Elvis Cridlington’s BBQ Chicken Safety First! Always ask a grown-up to help you with chopping and cooking food! Elvis often burns things in the kitchen so he really does know about barbecued chicken drum sticks. They make a delicious addition to any salad and the recipe works well with spare ribs and lamb chops too. Even Station Officer Steele likes this one! You will need: • 4 Fresh Chicken Drum Sticks (make sure they are well thawed if you use frozen) • Mixed Salad of your choice - try crispy lettuce leaves with raw carrot matchsticks, ice cold cucumber or sweetcorn For the Barbecue Sauce: • 3 tsps. Lemon Juice • Good Slurp of Tomato Ketchup (according to taste) • 2 tsps. of Soy Sauce • 3 tsps. of Clear Honey • Salt and Pepper • Vegetable Oil • 1 tsp. of Barbeque Spice or a mixture of your choice - you could try Chinese Five Spice powder, Cilantro, a pinch of Cinnamon, Cumin (smell and taste a bit first to see if you might like it) Elvis Cridlington’s BBQ Chicken Safety First! Put everything into a medium sized clear plastic bag and mix the barbecue sauce by shaking the bag until it looks like a yummy sludge! 2. Get an adult to help: • Make three deep slashes with a sharp knife along each side of the drumsticks. • Pop them into the bag with the sauce mixture and give a good shake. • Leave this in the fridge for an hour or so, or overnight for the flavors to sink in. 3. Prepare the salad, pulling, peeling, washing, cleaning and slicing. 4. Put the mixture into a bowl or lay it out on four individual plates. 5. Get the chicken out of the bag and put it on the grill tray. 6. Pour the sauce that's left over into a bowl on one side. MAKE SURE THAT AN ADULT DOES THE NEXT PART WITH YOU : 7. Pop the chicken under a hot grill for a couple of minutes until things start to sizzle. 8. Now take the chicken out and brush a little more of the sauce onto the chicken. 9. Turn the grill down to medium and return the chicken to the grill for another 5 minutes. Elvis Cridlington’s BBQ Chicken Safety First! Always ask a grown-up to help you with chopping and cooking food! 10. Keep an eye out in case things start to really burn. We don't want to have to call out Fireman Sam! 11. Take the chicken out again, turn it over and brush more sauce on it. 12. Return the chicken to grill for about another 10 minutes brushing more of the sauce over it halfway through, this time letting it get sizzling brown and a little charred. 13. Check that the chicken is done by slipping a sharp knife into the thickest part of the drumstick and making sure the juices that run out are clear and not pink. If they are pink then pop the chicken under the grill for another couple of minutes and check again. 14. When the chicken drumsticks are cooked, place them artistically on top of the bowl of salad or on each individual plate.
