No, unfortunately. It is for this reason that many work processes have to be carried out manually in the meat-processing industry. In doing so, the most important hand tool for the butcher is and remains the knife. A high-quality and long-lasting knife is imperative. But even the hygiene, protection from injuries and the anti-theft protection should not be neglected when it comes to storage and transportation of knives. The tried and tested ITEC-Knife Holder System offers a complete solution freely, according to the motto "one-stop-service". The knife holder – Original version ITEC-knife holders are designed to accommodate two sharpening steel blades and four or ten knives. There is an optional provision for a sharpening device mounting lengthways along the side of the knife holder. The knife holder can be equipped with a phantom hand for purposes of accommodating a safety glove. The phantom hand is attached either to the side or to the back, in accordance with the individual cleaning possibilities as well as those available in the company. A safety apron can, in addition, be attached to the knife holder using two hooks. ITEC-knife holders are lockable, and that minimizes the risk of knives, sharpening steel blades and – depending on the design – even the safety gloves being stolen. It is not possible to touch inside the wire frame. There is therefore no risk of injury from the knife placed in the knife holder. To identify one’s own knife holder from a variety of similar knife holders, a string of one to four characters which can be selected randomly, for example personal identification number, are engraved on the integrated engraving panel. Access to the production area - secure transportation and avoidance of contamination Falling knives during transportation or when the knife holder is being removed pose a constant danger of injury. In addition, knives which have fallen down become contaminated and must be cleaned and possibly sharpened before they are used again. It is for that reason that ITEC knife holders have a knife-locking latch with a locking mechanism. The locking mechanism prevents the knives from falling out and therefore provides greater safety when carrying the knife or removing the knife holder, even without a lock. Besides, the V-shaped knife receptacle creates stable storage for the knife in the holder. Possible contamination which arises when personal equipment is stored after the day’s work is reduced quickly and effectively using the Spray Disinfection Module - Type 22400 before entering the production areas. Since the knife holders are fed into the Spray Disinfection Module by means of the through-feed method, it can easily be integrated into the stream of employees at the entrance to the production area. It is also possible to combine it with all modular ITEC hygiene stations without any modifications. Alternatively, it is also possible to dry-disinfect with the UV-Disinfection Module - Type 22300. The knife holder together with the knives, sharpening steel blades and stab-protection gloves contained in it are disinfected using ultra-violet light. UVC light has an intense germicidal effect. It is absorbed up to 85% in the nucleus of micro organisms, thus inhibiting the metabolism of the cells and their reproduction. Viruses, bacteria, yeasts, moulds and other organisms are inactivated or destroyed in this way. Dry-disinfection prevents the carrying of chemicals or water into the production area. Operating costs are low since neither water nor detergents and disinfectants are needed. Owing to the V-shape of the knife receptacle and the conical form of the blade protection, knives in knife holders can more precisely and easily be placed on the rack and taken out again. The fact that knives can quite easily be stored in knife holders prevents them from being dropped down within the working area and that guards against the risk of injury associated with such accidents. Cleaning after production – hygienically and efficiently for every size of company In small and micro-enterprises, manual cleaning of knives, knife holders and safety gloves is still the most economical solution. An effective way of cleaning the safety glove is by using Type 2306 and 23050 Cleaning Sluices. For both types of sluices the hand with the safety glove is held to the sluices The manual cleaning of knives and steel blades is done in ITEC-cleaning places. A revolving mounting which is fastened to the pool makes it possible to keep the knife holder fixed. The knives are cleaned in the knife holder. Since the knife handle rests on the knife holder only at selected points, it is possible to perfectly clean the area between the shaft and the blade. In medium-sized companies, it is wise to entrust the task of cleaning to specially trained cleaning staff. This increases hygiene safety and reduces operating costs. By saving on cleaning time among the skilled workers in the slaughter and meat cutting plants, more time is created for the key tasks. The Type 22510 Cleaning Machine cleans 16 knife holders per washing cycle, and that includes knives, steel blades and safety gloves. Through this method, it is possible to get an optimal cleaning outcome even for hard-to-reach parts of the knife, such as knife shafts, as well as for very dirty safety gloves. The cleaning machine can be fitted from two sides. That reduces the amount of handling time spent by the cleaning staff on the machine. The rotating suspension device for the carriage makes it easy to mount the knife holders. The Type 22580 Cleaning Machine was developed for large-scale enterprises. Up to 36 personalized knife holders fitted with knives, steel blades and safety gloves can be simultaneously cleaned and disinfected in it. A trolley which is fed by the horizontal conveyor of the cleaning machine serves as a carrier. This carrier, which is driven by a timing belt, moves through the machine in a socalled pilger process during the cleaning phases. This results in a particularly intensive cleaning process because the equipment gets repeatedly targeted by the cleaning beam. Like is the case with the Type 22510 Cleaning Machine, knives, steel blades and safety gloves – collected in a basket for each worker.- are fed into the machine for cleaning. Due to the reduced amount of handling, and more especially the reduced consumption of water, detergent and energy, the cleaning costs for this system can be considerably lowered compared to those of the conventional systems. Another advantage is the possibility of cleaning safety aprons or cutting plates on a special trolley in the same plant. You don’t wish to employ more cleaning staff? In that case ITEC recommends the Type 22572 Through-Feed Cleaning Machine. This machine cleans all the equipment of an employee using the through-feed process: knives, steel blades, knife holders and stab-protection gloves. Unlike other solutions already highlighted, it is also possible to clean the stab protection apron. The latter is mounted on the knife holder using two hooks. Pre-cleaning of the apron and the glove is not necessary. Procedure: The knife holder on a tray is hung onto the conveyor belt by one of the workers in the production department. The tray is spaciously designed deliberately in order to avoid unnecessary delays when there is a high number of staff present, e.g. during change of shifts. The knife holders are pushed into the system using small tappets. The system’s cleaning area consists of two adjacent cleaning zones. The drying process takes place through the air-knife drying technology. This involves an air stream blowing off the water droplets from the cleaned equipment at high speed but with low pressure. When cleaning has been done, and possibly drying too, the knife holders are ejected on a gravity slide. The cleaned knife holders are buffered there until they are removed. A cleaning process takes about 2.5 minutes. The employee can use this time to do some hand and sole cleaning. Due to the short cleaning time, the elimination of waiting time during the cleaning process as well as the fact that pre-cleaning is not done, efficient use of the Through-Feed Cleaning Machine is attained As a result of machine cleaning, consistent cleaning efficiency is achieved, which is not dependent on work. At the end of the production process – possibility of personalized storage and protection from theft After the production process, and after cleaning the knife cage and the knives contained in it, the knife cage can stored safely in lockable wall mountings. The entire tool kit, consisting also of the safety glove, sharpener and safety apron, depending on the type and model of knife holder, stays together. Injuries and losses are ruled out. For a permanent arrangement, the wall mounting identical to the knife holder is labelled with staff identification numbers. The knife cage is secured with a padlock for locking the knife cage onto the wall mounting. There is no need for other locks and devices. Opening of the knife holder during storage is of course not possible either. Trolleys make it possible to transport the knife holders safely and to store them in a flexible manner. The design of the trolley depends on the type of the knife holder as well as its capacity.
