REQUIRED MODEL: A-PLUS2M36E48 DESCRIPTION: Market Forge Model A-Plus 2 E electrically powered steam cooker with solid stainless steel cooking compartments. Both compartments have Pressure and Pressureless steam controls, and provide operator selection of either 5 PSI 0.4kg/cm2 pressure steam cooking or free-vented, pressureless steam cooking. PRESSURELESS MODE: 15-Minute timer is set. Steam flow is automatically interrupted when compartment door is opened during cooking cycle. At end of cooking cycle indicator light turns off and a continuous audible signal sounds. Boiler is rated at 48 KW (240V, 480V) or 42 KW (208V) and equipped for operation with: 208 Volts AC, 3 phase, 60 Hz (42 KW only) 240 Volts AC, 3 phase, 60 Hz (48 KW) 480 Volts AC, 3 phase, 60 Hz (48 KW) (Optional at extra cost.) Equipped with 6" 152mm stainless steel legs, adjustable bullet feet, reinforced die-formed stainless steel marine edged counter top, and hinged doors with magnetic catches. COOKING CAPACITIES: ( Pressure or Pressureless ) FOOD PRESSURE MODE: 60-Minute timer is set and steam control handle engaged. At end of cooking cycle, steam control handle releases, turning off indicator light, exhausting steam and condensate from cooking compartment and sounding a continuous audible signal. Boiler is automatically filled with hot water and brought to pressure when water and heat switches are turned on, and automatically drained, under pressure, when switches are turned off. A cold water condenser automatically condenses all steam exhausted from the boiler and compartments before releasing it to drain. Unit also includes safety valves, low water cut-off, water strainer descaler, and manual drain capability. Boiler is insulated. SPEC NO. S-2401 04/04 Cooking compartments have double-door construction. Inner door of cast aluminum with stainless steel facing, and removable for cleaning without tools. Door wheel screw is Acme type with replaceable bushing, all threads concealed. Compartment doors are self-latching, and open automatically approximately 15° when primary latch is released. Cooking compartments are equipped with lift-out pan supports. HW Hot Water - 3/8" 13mm NPT for hot water to boiler. Hot water lines shall have a minimum of 25 PSI 1.8kg/cm2 and a maximum of 50 PSI 3.5 kg/cm2 wsater pressure. CW Cold Water - 3/8" 13mm NPT for cold water to condenser. Cold water lines shall have a minimum of 25 PSI 1.8kg/cm2 and a maximum of 50 PSI 3.5kg/cm2 water pressure. D Drain - Pipe full 2" 50mm IPS to flush floor drain capable of receiving water flowing at a maximum rate of 5 gallons 19 liters per maximum rate of 5 gallons 19 liters per minute. DO NOT MAKE SOLID CONNECTION TO FLOOR DRAIN. DO NOT INSTALL ELBOWS IN DRAIN LINE. EC Electrical Connection - 120 Volt AC, 60 Hz, 1/2" 13mm conduit connection or equivalent. Use wire suitable for at least 90°C. Amp draw for cooker and boiler controls: 6 amps. ST Steam Take-off - Connection for operation of adjacent steam powered equipment. Requires steam take-off kit (optional at extra cost). CAUTION: Before connecting water to this unit, water supply should be analyzed to make sure hardness is no greater than 2.0 grains per gallon and pH level is within the range of 7.0-8.5. Water which fails to meet these standards should be treated by installation of a water conditioner. NOTE: PVC and CPVC Pipe are not acceptable materials for drains. *It is our policy to build equipment which is design certified by A.G.A., U.L., A.S.M.E., N.S.F., C.G.A. and C.S.A.
