INTRODUCTION Congratulations: You have just purchased one of the finest pieces of equipment on the market today. Before installing or operating your new Piper Products, Inc. equipment, you should read through this manual. This manual should be retained for further reference as it contains installation and operating instructions, service tips, part lists and warranty information. For your safety, read and follow all cautions and warnings. Freight Damage Claims: Your Piper Products equipment was carefully inspected and packed before leaving our factory. The transportation company assumes full responsibility for safe delivery of this equipment. Piper Products cannot assume responsibilities for damage or loss incurred in transit. Visible damage or loss should be noted on the freight bill and signed by the person making the delivery. A freight claim should be filed immediately with the transportation company. If damage is unnoticed or concealed until equipment is unpacked, notify the transportation company immediately and tell them you want to file a concealed damage claim. This must be done within ten (10) days after delivery was made. Be sure to retain all packing material and cartons.
WARNING Installation of this equipment should be done only by persons qualified or licensed to install electrical equipment. Adjustments and service work should be performed only by a qualified service technician. Service is available through Authorized Piper Products Parts and Service Distributors throughout the United States. For a complete listing of these call or write Piper Products, Inc. for the name of the nearest distributor. This equipment is intended for commercial use only. Not for household use. Use of other than genuine Piper Products replacement parts or service work performed by other than an authorized Piper Products service agent will void the warranty. Do not use any corrosive cleaners. Use only cleaners approved for stainless steel.
INTRODUCTION The Piper Products, Inc. Models 915-H, 934-H 1012-U, 1015 and 1034 Cabinets have been designed to create and maintain ideal conditions for proofing dough with 80% to 85% relative humidity. When used for holding food to temperature, these Cabinets will maintain temperatures from 85 to 185 degrees Fahrenheit. A centrifugal blower circulates the air over a 1500-watt heating element and up a louvered stack, distributing air to all levels of the cabinet. A water reservoir positioned over a separate 1250-watt heating element provides humidified air into the cabinet. These units are equipped with a heavy-duty three-wire cord set. When turned on a pilot light will glow. A thermostat is provided, with a temperature range of 50 degrees to 200 degrees Fahrenheit. An infinite switch is used to control humidity separately. This allows for precise control over the heated environment. A digital thermometer registers internal cabinet temperatures. These cabinets are very versatile. They can be used in kitchens, bakeries and in transport applications. Any standard 120 volt, 15 AMP wall service outlet can be used to supply power to the 915-H, 934-H, 1012-U, 1015 and 1034.
CAUTIONS AND WARNINGS Unplug unit from outlet before transporting. Unplug cord from outlet before servicing. Do not operate humidity controls without water in pan. Check water level every 4 hours. If water pan is over filled, wipe away excess water before plugging unit into outlet. After transport, check for any water that may have splashed - wipe excess water away before use. Unit does cause condensation to form on inside of door. Be careful, for water may drip to floor causing floor to become slippery.

Remove unit from packaging. Inspect unit for shipping damage (dents, etc.). Check for packaged power cord (inside cabinet). Make sure that all knobs are secure and the pilot lens is tight. Plug unit in momentarily to see if pilot comes on. If all steps above have been followed and unit appears trouble free, you are now ready to put your unit into operation.
WARNING: Do NOT run humidity unless water pan is full.
GENERAL THEORY OF OPERATION These Cabinets provide the proper environment for the proofing of dough and/or the holding of food to temperature. The dough is heated and humidified by water vapor created by the hot water in the water pan. A timer is included on the 915-H, 934-H 1012-U, 1015and 1034 Cabinets. A pilot light is installed above both the infinite and thermostat controls to indicate when the unit is running. Heat and humidity are separately controlled. When the power switch is set to "proof", a separate element heats the water. An infinite switch provides precise control over the amount of humidity. When the power switch is set to "heat" the thermostat is used to bring the cabinet up to 185 degrees Fahrenheit. The heat and humidity controls cannot be used simultaneously. NOTE: Running the humidity without water will damage the water pan.
OPERATING INSTRUCTIONS Start-Up Procedure 1. Make sure unit is clean before using. 2. Roll cabinet into area to be used. 3. If humidity is desired, fill water pan (1-gallon capacity). 4. Connect power cord to back of unit, and then plug into wall outlet. 5. If heating, turn power switch to "heat" and set thermostat to setting desired. If "proofing", set switch to proof and set humidity to desired setting. 6. Set timer to required time needed (it is important to allow one hour for preheating). 7. Close door. 8. When unit is preheated, load with product and close door. 9. The correct humidity setting should be between #2 and #3. On a dry day, you need to adjust the humidity setting somewhat. 10. The correct temperature setting for the proofer is 95-100 degrees. Raising the temperature or the humidity setting indiscriminately will not speed the proofing of the product.
OPERATING INSTRUCTIONS . Shut-down Procedure 1. Turn switch to off position. 2. Unplug unit. 3. Wipe down inside of cabinet, this will lessen the chances for bacterial growth. 4. Unit should be cleaned thoroughly. This must be done if unit is not going to be used right away. 5. If unit is going into storage, water pan should be emptied.
DISASSEMBLY AND REPAIR HUMIDIFIER 1. Remove power cord before servicing. 2. Drain water from pan. 3. Remove humidifier from cabinet by sliding heater unit out the front of the unit. 4. Remove screws from top panel. 5. Tip top panel to see inside. 6. When using Models 915-H, 934-H 1012-U, 1015and 1034 (not equipped with immersion heating elements) the heating elements are located under the water pan and can be removed by removing the wires and pulling the element away from the box. 7. Any of the other parts can be replaced using a screwdriver and small wrench or pliers. To replace, reverse the above steps making sure to reconnect all wire leads to the proper locations. CABINET Casters: the humidifier will need to be removed from the cabinet. Now the casters can be repaired or replaced by carefully laying the cabinet on its back. Remove casters, retaining nuts and bolts.
MAINTENANCE INSTRUCTIONS CLEANING OF UNITS 1. Humidifier should be removed to clean cabinet and humidifier correctly. 2. Clean cabinet using mild soap solution and warm water. 3. Rinse well to remove soap. 4. Dry well. 5. Carefully clean the outside of humidifier, inside of water pan and the cover with mild soap and water. Make sure water does not get near any of the electrical components. 6. Rinse soap off with sponge, being careful not to get electrical parts wet. If they do get wet, make sure electrical parts are completely dry before power is restored. 7. When completely dry, slide humidifier into cabinet. Before using again, refill water pan.
TROUBLESHOOTING If Pilot Light Does Not Light Check cord to be sure it is securely plugged into back of unit and the appropriate 120-volt wall outlet. Make sure wall outlet has power with a continuity tester. Check pilot light bulb to see if it has burned out. Make sure the infinite switch or thermostat is turned on. If Water Will Not Heat Make sure power switch is set to "humidity". Set humidity anywhere between low and high. If Water Will Not Heat Check water level in water pan. If dry, check for leak or small hairline crack. Check humidity burner under water pan. Check to see if door fits properly.
STORAGE Units stored indoors should be stored at room temperature and if not in original crating should be covered to prevent the accumulation of dirt and dust. Do NOT stack units.
PIPER PRODUCTS, INC LIMITED WARRANTY All Piper products are warranted to be free of defects in material and workmanship for a period of 12 months from date of purchase on all parts and labor. Piper Products, Inc. warrants to the original purchaser that its equipment will be free from defects in the materials and/or parts for a period of 12 months from date of shipment and reported to the factory. The purchaser is responsible for having equipment properly installed, operated under normal conditions with proper supervision and to perform periodic preventative maintenance. Equipment failure caused by inadequate water quality, improper cleaning, harsh chemicals, or acids are not covered under warranty. The manufacturer’s obligation under this warranty shall be the replacement or repair of defective parts within the warranty period. Excessive labor (more than 1/2 hour) required to access Piper equipment built into cabinets, tables or structures by others, is NOT covered under labor warranty. Example: Piper multiple- or singlewell food wells. All labor shall be performed during regular working hours. Overtime premium will be charged to buyer. After thorough examination, the decision of the Piper Products Service Department shall be final. Any defective parts to be repaired or replaced must be returned to Piper Products, Inc., 300 South 84th Avenue, Wausau, WI 54401, transportation charges prepaid, and they must be properly packed and tagged. The serial and model number of the equipment and date of original installation of such equipment must be given. However, after one year we will not assume any responsibility for any expenses (including labor) incurred in the field incidental to the repair or replacement of equipment covered by this warranty. Our obligation hereunder to repair or replace a defective part is the exclusive remedy for breach of this warranty; and we will not be liable for any other damages or claims, including consequential damages. If, upon inspection by Piper Products, Inc. or its Authorized Service Agency, it is determined that this equipment has not been properly installed or has not been used in an appropriate manner, has been modified, has not been properly maintained, the warranty will be void. Also, if the nameplate or other identifying marks have been removed, defaced or changed or the unit has been repaired or altered by persons other than expressly approved by Piper Products, Inc., the warranty will be void. If the equipment has been subjected to misuse or misapplication, neglect, abuse, accident, damage during transit or delivery, fire, flood, riot or acts of God, then this warranty shall also be void. When any situation occurs which voids the warranty the manufacturer shall not be liable for any damage to any person or any property which may result from the use of the equipment thereafter. Warranty is limited to Piper manufactured products only and does not apply to other equipment which may be connected to or installed within. No representative, dealer, distributor or any other person is authorized or permitted to make any other warranty or obligate Piper Products, Inc. to any liability not strictly in accordance with this policy. This warranty is in lieu of all other warranties expressed or implied, including any warranty of merchantability, and fitness for a particular purpose. Piper Products does hereby exclude and shall not be liable to purchaser for any consequential or incidental damages including but not limited to damages to property, damages for loss of use, loss of time, loss of profits or income, resulting from any breach of warranty.
