3. Manufacturer's warranty (Version: 07.2009) This warranty does not restrict the buyer's warranty rights according to the sales agreement with the seller and the statutory rights. If you wish to use the warranty on this product, please contact your point of sale. The warranty we provide for this brewing device is subject to the following conditions: 1. We offer a warranty according to the following provisions (2 to 7) through the free repair of malfunctions in the brewing device that demonstrably result from a defect in the material or manufacturing. The brewing device must be returned to the manufacturer in this respect. 2. The warranty period is 24 months. In case of commercial, professional or equivalent use, the warranty is valid for 12 months. The warranty period starts on the date of sale to the first user. The date on the original proof of purchase is decisive. 3. The following are excluded from the warranty: - Parts subject to wear and tear related to use or other natural wear and tear - Malfunctions in the brewing device caused by non-compliance with the user instructions, improper use, abnormal environmental conditions, unsuitable conditions of use or inappropriate maintenance - Malfunctions in the brewing device caused by the use of accessories and spare parts that were not approved by the manufacturer - Brewing devices subjected to alterations or additions - Minimal deviations from the desired quality that do not affect the value and use of the brewing device. 4. Any problems with the device we recognise as covered by the warranty are solved as we see fit by the free repair of the faulty brewing device or by the replacement of the malfunctioning device by a well functioning brewing device (possibly a subsequent model). Replaced brewing devices or parts become our property. 5. The warranty claim must be made appropriately within the warranty term. The relevant brewing device must be returned together with the original proof of purchase showing the date of purchase to the abovementioned address or another address provided at the time. Partially or completely disassembled brewing devices cannot be handled or shipped under warranty. The shipping costs and risks are borne by the buyer. 6. Claims not included in the warranty terms and conditions for solving problems with the brewing device are not covered. 7. The brewing device's warranty is not extended or renewed when used. This warranty is valid for brewing devices purchased in the European Union, Norway or Swizerland. This warranty is subject to German substantive law excluding the United Nations Convention on Contracts for the International Sale of Goods (CISG). 5. Safety guidelines and warnings Read these user instructions carefully before using the device to protect yourself and others and avoid any damage to the device. Please specifically ensure that the device cannot be accessed by children. When running the drainage tap boiling water may escape in many operational conditions. The surface of the kettle, the hood, the safety lid and the brewing kit become hot during use (risk of burns).
Never open the hood without first releasing the pressure and then waiting 2 minutes. The kettle is under pressure (risk of burns). Never open the safety lid during boiling (risk of burns). Carefully store the user instructions and ensure they are passed on to any new owners.

5.1 Intended use This home brewery is to be used only for brewing beer according to the instructions. The manufacturer is not responsible for any damage caused through improper use or incorrect operation. 5.2 Technical safety

Check the device for any external, visible damage before installing it. Never start using a damaged device. Always ensure that you check the connection information (safety, voltage and frequency) on the type label and compare these details to those of the mains before connecting the device. If in any doubt in this regard, please consult a professional. The electrical safety of this device can only be guaranteed if it is connected to a protector circuit system installed according to the regulations. It is crucial that these primordial safety conditions are applied and that the home installation is inspected by a professional if in any doubt. The manufacturer cannot be held liable for any damage caused by a malfunctioning or interrupted protection circuit. When using an extension cord, you must always ensure that the cable is suitable for the connection circuit and voltage indicated on the type label (fire risk in case of non-compliance). The device meets the mandatory safety regulations. Improper repairs can cause unforeseeable hazards for the user. The manufacturer does not accept any liability for such hazards. Repairs can only be performed by manufacturer approved professionals. Use If you install the device in a space that is exposed to frost, you must ensure that no water can freeze inside the device. If you fail to do so, the installed pipes and kettles may be damaged. Place the device on a waterproof surface. There may be some condensation. This is normal. Always clean the device according to the manual's instructions when you finish brewing. Ensure that the device does not contain any liquid anymore when you are not using the device. This ensures that you can always keep the device in a pristine, hygienic condition. Always use very fine ingredients (approx. 1 mm) or hop bags (for sale at Brouwland).
5.4 Use of the accessories You can only add on or build in manufacturer approved accessories. All warranty claims, indemnification and/or product warranties are lost if you add on or build in any other parts.

6.2 Assembly Place the machine on a water-resistant surface. Place the copper hood on the kettle (see general overview image), close the clamping ring, connect the machine to the safety lid with the hose (see general overview image) and put the safety lid on the hood.
The clamping ring can easily be closed if the seal is lubricated in oil. The tension of the shutter can be adjusted when the set screw is in the open position. Do not check this in a closed position. Slide the air hose over the outlet on the back of the machine and through the outlet of the protective hood. Place the safety lid on the hood.
Only in case of delivery with unscrewed drainage tap: screw the drainage tap firmly until you can no longer continue by hand and then turn back the tap until it is in the correct position. The thread has a screw seal. Allow this seal to harden for approx. 1 hour before using the machine.

7. Maintenance Clean the machine's exterior with a damp cloth or sponge. Never submerge the machine in water. Copper parts Copper is a 'living', soft metal. The surface changes when in contact with the skin or other substances. You can again obtain the clear shine by using a special copper polish (available from your dealer) that can also be used to remove small scratches. Never use an abrasive or scratching product or sponge. Seal between hood and kettle There is a silicone seal between the hood and the kettle. Always check that this seal is in good condition. If the seal is not in perfect condition, the kettle may not be sealed sufficiently. If you notice any tears or if the seal no longer fits the kettle closely, you must replace it. New seals are available from your dealer. When you have removed the seal, you can replace it as follows. First place the seal with its ribbed side facing up against the adhesive part and then pull it over the kettle's edge. Allow the rubber to slide through your thumbs, index fingers and middle fingers and ensure that you keep the rubber stretched vertically. Cleaning the machine (before the first use and after every brewing session) What you need: Water A 10-litre bucket Brushes for washing An acid cleaner such as Chemipro Acid Chemipro Oxi. Duration: approx. 60 minutes Turn the machine on with the on/off switch. The 'Start cleaning' message appears on the display. Press the green button

Put the safety lid on the side and remove the hood by opening the clamping ring. Pour 12 litres of water and the recommended dose of Chemipro Acid (80 ml) in the kettle and confirm with the green button. . The machine must contain at least 12 litres of water for the pump to work. Press the green button cleaning session.

The machine performs the cleaning program. The rinsing liquid circulates in the machine at a temperature of approx. 70°C for about 30 minutes. The temperature and remaining time are shown on the display. You will hear a beep when the cleaning has been completed. Note! Hot, irritating rinsing liquid. Take into account the Chemipro Acid warning guidelines. (General: rinse immediately with plenty of water if the product comes into contact with the skin. Rinse with plenty of water and consult a physician if the product comes into contact with the eyes.) Allow the rinsing liquid to drain through the drainage tap and confirm by pressing the green button. (You can also confirm before you drain the liquid in order to turn the alarm signal off.)
Pour 12 litres of water and the recommended dose of Chemipro Oxi (48 g) into the kettle and confirm with the green button. The machine must contain at least 12 litres of water for the pump to work. Press the green button cleaning session.

Pour 15 litres of clean water into the kettle and confirm with the green button. The machine is rinsed for 1 minute. You will hear a beep when the rinsing has completed. Allow the rinsing liquid to drain through the drainage tap and confirm by pressing the green button . (You can also confirm before you drain the liquid in order to turn the alarm signal off.)
Repeat this final step and rinse again with 15 litres of clean water. Dry the inside of the kettle with a clean cloth.
8. Manual 8.1 General Never start a program or program stage without having filled the kettles with at least 12 litres of water. Otherwise the heating circuit will run dry and overheat. After you switched on the machine with the on/off switch, the start menu appears on the display. When you press the Previous and Next keys in the start menu, the following items appear: • • • •

by accident, you can return to the program in question by pressing the green

Pressing the Next or Previous button will take you one step further or one step back in the program. Press the red button to confirm the cancellation of this step in the process. If you pressed the Next or Previous button by accident, you can return to the program in question by pressing the green button . ® After 1 to 2 minutes the BrauEule will automatically return to the program. You can switch the machine off at any time with the on/off switch. The program will remember the current status. When you turn the machine back on, the display will show the word Resume. Press the green button
to
start the program at the stage when you turned it off. Press the red button to return to the start menu. After 1 ® to 2 minutes the BrauEule will automatically return to the program. (This function is also active in case of a power outage to ensure that brewing can continue at all times.)
Temperature display: When you press the red button for 2 seconds, temperatures T1 (at the ® temperature sensor) and T2 (in the BrauEule ) are shown.
8.2 Interruption ®
The BrauEule kettle has a scale for the filling status. The bottom line indicates 10 litres, the middle line 15 litres and the top line 20 litres. ®
Note! The BrauEule kettle may be under overpressure when making the mash (less than 0.3 bar). Never open the clamping ring when the machine is in operation. To open the clamping ring, do the following: • Turn the machine off with the on/off switch. • Put the gloves on. • Pull the hose from the steam connection tube and wait until no more steam is released. • Remove the safety lid. You can now open the clamping ring. To continue brewing, close the clamping ring, put the safety lid back in its place and slide the hose back onto the steam connection tube. Turn the machine on with the on/off switch and press the green button
.
The machine will resume the brewing process at the stage you interrupted it by turning off the machine.

8.3 Settings In the menu section 'Settings' you can see the machine's running time and change the menu language.
8.3.1 Running time Press the green button at "Start settings" . The display shows "Setup Uptime OK?". Press the button and you will see: 'Running time' in days (d) and hours (h). You can return to the setup menu by pressing the green button again. You can return to the start menu by pressing the red button twice.
8.3.2 Settings In the menu section 'settings' you can see the machine's running time and set the language.
9. Brewing using the brew pilot What you need:

Duration: approx. 6 hours 9.1 Preparation Turn the machine on with the on/off switch. Rinse the machine. Pour 12 litres of water into the kettle and start the rinsing cycle. Do not use any rinsing agent for this. Cancel the rinsing cycle after a few minutes by pressing the red button repeatedly. Drain the water and pour it out. Press the Next or Previous button to go to the Brew pilot in the start menu and confirm your choice by pressing the green button

• Water in the kettle? Fill the kettle with 15 litres of water. Tip: using warm water reduces heating time. Check whether the seal has been placed evenly over the kettle's edge. Close the kettle with the lid. Ensure that the lid is in the middle of the seal ring and that the steam tube is pointing in the direction of the lauter tun. Close the clamping ring. Place the safety lid on the hood. • Filtertank OK? Fill the lauter tun with malt (max. 1 kg of malt per 4 litres of the used lauter tun's content) and connect the silicon tube of the lauter tun to the steam connection tube of the copper hood.
Under no circumstances should the yeast be placed on the machine. The machine gets hot during use, which will make the use lose its effect. Place the lauter tun on or next to the machine.
Water in the lauter tun?
Pour water into the lauter tun. The amount of water depends on the recipe. Fill the lauter tun no higher than 3 cm from the edge. Stir using the boiling spoon until no air bubbles come up anymore and the malt has mixed well with the water. • Temperature sensor in the lauter tun? Close the lauter tun with the lid and place the temperature sensor through the gap into the lauter tun lid.
When you have completed all steps, you can start mashing by pressing the green button.

9.2 Mashing (making the mash) ®
The BrauEule will now start making the mash. This is reflected in the fast rising air bubbles in the lauter tun. If this is not the case, you need to check that the hood is well sealed and there is no kink in the hose to the lauter tun. Making the mash occurs in 3 stages with a 5-minute rest at 55°C, a 30-minute rest at 64°C and a 30-minute rest at 73°C. This is followed by a 10-minute rest at 75°C (filtration rest). The water is brought to the boil in the kettle for the mashing. The steam resulting from this is mixed with air and led to the lauter tun. This ensures that the mash is very carefully heated and mixed. The temperature is measured by a sensor and displayed on the machine. This measurement is useful for the electronics to control the steam supply. During the mashing both the temperature used for heating and the actual temperature in the lauter tun is measured. During the rest, the time remaining until the next stage and the temperature in the lauter tun is displayed. Once the mash has been made, an alarm signal reminds you of the next phase. 9.3 Filtration Extracting the temperature sensor from the mash? Now pull the sensor from the mash and the lauter tun hose from the tube on the hood. Place the sensor into the gap in the lauter tun lid. Remove the safety lid and loosen the clamping ring to open the hood. Use gloves to ensure you do not get burnt. Confirm your choice with the green button

The display will now show the message 'Cold water to tank <78° T= XX' (XX=actual temperature inside tank). Pour cold water into the tank until the temperature falls below 78°C (approx. 1 to 3 litres of cold water). Water in the bucket, hose in the kettle? ®
Now drain the water of 78°C from the BrauEule into the 10-litre bucket and lift it to fill it. Use a cloth to remove any possible limescale in the middle of the kettle. ® Now hang the lauter tun hose in the BrauEule kettle to start filtering. For this the lauter tun must be in a higher ® position than the BrauEule kettle. If this is not possible, you can solve this by having the wort flow towards a bucket under the lauter tun. Confirm your choice with the green button
.
Filtration and filling ready? Carefully pour the first wort sediment back into the lauter tun (approx. 3 litres). As soon as enough wort has drained so that the solid trub in the lauter tun becomes visible, carefully pour the warm water from the bucket into the lauter tun. Repeat twice. Ensure that the trub drifts up as little as possible. This process is called straining or filtering the wort. By filtering the wort, the wort still present in the trub is washed away. The amount of water depends on the recipe. When only drips of wort are coming from the lauter tun, filtration is complete. Confirm this with the green button

9.4 Boiling the wort The display will show the following messages: •Prepare boiling? Confirm with the green button. ® •Filling wort Add water Pour the wort into the BrauEule kettle . You may have to add some water to have the desired amount. Confirm this with the green button. •Add hop Now add hop according to your personal taste. If you want an intense, bitter taste, use more hop. If you want your beer to be less bitter, use less hop. Confirm with the green button. • Close hood? Close the hood with the clamping ring, put the safety lid in place, close the lauter tun and confirm with the green button. Attention: risk of burns. Never open the safety lid during boiling or the kettle may boil over severely. •Start boiling wort? After you press the green button, the machine will start boiling the wort. In the beginning you will hear beating sounds. This beating is caused by the hop pellets entering the pump. The sounds will stop once the pellets have dissolved. This is normal and will not cause any damage to the machine. Boiling the wort is an important step in making beer, because it gives the beer its typical bitter taste. At the same ® time fine protein flakes are formed that are removed before fermentation to avoid an off flavour. In the BrauEule this is done by the modern operation of the whirlpool that becomes active after the wort has been boiled. The ® BrauEule boils the wort and performs the whirlpool function automatically, so no user intervention is required. The complete operation takes about 95 minutes. Then the actual brewing process is complete. Make absolutely certain that you do the following when you add hop during the boiling: • • • •
Turn the machine off with the on/off switch. Put the gloves on. Pull the hose from the steam connection tube and wait until no more steam is released. Remove the safety lid and add hop using a funnel.
9.5 Whirlpool Fine protein flakes are created during the wort boiling. These are removed before fermentation to avoid an off ® flavour. The BrauEule does this with its modern whirlpool procedures performed after wort boiling. ®
The BrauEule whirlpool function is performed fully automatically after the wort has been boiled. The user does not have to be present.

The first whirlpool session takes 5 minutes.
The second session immediately after takes 4 minutes.
Then the actual infusion is complete.
Together, the wort boiling and whirlpool take about 130 minutes. Important: - Open the lid only if the temperature is below 60°C or if you have 10 litres of wort to drain. - Do not move the BrauEule . Both actions affect the whirlpool effect. ®
9.6
Wort chilling
The actual brewing process is now complete. The stop any bacteria growing in the wort, it must now be cooled down to 20°C as soon as possible. Your best option for this is the plate model wort chiller (item 057.025.8) from the Brouwland catalogue. (Remark: this is not included.) The plate chiller is best positioned VERTICALLY to use the full surface area without any air bubbles. The wort chiller has 4 connection points: water entry/exit and wort entry/exit. Make certain that the wort and the water always flow in the opposite direction: if the connection of 'cooling water in' is on the bottom left, 'cooling water out' is on the top left. Then connect 'wort in' (hot wort) on the top right and 'wort out' on the bottom right (see picture). By increasing or decreasing the supply speed of the cooling water, you will be able to control the exit temperature of the wort. However, ensure a slow flow of the wort to ensure optimal cooling. ®
Always clean and disinfect (with Chemipro OXI or boiling water) before using the chiller and rinse well with hot water after use. Allow the chiller to drain as much as possible after use. Store it in a dry location and do not seal. This will allow the chiller to dry further and will avoid any mould from forming. When the temperature of the wort is less than 20°C, it is transferred to the fermentation tank. (The temperature is shown. Please note the temperature at which you remove the wort.) Open the hood, place the fermentation tank under the drainage tap and open it halfway.

Manual operation
Select the program item Manual operation in the start menu and confirm your choice with the green button. 10.1 Mashing (making the mash) In order to make the mash in a tank with a steam connection or in the lauter tun, select the program item Mashing and confirm with the green button. You can enter the temperatures and times for the rests. When you press the Next button, the temperature increases and when you press the Previous button, the temperature decreases (the temperature must not fall below the actual temperature on the sensor). Once you have set the desired temperature, confirm your choice by pressing the green button. The rest time is set in the same way. You can program three rests. If only 1 or 2 rests must occur, set the time to zero for the rests you do not need. Once you have set the values for the three rests, the display will show the message 'Start mashing?'. Before you start mashing, you must perform the following steps: • • • •

Fill the BrauEule kettle with 15 litres of water. Close the hood using the clamping ring. ® Place the lauter tun on or next to the BrauEule and fill the tun with the desired amount of water. Connect the hose to the steam connection tubes of the mashing / lauter tun
Press the green button to start making the mash. You will see that everything is correctly connected when all the air bubbles start rising in the lauter tun. ® The BrauEule now performs the mashing process you programmed. You will hear a beep when the process is complete. Confirm with the green button. 10.2 Filtration Now pull the sensor from the mash and the lauter tun hose from the tube on the hood. Place the sensor into the gap in the lauter tun lid. Remove the safety lid and loosen the clamping ring to open the hood. Use gloves to ensure you do not get burnt. ®
Allow the hot water to drain from the BrauEule into a 10-litre bucket and add approx. 1 litre of cold water per bucket to ensure that the temperature does not exceed 78°C when adding the water. Use a cloth to remove any possible limescale in the middle of the kettle. ®
Now hang the hose of the lauter tun in the BrauEule kettle to start filtering. For this the lauter tun must be ® positioned higher than the BrauEule kettle. If this is not possible, you can solve this by having the wort flow towards a bucket under the lauter tun. 10.3 Boiling wort ®
Pour the wort into the BrauEule kettle. Add the desired amount of water. Now add hop according to your personal taste. If you want an intense, bitter taste, use more hop. If you want your beer to be less bitter, use less hop. Close the hood using the clamping ring. Select the program item Boiling wort from the Manual Operation menu and confirm your choice with the green button. Set the temperature you wish to use for boiling (normally you should enter 100°C, but the actual boiling temperature depends on the real air pressure). Enter the boiling time. Add 30 minutes to the desired boiling time, as the machine's heating time and boiling time are included. Use the brew pilot in the same way as the procedure described under 9.4 Wort boiling.
