MODEL HCR40 is freestanding with one-pan, all purpose standard oven. MODEL HCR401 is freestanding with integral compact convection oven. MODEL HCR46 is modular version. CONSTRUCTION: Outer shell is reinforced sheet steel. Two drawers extend full width. Front and rear grease troughs have large drain openings; full width grease chutes drain directly into spillage drawer. Ranges are 36" wide with 5" high combination vent backsplash at rear. MODEL HCR40/HCR401 has stainless steel front; sides are painted gray, rectangular hot tops are cast iron. Mounted on 6" stainless steel legs. Drop door forms a loading platform. Oven deck is steel deck plate, flanged at back and sides. Oven lining is porcelain on steel. Insulated at top, rear, both sides and bottom and door. MODEL HCR46 has stainless steel front, painted sides. Mounts on accessory stand. CONTROLS: Each 12" x 24" hot top is thermostatically controlled. Control panel is located below the range waterfall. Standard Oven: Top and bottom oven heating units are individually controlled by operating reversible 3-heat switches on range control panel. Temperature dial has provided graduation from 200-500°F. Provided with an electric interlock which shuts off blower and heating elements when door is opened. CAPACITY: Tops accommodate two 40-quart and one 20-quart stock pot. Conventional Oven Cavity: 231⁄2"W x 13"H x 311⁄2"D accepts a single, furnished rack on a two-position built-in rack guide located in cavity. Oven holds 60 lbs. of meat in a 4 sq. ft. deck area. Convection Oven Cavity: 191⁄ 4"W x 141⁄ 2"H x 27"D accepts three furnished racks for a five-position built-in rack guide with positive stops. Each rack holds one 18" x 26" sheet pan. ELECTRICAL: HCR40 — 21.7KW; HCR401 — 23.0 KW; HCR46 — 15.0 KW 12" x 24" Hot Tops are heated by clampon heating units. Temperature range is 340°F — 800°F. Independently controlled heating units for oven located at top of oven compartment and beneath oven deck. Wiring and connections are located behind and below the control panel and are accessible from range front.
