system • The heating system, available on all models, guarantees uniform and fast heat distribution on all of the appliance’s heating surfaces. The system uses saturated steam at 260°F which is circulated throughout the jacket and heats the food through condensation heat • The uniformity of heat on all the cooking surface is taking advantage of a characteristic of steam obtained from distilled water, which at a certain pressure maintains a constant temperature • Uniform heat distribution is an indispensable condition for obtaining excellent cooking results, since it determines whether all the food is cooked to the same degree. Thanks to this characteristic, it is possible to complete the cooking process in short times even at low temperatures • The probe guarantees efficient temperature control as it measures exact values even for small quantities of food • Since the Thermetic heating system is a closed distilled water circulation system, it is not necessary to add water during operation: this means savings on installation costs, easier use and higher durability. There is no risk of impurities which may cause damage getting into the system electrolux kettles Tilting Kettles The tilting appliances are ideal for large kitchens because they make it possible for the operator to handle large quantities of food easily, safely and quickly. The size and shape of the inner wells with wideradius corners make it possible to move all the food with a normal utensil, thus ensuring that the food is distributed evenly and does not burn. The perfect ratio between diameter and depth avoids wide temperature differences and makes the well easier to clean. Ease of cleaning Easy cleaning is one of the features that distinguish tilting appliances, since the tilting capability makes it possible to invert the pan, thus making it easier to clean and maintain. Cleaning is made even easier by the lack of a discharge tap and by the reduced depth of the wells. Moreover, the possibility to turn the pan over more than 90° allows the pan to be completely emptied and eliminates any liquid residue, thus avoiding corrosion in the well. Motorized tilting Variable speed motorized tilting makes emptying the pan simpler and allows the operator to empty the pan easier and with high precision: indeed it is possible to fill a bottle directly from the pan without using any other utensils. The tilting axis is placed forward in the highest possible position, so that the emptying point is always in the same place regardless of the inclination angle, which makes it easier to fill tall containers. In this case the control takes place via the bottom sensor located underneath the pan. Even in this case, the power is supplied as and when required to keep the set temperature value, without exceeding it • “Cooking” operating mode, when the nominal temperature is equal or lower than 230°F. In this case the control is via the food sensor located in the external side wall of the pan. Pressure cooking is the fastest yet most delicate way to cook large amounts of food. The reduction in cooking times (more than 50%) is due to the increase in boiling temperature (from 212 to 228°F), which is a direct consequence of the increase in pressure (from 0 to 6.5 PSI). Moreover, cooking food takes place in saturated steam rather than water, which guarantees even heat distribution inside the pan, further reducing cooking time and food shrinkage. The high productivity of these models makes it possible to substitute traditional pans which are 2 or 3 times bigger. This method of cooking limits oxidation processes which alter the aroma and color of foods, fully conserving their natural organic properties. Moreover, by using Gastronorm containers, several foods can be cooked at the same time without their flavors getting mixed with each other. Indeed, the size and shape of the well are suitable for holding 1/1 GN trays. Savings The reduction in cooking time, which can be up to 50% compared with a traditional cooking process, allows the pressure cooking appliances to have a higher productivity and, as a consequence, to save space, installation and maintenance costs. The pressure braising pans make it possible to reduce substantially the energy consumption, both in the heating (up to 60%) and cooking (up to 40%) cycles, as well as the amount of water (up to 70%). Moreover, the low weight loss is another impressive advantage of this unique appliance. Cooking of food takes place in saturated steam rather than water, which guarantees an even heat distribution inside the pan, but also a reduction of the cooking time and food shrinkage • In particular, the pressure braising pan is such a flexible product which is able to boil, braise, pressure-cook and steam: all in one appliance! Hygiene The pressure cooking assures ideal hygienic conditions, since the cooking process occurs in a completely hermetic environment. The design of the appliances, such as the wide corners, facilitates the cleaning operations. Food quality Normally, the low presence of oxygen in the air volume prevents practically the oxidation of nutrients and vitamins with their retention in the food for a healthy result.
