CHECKING YOUR NEW APPLIANCE Your new Pitco appliance has been carefully packed into one crate. Every effort has been made to ensure that it is delivered to you in perfect condition. As you unpack your new appliance, inspect each of the pieces for damage. If something is damaged, DO NOT sign the bill of lading. Contact the shipper immediately; the shipper is only responsible for 15 days after delivery. Check the packing list enclosed with your appliance to ensure that you have received all the parts to the appliance. If you are missing any parts, contact the dealer from whom the appliance was purchased. As you unpack the appliance and its accessories be careful to keep the weight of the appliance evenly distributed. Refer to the table below to identify which accessories should be included with your appliance. Locate your Pitco model number and serial number on the inner door of the appliance and the find the date purchased. Write this information on the front cover of this manual for future reference. If you have completed the above steps that are applicable to the appliance you purchased, the appliance is now ready to be installed. Although it may be possible for you to install and set up your new appliance, it is STRONGLY recommended that you have this done by qualified professionals. A qualified professional will ensure that the installation is safe and meets local building and fire codes. INSTALLATION CLEARANCES The clearances shown below are for combustible and non-combustible installations and will allow for safe and proper operation of your appliance. WARNING DO NOT obstruct the flow of ventilation, or air openings around the appliance. Adequate clearance around the appliance is necessary for servicing and proper component ventilation. Ensure that you meet the minimum clearance requirements specified in this manual. L20-343 Rev. X0 DRAFT (11/09) WARNING DO NOT install this appliance next to a water cooker. A splash over of water into the hot oil may cause a flash fire. 1 INSTALLATION CAUTION To prevent equipment damage and/or personal injury, do not tilt the appliance onto any two of its casters or legs, or pull the appliance by the splash back. 1.3. LEG/CASTER INSTALLATION AND LEVELING When you receive your appliance it is completely assembled with the possible exception of the legs (or casters). This appliance must be installed with legs or casters; it cannot be curb mounted. Curb mounting will seriously inhibit this appliance’s ability to effect proper component ventilation. The legs/casters must be installed before connecting the appliance to the power supply. The legs provide the necessary height to meet sanitation requirements and assure adequate air supply for electrical component ventilation Use the following procedure. WARNING This appliance must be installed with the legs or casters provided by the manufacturer. Required tools: 7/16 “ wrench and socket and a large pair of water pump pliers. 1. Lay the appliance on its back, being careful not to damage the splash back by pulling on it. Protect the outside of the appliance with cardboard or a drop cloth when laying it down. 2. Attach each leg/caster with the hex head screws and nuts supplied. Each leg/caster requires four ¼-20 x 5/8” hex head screws and nuts. Insure that all screws are tight. 3. Mount the screws from the inside of the appliance with the nut on the outside (bottom) of the appliance. The nuts have lock washers attached to them; therefore it is not necessary to use separate lock washers. WARNING DO NOT install legs or casters, or perform leveling procedure when appliance is in operation or full of hot liquids. Serious injury could result. 4. When all four legs/casters are securely mounted, stand the unit up, being careful not to put too much weight on any one leg. Adjust the height and level the appliance by adjusting the leveling devices (B) with water pump pliers. On casters, loosen 2 screws (A) before leveling, make your height adjustments, then retighten. 2 L20-343 Rev. X0 DRAFT (11/09) INSTALLATION MODEL DD-E24RUFM 1.4. DRAINBOARD INSTALLATION The drainboard can be installed so that it extends to the right or the left of the fryer. 1. Place the drainboard on top of the fryer tank with the support brackets facing up. Align the 3/8inch clearance holes (1 cm) so that they are to the side of the fryer to which you would like the drainboard to pivot. 2. Slide the hinge rod through the clearance holes in the drainboard, sliding from front to back. The spacer is a hollow tube that is 1/2 inch (1.2 cm) in diameter and 2-5/8 inches (6.6 cm) long. Slide this spacer over the part of the hinge rod that protrudes from the rear hole on the drainboard. Insert the rear end of the hinge rod through the matching hole in the splashguard. 3. A 3/8-16 x 2-1/2 hex-head cap screw (6.3 cm long) may be attached to the front top corner of the tank. If your fryer includes this screw, remove it. If the screw is not in place on the fryer, you will find the screw packed with the other parts of the fryer. Fit the washer under the head of this screw, and then slide the screw through the hole in the hinge rod post. Thread the end of the screw into the matching hole in the top of the fryer, and tighten the screw securely. 4. Lift the drainboard from the side opposite the hinge rod and swing it open. Both support legs should drop into position against the cabinet side. The pitch of the drainboard can be adjusted by loosening the wing bolts on the support brackets and moving the support legs in or out. Tighten the wing bolts to secure the support legs in the desired position. When the fryer is not in use, swing the board back over the fryer tank as a protective cover. ELECTRICAL CONNECTIONS It is advised that this power supply be plugged into a wall receptacle that is controlled by the ventilation control. This will prevent the appliance from being operated without the ventilator on. If your appliance requires an electrical connection, the power requirements are listed below. WARNING This appliance must be connected to a power supply having the same voltage and phase as specified on the data plate located on the inside of the appliance door. WARNING DO NOT attempt to connect the appliance to an electrical supply other then that indicated on the data plate. Electrical connection should be performed by qualified personnel. WARNING The electrical connection used by this appliance must comply with local codes. If there are no local codes that apply, refer to the National Electrical Code (NEC), ANSI/NFPA 70 for installation in the US. In Canada, refer to CSA Standard C22.2 and local codes. In all other cases, refer to local and national codes and regulations. WARNING The appliance must be grounded in accordance with local code; if there is no local code, comply with the NEC and ANSI/NFPA No. 70 latest edition (for US and Canadian installations). In all other cases, refer to local and national codes and regulations. To comply with European requirements, European models are equipped with an equalizationbonding clamp. An equalization bonding lead must be connected to this clamp to provide sufficient protection against potential difference. This clamp, located on the rear of the appliance is marked with the following universal symbol. WARNING A country approved all pole circuit breaker with a minimum open contact gap of 3mm must be used for proper installation. (CE countries) WARNING This equipment must be installed so that the plug is accessible unless other means for disconnection from the power supply (e.g. a circuit breaker) is provided. WARNING If this appliance is permanently connected to fixed wiring, it must be connected by means of copper wires having a temperature rating of not less then 167°F (75°C). WARNING All copper wiring for this appliance must be made in accordance with the wiring diagram(s) located on the appliance. 4 L20-343 Rev. VENTILATION AND FIRE SAFETY SYSTEMS Your new appliance must have proper ventilation to function safely and properly. It is very important to install a fire safety system. Your ventilation system should be designed to allow for easy cleaning. Frequent cleaning and proper maintenance of the ventilation system and the appliance will reduce the chances of fire. Ventilation and fire safety systems must comply with local and national codes. Refer to ANSI Z83.11 for a list of reference documents that will provide guidance on ventilation and fire safety systems. L20-343 Rev. X0 DRAFT (11/09) 5 INSTALLATION 1.7. INSPECTION Before you begin filling and operating the appliance, perform the following visual checks: 9 After the appliance is in its permanent location, check to be sure that it is level. Any additional leveling that is necessary can be performed as previously described. 9 Ensure that the probe, heating element (if electric model) and high temperature limit is in place and secure. Check the high limit bulb mounting screws to ensure that they are tight. 9 Review the installation portion of this manual and ensure that all steps have been followed and executed properly. 1) Probe 2) High Temperature Limit 3) Heating Element 6 L20-343 Rev. X0 DRAFT (11/09) INSTALLATION MODEL DD-E24RUFM CAUTION Be careful not to disturb the probe and high temperature limit during operation and cleaning of this appliance. 1.8. INITIAL CLEANING When your appliance is shipped, many of its parts are covered with a thin coat of oil for protection. Before the appliance is ready for cooking it must be cleaned. This will remove the oil coating and any foreign matter that may have accumulated during storage and shipment. Refer to the following procedure to clean the appliance. WARNING Wear protective gloves and clothing when cleaning and draining the appliance and when disposing of water. The water is extremely hot and can cause severe injuries. CAUTION DO NOT leave the appliance unattended during cleaning. Never let the liquid level go below the heating element. 1. Read the “operation” section of this manual prior to filling or operating the appliance. 2. The following steps should be followed using a grease dissolving commercial cleaner. WARNING Use a commercial grade cleaner formulated to effectively clean and sanitize food contact surfaces. Read the directions and precautionary statements before use. Particular attention must be paid to the concentration of cleaner and the length of time the cleaner remains on the food contact surfaces. 3. Following the manufacturer’s directions, clean the tank interior and all other food contact surfaces. 4. When cleaning is complete, rinse the inside of the tank thoroughly with cool water. Continue to rinse the tank until the cleaner has been completely and thoroughly rinsed from the tank. 5. Using a clean dry cloth, wipe out all of the water. 6. Repeat the previous steps to clean the bread and batter station or filter pan if equipped. L20-343 Rev. X0 DRAFT (11/09) 7 OPERATION 2. OPERATION 2.1. FILLING THE FRY TANK Both liquid and solid shortening can be used in this fryer. If solid shortening is used it is recommended that you melt the shortening before adding it to the fryer. You can melt solid shortening in the fryer, but you must be very careful not to scorch the shortening. ` Tank Capacity Model DD-E24RUFM Capacity 120 lbs. (54.5 kg) CAUTION This appliance is NOT designed for cooking with water. Fill with oil or shortening only. 2.1.1. FILLING THE TANK WITH LIQUID SHORTENING To fill the tank with liquid shortening refer to the following procedure. 1. Ensure that the drain valve is completely closed and that there is no residual moisture in the tank. 2. Fill the tank with oil. You may fill the tank to approximately ¾” (1.9 cm) below the first break on the tank back. The oil will expand when it heats up, raising the level slightly. When hot, the oil should be even with the first break on the tank back. ELEMENTS 2.1.2. FILLING THE TANK WITH SOLID SHORTENING To fill the tank with solid shortening refer to the following procedure. WARNING NEVER melt blocks of solid shortening on top of the elements. This will cause a fire and could result in personal injury. SOLID SHORTENING 1. Remove the tank rack. ELEMENTS 2. Cut the solid shortening into cubes no larger than one inch. ALWAYS pack the shortening below, between, and on top of the elements. Do NOT leave any large air gaps. Use care when packing the solid shortening into the tank. Do NOT bend or break the temperature or high limit sensor probes. If these are damaged the fryer will not function properly. 3. Once the fryer’s tank is firmly packed with shortening, the shortening must be melted. The fryer’s controller has an automatic melt cycle feature that will pulse the heat to allow even melting of the well-packed shortening. DO NOT Melt blocks on top of elements! SOLID SHORTENING EXCESSIVE AIR GAPS EXCESSIVE AIR GAPS DO NOT leave air gaps! WARNING Oil/shortening must completely cover the heating elements at all times while appliance is on. 8 L20-343 Rev. X0 DRAFT (11/09) OPERATION MODEL DD-E24RUFM 2.2. FRYER START UP Refer to the following procedure to start the fryer prior to operation. 1. Ensure that the drain valve is closed. 2. Fill the fry tank with oil/shortening. (See section 2.2 “Filling the Fry Tank”) WARNING NEVER operate the fryer with an empty fry tank. It will void the warranty. 3. Press the ON/OFF, , key to turn the controller on. • Left display will show actual temperature. • Right display will show “LOW”, “READY”, or “HI” to indicate temperature status Note: The initial controller setpoint is 300°F (149°C) (Product Key 18). 4. The fryer is now on and heating the oil/shortening in the fry tank. WARNING Oil/shortening level should NOT be allowed to fall more than 1” (2.5 cm) below the oil level line, (first break in the tank back), at any time. Dry firing will shorten element service life and will void your warranty. 5. Preheating Fryer: Melt Shortening When the shortening is below 150°F (66°C), the fryer is in melt cycle mode. • The left display shows actual temperature • The right display shows “LOW” • All product key LED’s are off • MELT indicator in the display is lit. • In Melt mode the heating elements are cycled on and off to evenly heat the shortening. Note: Allow 45 minutes for the fryer to heat to cooking temperature. 6. Preheating Fryer: Heating Shortening When the shortening exceeds 150°F (66°C), the fryer switches to heating mode. • The left display shows actual temperature • The right display shows “LOW” • The LED above Product Key 18 (300°F) is lit. • HEAT indicator in the display is lit. • When the shortening temperature reaches 300°F (149°C) the HEAT indicator will turn off and the right display will show “READY”. 7. Select Product to Fry • Press the Product key of the product to be fried • The controller will beep twice and the LED over the Product key chosen will be lit. • The left display shows actual temperature • The right display shows temperature status, (“LOW”, {Product name}, or “HI”) • HEAT indicator in the display will be lit until new setpoint temperature is reached. 8. Wait until Setpoint is reached • When the new setpoint temperature is reached, the right display will show the {Product name}. • The left display shows actual temperature • The LED over the Product key chosen will be lit. Press the ON/OFF, , key to turn the controller off. 2.5. CONTROLLER FEATURES 2.5.1. TEMPERATURE CHECK To check the temperature: • Press the “TEMP/TOGGLE CLEAR” key. • Right display will show “ACT XXXF” where XXX is actual temperature. • Press the “TEMP/TOGGLE CLEAR” key again. • Right display will show “SET XXXF” where XXX is setpoint temperature. 2.5.2. HI TEMPERATURE WARNING When the shortening temperature is more than 10°F (5.6°C) above the set temperature, the right display will show “HI”. If a fry cycle is started, the controller will beep a 4-second tone at the beginning of the cycle countdown. The controller will emit an audible alarm if the actual temp is over 400°F, and “HI” will appear in both displays. If this condition occurs, press the ON/OFF, , key to turn the controller off. 2.5.3. LOW TEMPERATURE WARNING When the shortening temperature is more than 5 degrees below the setpoint temperature, the display will show “LOW”. If a fry cycle is started, the controller will beep a 4-second tone at the beginning of the cycle countdown. 2.5.4. PROBE WARNINGS If the temperature probe is “open” both controller displays will show “PROBE”. . Call an Authorized Service Technician. If the temperature probe is “shorted” both controller displays will show “PROBE” and the controller will emit an audible alarm. Call an Authorized Service Technician. 2.5.5. BOIL MODE The “BOIL MODE” key is used when boiling out the fryer. • Pressing the “BOIL MODE” key will program the set temperature to 225°F NOTE: The actual temperature must be below 225°F to enter the boil mode. NOTE: Monitor water level during boil out. Fry tank may be damaged (and warranty voided) if water evaporates below top of elements. Do not allow water to boil over tank. 2.5.6. DRAIN SWITCH The controller will turn off if the drain valve is opened. If the controller will not turn on, make sure the drain valve is closed. 2.5.7. SETBACK TEMPERATURE Pressing the Product Key 18, (marked “300°F”) will cause the fryer to enter Energy Saving Setback Mode. The set temperature will be maintained at 300°F (149°C). To resume normal frying operations, press the Product Key for the product desired. 12 L20-343 Rev. X0 DRAFT (11/09) PREVENTATIVE MAINTENANCE MODEL DD-E24RUFM 3. PREVENTATIVE MAINTENANCE 3.1. DAILY PREVENTATIVE MAINTENANCE Performing the preventative maintenance steps below on a daily basis will keep your equipment safe and operating at peak performance. During the cooking process, oil/shortening may spill and splatter and requires immediate attention. Furthermore, during the cooking process, particles and crumbs collect inside the fry tank reducing product quality and decreasing oil/shortening life. If you are producing high quantities of fried food, it may be necessary to perform these steps more than once a day. WARNING Filtering may require contact with hot surfaces. Wear oil proof insulated gloves while performing any filtering operation. Serious injury could result from direct contact with hot surfaces and/or oil. 3.1.1. FILTERING THE SHORTENING: 3.1.1.1. ASSEMBLE THE FILTER 1. Disconnect the return hose remove the filter carriage from the fryer cabinet. 2. Remove the filter pan cover. 3. Take out the filter envelope assembly. If the filter envelope is discolored or dirty, install a new filter envelope as follows: a) Remove the round filter screw from the bottom of the filter envelope assembly. b) Separate the filter screen and envelope from the suction tube. c) Remove the old filter envelope from the filter screen and discard. d) Slide the new filter envelope onto the filter screen. Align the holes in the envelope with the holes in the filter screen. e) Install the filter screw through the hole in the filter screen. Line up the opening on the suction tube with the hole in the filter envelope and the filter screen. f) Thread the filter screw into the opening of the suction tube. g) Fold the flap of the filter envelope over the edge of the filter screen. h) Place the filter assembly into the filter pan. The filter screw should fit into the hole provided in the bottom of the pan. i) Slide the edge of the filter assembly under the rod in the bottom of the filter pan. This rod is designed to hold the folded edge of the filter envelope in place. ` Filter Envelope Assembly L20-343 Rev. X0 DRAFT (11/09) 13 PREVENTATIVE MAINTENANCE 3.1.1.2. DRAIN THE FRYER 1. Press the controller’s ON/OFF, , key to turn the controller off. 2. Slowly push the filter pan back into the fryer until it stops. 3. Thread the drain outlet nipple into the bottom of the drain valve. 4. The drain hole in the cover of the filter pan should be just below the opening of the drain outlet nipple. 5. Connect the filter assembly to the white quick-disconnect fitting. 6. Sprinkle 12 oz. of precoat powder onto the filter paper. 7. Connect the flush hose to the black quick-disconnect fitting. 8. Open the drain valve by turning the handle counterclockwise, so that it points downward. The oil will drain into the filter pan. Connecting the quick disconnect fittings 3.1.1.3. FLUSHING THE FRYER 1. Lift the submerger screen out of the tank, and lock it in position. 2. Remove the tank screen. 3. Carefully place the end of the flush hose inside the tank. 4. Open the flush valve (yellow handle). Close the return valve (red handle). 14 L20-343 Rev. X0 DRAFT (11/09) PREVENTATIVE MAINTENANCE MODEL DD-E24RUFM WARNING Always point the flush hose nozzle into the fry tank when flushing the tank. When the pump is operating, hot oil will be pumped from the nozzle. 5. Hold the flush hose handle. Press the pump power switch to the On position. 6. Rinse out the bottom of the tank with the shortening 7. When you are finished, press the pump power switch to Off. 8. Place the flush hose nozzle into the filter pan 9. Close the flush valve (yellow handle). 10. Disconnect the flush hose from the black quick-disconnect. 11. Drain the hose into the filter pan. 3.1.1.4. CIRCULATE THE OIL 1. Open the return valve (red handle). 2. Press the pump power switch to the On position. The shortening will be pumped from the filter pan, into the fry tank, and return to the filter pan. The filter envelope and the precoat will remove debris from the shortening. Allow the shortening to circulate for 5 minutes. 3. After circulating the shortening, press the pump power switch to the Off position. Allow the shortening to drain from the tank. 4. While the parts of the fryer are still warm [135°F, (57°C)], wipe off the submerger screen and the inside of the tank. Replace the tank screen. 3.1.1.5. REFILL THE FRY TANK 1. Place the tank screen back in the fry tank. 2. Close the drain valve. (Move the handle clockwise until it stops.) 3. Press the pump power switch to the On position. The shortening will be pumped back into the fry tank. 4. When all of the oil/shortening has been pumped out of the filter pan, air bubbles will appear in the oil being pumped into the tank. Count to 15 to allow the return lines to be purged, then press the pump power switch to the Off position. 5. Close the return valve (red handle). Close the cabinet doors. The fryer is ready to operate. 3.1.2. USING THE FILTER PAN HEATER If shortening is left in the filter pan, it will become solid when it cools. The filter pan has an electrical heater that can be used to warm the shortening in the filter pan. The pump will not be able to pump the shortening while it is solid. 1. To use the filter pan heater, locate the filter carriage power cord at the rear end of the filter pan. Push the filter back into the fryer as far as it will go. 2. Plug the power cord into the socket on the right side of the fryer. 3. Set the heater switch to the On position. The Heater indicator will light. 4. Leave the heater on until the solid shortening has melted. 5. Press the Heater power switch to the Off position. L20-343 Rev. X0 DRAFT (11/09) 15 PREVENTATIVE MAINTENANCE 3.1.3. APPLIANCE INSPECTION 9 Check that the high temperature limit, elements and temperature probe are in the correct position and secured in place. 9 Check that wires and cords are not frayed or loose in and out of the cabinet. 9 Check around the fryer for loose parts or accessories that need to be secured or other foreign items (ex: Aerosol cans) that should be removed from the area. 9 Check for oil/shortening leaks around the in and out of the cabinet and around the fryer. 3.1.4. CLEANING THE CABINET 1. Wipe up any spilled oil/shortening from the cabinet exterior while it is still warm using a clean soft cloth. Dust and lint should also be cleaned from the cabinet exterior daily using a clean damp cloth and a mild food grade detergent. Be careful not to get any water or detergent in the oil/shortening. Use a nonabrasive nylon scouring pad for tougher stains if needed. 2. Remove detergent from all surfaces. 3. Cleaning the interior cabinet requires a clean cloth to remove any oil/shortening, dust, lint or filter powder from the interior of the cabinet. 3.1.5. FILTER CLEANING The filter pan and filter envelope assembly should be cleaned every day to maintain peak performance and proper sanitation. 1. Remove filter carriage from fryer. Remove the filter pan cover. 2. Scrape all loose debris and crumbs from filter envelope assembly and filter pan. 3. Remove filter envelope assembly from pan. Disassemble and discard soiled filter envelope. 4. Wash remaining components in a solution of hot water and a mild grease cutting detergent. Rinse thoroughly and dry all surfaces before re-assembly. 5. Wipe the filter pan with clean damp cloth and a food grade detergent. If necessary place pan in pot sink to rinse all the detergent from the surfaces and dry all surfaces before reassembly. 3.2. WEEKLY PREVENTATIVE MAINTENANCE Performing the preventative maintenance steps above on a daily basis will help keep your equipment clean and safe. On a weekly basis these additional steps should be performed. 3.2.1. CLEAN BEHIND FRYER 1. Turn the fryer off. Allow the oil/shortening to cool to before pulling the fryer away from the hood. Hint: This maintenance may be ideal to perform on the day the oil/shortening is being changed so no oil/shortening is present in the tank or filter. 2. Disconnect the power cord(s), (if equipped), and retention lanyard, (if applicable). 3. Wearing proper protective gear, pull the fryer away from the hood. 4. Check that vent hood drip cup is empty and not dripping oil/shortening onto the fryer. 5. Check that the hood baffle filters are clean and not dripping oil/shortening into the fryer 6. Clean the fryer sides, back and splashback. It may be necessary to use a non-abrasive pad to scour and a putty knife to scrape the oil/shortening buildup. With a clean damp cloth and food grade detergent wipe the area clean. 7. Wipe up any excessive oil/shortening on the power cord(s) (if equipped) with a dry cloth. 16 L20-343 Rev. X0 DRAFT (11/09) PREVENTATIVE MAINTENANCE MODEL DD-E24RUFM 8. Reattach power cord(s), (if equipped), and retention lanyard, (if applicable), and push fryer back under the hood. 3.2.2. BOIL OUT PROCEDURE The fryer should be boiled out AT LEAST once per week to remove food debris and shortening/oil build up. Ideally this can be done when the shortening is being changed, so that the fry tank will already be empty. WARNING Wear protective gloves and clothing/equipment when cleaning and draining the appliance and when disposing of water. The water is extremely hot and can cause severe injuries. 1. Heat shortening until it is liquid. Locate a suitable container, (capable of holding hot shortening without melting), to drain the shortening into. The container should be capable of holding all of the shortening in the tank without spilling. 2. Press the controller’s ON/OFF, , key to turn the controller off. 3. Remove the filter pan and thread the drain outlet nipple into the drain valve. Place the container under the drain outlet. 4. Open the drain valve slowly by rotating the drain valve handle counterclockwise, and drain the shortening into the container. 5. Remove the tank screen. Use hot oil to flush out any remaining sediment in the bottom of the fry tank. 6. While the fryer parts are still warm, [135°F, (57°F), or less], wipe off the tank screen and the inside of the tank. 7. Close the drain valve by rotating the drain valve handle 90° clockwise (handle to the left) and fill tank with water to one inch, (2.5 cm), above the oil level line (first break in the tank back). 8. Press the controller’s ON/OFF, , key to turn the controller On. Press the “BOIL MODE” key on the controller. Note: The fryer must be below 225°F, (107°C), to enter the boil mode. WARNING DO NOT leave the appliance unattended during cleaning. The fry tank must be monitored so that it does not boil over or that the water does not boil off below the elements. 9. Add the amount of boil-out compound indicated on package label. 10. Let the vat boil for at least one hour or until the shortening deposits are softened. 11. Press the controller’s ON/OFF, , key to turn the controller off. 12. Use a scrub brush to scrub the top half of the fry tank and elements to remove any residue. 13. Place a container suitable for holding boiling water below the drain outlet and drain the water down to the elements. 14. Scrub the rest of the inside of the fryer and elements with a nylon scouring pad. 15. Drain the remaining water. 16. With a nylon scouring pad, scrub any remaining carbon deposits. Note: Do not use steel wool, a wire brush or any type of abrasive cleaner to scrub elements and sensing bulbs. 17. With the drain valve open, thoroughly rinse the tank. 18. Wipe the tank dry with a clean cloth. Replace the tank screen. L20-343 Rev. X0 DRAFT (11/09) 17 PREVENTATIVE MAINTENANCE 19. Close the drain valve (handle points left). 20. Refill the tank with shortening. (See Section 2.1 – Filling the Fry Tank). 21. Remove the drain outlet nipple. The fryer is ready to operate. 3.3. MONTHLY PREVENTATIVE MAINTENANCE 3.3.1. TEMPERATURE CHECK 1. Use a high-grade pyrometer or digital thermometer suitable for temperatures up to 380°F. Place the thermometer in the oil above the tip of the fryer’s temperature probe within 1”. Be sure not to touch the element since this will measure incorrect temperatures. 2. Check that the controller’s actual temperature reading and thermometer are within +/- 5°F (3°C) If the readings are not within specification, repeat the measurement before contacting an qualified service company for further assistance. 18 L20-343 Rev. X0 DRAFT (11/09) MODEL DD-E24RUFM PREVENTATIVE MAINTENANCE 3.4. ANNUAL/PERIODIC PREVENTATIVE MAINTENANCE AND INSPECTION This section should ONLY be performed by a qualified service technician as part of a regular kitchen maintenance program. This inspection should take place a minimum of once a year by an Authorized Service Technician recommended by Pitco. It may be necessary perform this inspection more then once a year. WARNING The power supply must be disconnected before cleaning and servicing this appliance! 3.4.1. SAFETY EVALUATION 9 Check power cord and plug. 9 Check all exposed wiring connections, switches, and indicator lights. 9 Check legs, casters, and wheels, (as applicable), plate welds and ensure all nuts and bolts are secured. 9 Check condition of and verify fryer retention/lanyard system is in place. 3.4.2. MECHANICAL INSPECTION 9 Check fry tank for shortening leaks and excessive oil build up 9 Check for oil migration (Clean as required) 9 Check ventilation hood drain cup, ensure it is empty. 9 Check ventilation hood baffles/filters to ensure they are clean. 9 Check drain/filtration system for leaks 9 Check for missing fryer parts. 9 Check for missing fasteners. 3.4.3. TEMPERATURE CONTROL SYSTEM 9 Check electrical connections and harnesses 9 Check temperature probes and limits for carbon build up and plating. Clean as required 9 Check proper mounting of probes and sensors and all fasteners are secure. 9 Check DVI Drain Valve Interlock turns controller off when drain is opened. 9 Check Controller features to ensure they are functioning. 9 Check Temperature Calibration 3.4.4. FILTER SYSTEM 9 Check electrical connections and harnesses. 9 Check IEC power cords are fully engaged and secure. 9 Check for any air or shortening leaks and for excessive oil build-up. 9 Check operation of drain valve and DVI drain valve interlock. 9 Check operation of return oil valve. 9 Check operation of flush hose and filter suction tube quick disconnects, clean and lubricate as needed. 9 Check all hardware in filter pan. 9 Check filter operation by filtering the fryers. 9 Check pump motor amp draw compare to nameplate amperage. 9 Check pump and motor; clean any excess oil from pump assembly. 9 Check all filter hoses for leaks and integrity. Look for scale build up and inspect for signs of repeated dry firing. 9 Verify element wires are in good working condition. Look for damage to wires or frayed insulation. Check that the insulation is dry. 9 Verify that bulkhead connections/nut is tight and leak free. Look for grease build up and oily surfaces. 9 Verify amp-draw is within range as compared to the information on the data plate. 3.4.6. CONTROL BOX & ELECTRICAL COMPONENTS 9 Verify that heating contactors are in good condition. Check for worn or pitted contacts. Verify that wires are tight and in good condition. 9 Verify that all components (transformer, terminal block, relays, drain switches, etc…) are in good condition. Verify that wires are tight and in good condition. 9 Verify enclosures are free of leaks. Check for water stains and wet surfaces. 9 Verify that the covers and panels are intact and provide a safe condition. Check for loose parts. 9 Verify power cord is in good condition. Check for frayed or exposed wires. Verify that the insulation is in good condition and the connection/attachment to the appliance is tight. 3.5. VENTILATION HOOD Proper ventilation hood operation is very important for the correct operation of this appliance and the safety of personnel. The ventilation hood should be inspected at the time of installation of this appliance to insure that it will operate properly in conjunction with the appliance. A regular schedule of examination, in accordance with ANSI/NFPA 96 latest edition and/or local codes must be followed. 20 L20-343 Rev. X0 DRAFT (11/09) TROUBLESHOOTING MODEL DD-E24RUFM 4. TROUBLESHOOTING 4.1. POWER FAILURE If electric power is removed for any reason, the fryer will shut down. To restart the fryer, follow the appliance start up procedure in section 2.2. CAUTION DO NOT attempt to operate this appliance during a power outage. 4.2. HIGH TEMPERATURE LIMIT This fryer is equipped with a high temperature limit switch. The high temperature limit switch will stop the fryer from functioning if the internal fry tank reaches an unsafe temperature. In the event that the high temperature limit has tripped, please refer to the following procedure to reset the switch: 1. Turn the fryer off. 2. Allow the fryer ample time to cool to room temperature. 3. Add oil/shortening to the fry tank as needed. 4. Press the high temperature reset button if equipped. 5. The high limit switch is now reset and the fryer is ready for start up. High Temperature Reset Button WARNING DO NOT add oil/shortening to the tank until it has been given ample time to cool down. Failure to do so may result in damage to the appliance and/or injury to the operator. 4.3. DRAIN VALVE INTERLOCK The fryer is equipped with a drain valve interlock circuit. When the tank drain valve is opened, the controller will turn off, preventing further heating of the elements. Refer to the following procedure to resume operation after the drain valve interlock is tripped. 1. The fryer’s controller should be OFF. 2.
