IMPORTANT The unit must be level before use. Before using the unit, adjust the legs of the unit as needed and use a level (if available) to ensure the unit is level. If a level is not available, pour a small amount of water directly onto the center of the cool grill surface. If the unit is level, the water should pool in the middle and not drain toward a certain section of the unit. Make adjustments as required. Turn legs clockwise to shorten or counter-clockwise to lengthen. See image (Side view of unit).

This manual provides the safety, installation, and operating procedures. We recommend that all information contained in this manual be read prior to installing and operating the unit.
If you experience any problems with the installation or operation of your unit, contact your local A.J. Antunes Authorized Service Agency. They can be found in the service agency directory packaged with the equipment.
This unit is manufactured from the finest materials available, assembled to Roundup’s strict quality standards, and tested at the factory to ensure dependable trouble-free operation.

MANUAL EGG COOKER/STEAMER IMPORTANT SAFETY INFORMATION In addition to the warnings and cautions in this manual, use the following guidelines for safe operation of the unit.
The following warnings and cautions appear throughout this manual and should be carefully observed.
• Read all instructions before using equipment.
• Install or locate the equipment only for its intended use as described in this manual.
• Turn the power off, unplug the power cord, and allow the unit to cool down before performing any service or maintenance.
• Do NOT use corrosive chemicals in this equipment.
• Do NOT operate this equipment if it has a damaged cord or plug; if it is not working properly; or if it has been damaged or dropped.
• This equipment should be serviced by qualified personnel only. Contact the nearest Roundup Authorized Service Agency for adjustment or repair.
• The procedures in this chapter may include the use of chemical products. These chemical products will be highlighted with bold face letters followed by the abbreviated HCS (Hazard Communication Standard). • Chlorides or phosphates in cleaning agents (e.g. bleach, sanitizers, degreasers, or detergents) could cause permanent damage to stainless steel equipment. The damage is usually in the form of discoloration, dulling of metal surface finish, pits, voids, holes, or cracks. This damage is permanent and not covered by warranty.

The following tips are recommended for maintenance of your stainless steel equipment,

- Always use soft, damp cloth for cleaning, rinse with clear water and wipe dry. When required, always rub in direction of metal polish lines. - Finger marks and smears should be rubbed off using soap and water.

- Hard water spots should be removed using a vinegar solution.

MANUAL EGG COOKER/STEAMER INSTALLATION Unpacking
Timer Interface
1. Remove unit and all packing materials from shipping carton.
Refer to Figure 1 to become familiar with the Timer interface. The timer has two timing channels, one for the front of the MES-1200 and one for the back.
NOTE: If any parts are missing or damaged, contact Antunes Technical Service IMMEDIATELY at 1-877-392-7854 (Toll free in the U.S. and Canada) or 630-784-1000.
Each timing channel has the following buttons set to the default times shown: • Round Front - 2 minutes 30 seconds • Round Rear - 2 minutes 40 seconds • Folded Front and Rear - 1 minute 45 seconds • Time 3 Front - 2 minutes 30 seconds • Time 3 Rear - 2 minutes 40 seconds • Time 4 Front and Rear - 2 minutes
2. Remove information packet. 3. Remove all packing materials and protective coverings from the unit. 4. Wipe all surfaces of the unit with a hot damp cloth. NOTE: Do NOT use a dripping wet cloth. Wring it out before use. 5. Clean the Egg Rings, Egg Racks, Top Covers, and Scrap Pans in hot, soapy water. Rinse in clear water and allow to air dry. 6. Reassemble all parts to unit.
Leveling the Unit The unit must be placed on a level surface. The unit comes with 4 individually adjustable legs to assist in leveling. Be sure to place the unit on a sturdy flat surface and adjust the legs as needed to ensure the unit is level. Turn legs clockwise to shorten or counterclockwise to lengthen.

To verify if the unit is level, use a level (if available). If a level is not available, open the Top Cover and Egg Rack and pour a small amount of water directly onto the cool grill surface. If the unit is level, the water should pool in the middle and not drain toward a certain section of the unit. Make adjustments as required.

Egg Cooking Procedure using the Timer
1. Make sure the Timer is seated properly on the Timer Bracket and is flush against the front of the unit.
NOTE: When cooking folded eggs, remove the Egg Rack and Rings and set aside. Folded Eggs should NOT be cooked using the Egg Rings.
2. Turn the power on.
1. Open the Top Covers and Egg Racks.
3. Check to see that all Egg Rings are seated flat on the Grill Surface.
2. Spray clarified butter on the Grill Surface. Use 1 Spray only. Place the Egg Racks into position.
4. Ensure that the Egg Racks and Top Covers are in the down position during warm-up and when not loading or removing eggs.
3. Wearing blue gloves, crack the round eggs into the Egg Rings front to back and left to right. See Figure 3.
5. Slide the Scrap Pans into place on both sides of the unit.
4. Break the egg yolks with a Yolk Breaker.
6. The light sensor on the back of the timer senses the activity of the Ready light on the MES-1200: • • •
5. Close the Top Covers. 6. Fill the troughs with water using stainless steel measuring cup.
When the unit is heating up, the Ready light flashes which causes HEAT to appear on the timer display. When the unit is up to temperature, the Ready light stays on which causes USE to appear on the timer display. When the unit is turned off, the Ready light is off which causes OFF to appear on the timer display.
7. On the Timer, press the Round or Folded button for the section of the cooker being used (see Figure 1): • • • • • •
To ensure proper cooking, place eggs into rings in numerical order from 1 - 6 for the front and rear racks.

8. When cooking is complete, the display flashes DONE and the unit beeps. Press any button on the same timer row to turn off the beeper.

9. Remove eggs following the FIFO method - First In First Out (Figure 3).
FIFO (First in, first out) The first egg in should always be the first egg out
10. Use the yellow handle blue bristle brush to remove egg residue left in the egg rings. Scrape any excess product into the scrap trays with a plastic scraper. 11. Close the Top Covers. Keep the Top Covers closed when the unit is not in use.

NOTE: Wipe the grill surface 4 times per hour with a clean, sanitizer soaked towel. Refer to the PM Card for your unit for cleaning instructions.

NOTE: To cancel a cooking cycle, press and hold any button in the same timer channel row for approximately 5 seconds. 7
MANUAL EGG COOKER/STEAMER PROGRAMMING Programming Timers Pressing the Program Button causes ADJ to appear on the display. Press the Program button again to change the Beep setting of the timer. Use the Up and Down arrow buttons to select from the three Beep settings: 1. Beep 1 - Standard 2. Beep 2 - Loud 3. Beep 3 - Intermittent

Display Bracket
Changes are saved after 5 seconds of inactivity. You can also press the Program button to save changes. This Switches to the Battery Level view, showing the percentage of battery power remaining.
The Timer comes with a Display Bracket to allow you to place labels for the Timer 3 and Timer 4 buttons. To access the Display Bracket: 1. Remove the flat head screw from the right side of the Timer (facing the timer) and slide the bracket out. 2. Affix labels to the Display Bracket as desired. 3. Reinsert the Display Bracket into the Timer and secure with the screw.
To program a button with a specific time: 1. Press the Program button. ADJ appears on the display. 2. Press the desired button to change (Round, Folded, Time 3 or Time 4). 3. Use the Up and Down arrow buttons to scroll to the desired time. Pressing and holding an arrow button will cause it to move faster in that direction. 4. Changes are saved after 5 seconds of inactivity.
MES-1200 Setpoint Temperature The MES-1200 is pre-programmed to operate at a setpoint temperature of 285° F. If the temperature needs to be reset to the preset temperature:
Batteries
The Timer uses 4 AA Alkaline Batteries. To access the battery compartment: 1. Remove the timer from the bracket. 2. Use a Phillips head screw driver to remove the 6 Phillips head screws on the rear of the timer. 3. Remove the back housing from the timer. The batteries are secured inside the timer with Velcro. Carefully remove and replace the batteries and secure inside the Timer. 4. Reattach the back panel and secure with the 6 screws.

A. If installed, remove the Timer from the front of the MES-1200 unit. B. On the MES-1200, plug in the power cord and turn the unit on. C. Press and hold the 1 button, 2 button, and the START/STOP button together for approximately 5 seconds. D. The 1 and 2 button LEDs will blink once a second and continue to blink for as long as the MES-1200 is in temperature program mode. E. Press the 1 or 2 button until the Ready LED is ON and the Bacon and Cooking LEDs are OFF. This changes the setpoint to 285° F.
Depending on the BEEP setting, the batteries should last approximately: • 2 + years using BEEP setting 1 • 2 years using BEEP Setting 2 • Less than 2 years using BEEP setting 3 The timer displays LO BATT when the batteries are low on power and the batteries require changing. If the timer displays are blank, check the LED sensor on the 1 back of the timer for obstructions. If the LED sensor is 2 not obstructed and the displays are blank, the batteries have lost all power and must be replaced.POWER

MANUAL EGG COOKER/STEAMER MAINTENANCE Checking Grill Surface Temperature
WARNING Turn the power off, unplug the power cord, and allow the unit to cool down before performing any service or maintenance.
NOTE: A pyrometer is required for this procedure. WARNING This procedure exposes you to hot surfaces. Use extreme care when performing procedure to avoid personal injury. 1. Remove the Top Covers and the Egg Racks.
Daily Cleaning 1. Press the Power button to turn the unit off. The displays flash HOT and OFF until grill surfaces cool.
2. Turn the unit on and allow 30 minutes for the unit to warm up.
NOTE: If the unit is hot, use Heat-Resistant Gloves.
3. Using a pyrometer, measure the temperature at the middle of the Grill Surface. The temperature should be 270° F– 300° F (133° C–149° C). If temperature is within range, proceed to Step 4. If temperature is above or below range, call A.J. Antunes & Co. Technical Service at 630-784-1000 or toll free in the U.S. and Canada at 877-3927854.
2. Remove the front and rear Top Covers, Egg Racks & Rings, and Scrap Pans from the unit. Take them to the three compartment sink. 3. Wash, rinse, and sanitize the Top Covers, Egg Racks & Rings, and Scrap Pans. Allow to air dry. Reinstall parts when complete. 4. Spray a clean, sanitizer soaked towel with McD All-Purpose Super Concentrate (APSC). Wipe the entire grill surface until it is clean. Use a separate, clean sanitizer soaked towel to rinse the grill surfaces to remove all traces of APSC.
4. Turn the unit off. 5. Reinstall the Egg Racks and Top Covers.
NOTE: If a scraper is needed during cleaning, use a plastic scraper. This is the preferred method. If you are using a metal scraper, wrap the scraper in a clean grill cloth first. NOTE: Do NOT Pour water onto the grill surface when it is hot. This can cause damage to the grill. 5. Wipe down the exterior of the unit with a separate clean, sanitizer-soaked towel. 6. Plug in the power cord. Turn the power switch on. Return the unit to use.

MANUAL EGG COOKER/STEAMER TROUBLESHOOTING WARNING To avoid possible personal injury and/or damage to the unit, inspection, test, and repair of electrical equipment should be performed by qualified service personnel. The unit should be unplugged when servicing.
Problem Unit fails to operate and control panel lights fail to signal on.

Incorrect amount of water added to trough in cover.
Fill trough in cover with water before starting time cycle.
Grill temperature too low or high.
Perform the steps in the section titled “Checking Grill Surface Temperature” in this manual. The temperature should be 250°F– 300°F (121°C–149°C). If not, contact A.J. Antunes Technical Support for assistance.
Loose connections. Unit/table is not level.
Contact your Authorized Service Agency. Level the table and unit as necessary.
Eggs sticking to Grill Surface.

LIMITED WARRANTY The Antunes Food Service Equipment Division of A.J. Antunes & Co. provides the following limited warranty to the original purchaser of all McDonald’s Equipment. All components are warranted against defects in the material and workmanship for a period of two (2) years from date of original installation, not to exceed 30 months from date of shipment from our factory. If any part becomes inoperable during the period of this warranty, Antunes Food Service will pay labor costs to an Authorized Service Agent to replace the part plus travel expenses. WARRANTY EXCLUSIONS • The cost of installation. • Equipment that has been damaged due to shipment. Purchaser should make damage claim directly upon carrier. • Alteration, misuse, abuse. • Improper storage or handling. • Improper maintenance. • Failure to follow proper installation instructions, including electrical connection.
• Improper or unauthorized repairs. • Scheduled Maintenance procedures as outlined in your MRC Card. • Consumables such as Grill Covers (Release Sheets), gaskets, Conveyor Belt Wraps, O-rings, and light bulbs. • Freight, foreign, excise, municipal, or other sales or use taxes. • Consequential damages such as loss of profit, loss of time, the cost of repairing or replacing other property which is damaged, or any other incidental damage of any kind.
Antunes Food Service reserves the right to make changes in design or add improvements on any products. The right is always reserved to modify Equipment because of factors beyond our control and government regulation. Changes to Equipment do not constitute a warranty charge. This warranty is exclusive and is in lieu of all other warranties, expressed or implied, including any implied warranty of merchantability or fitness for a particular purpose, each of which is expressly disclaimed. The remedies described above are exclusive, and in no event shall A.J. Antunes & Co. or any of its Divisions be liable for special consequential or incidental damages for the breach or delay in the performance of this warranty.
