Directions: Preheat oven to 350 degrees F. Coat 9x13 baking dish with non-stick cooking spray. Place a large skillet on the stovetop over high heat. When the pan is very hot, add the beef and season with salt, pepper, cumin, mustard powder, and paprika. Add the onion and cook, stirring occasionally, until beef is browned and onions are golden. Place bottom half of buns in prepared pan. Top with beef & sliced cheese. Finish off with the top half of the bun. Bake at 350 for 25 minutes. Watch to make sure the buns don’t burn!

Chicken Enchiladas 1 lb chicken 1 pkg tortillas 1 can black beans 1 can corn 1 can enchilada sauce Cheese Directions: Cook and shred or dice chicken. In a bowl, combine chicken, black beans, and corn. Fill tortillas with chicken mixture. Roll and place in baking pan. Top with enchilada sauce and cheese. Bake at 350 for 15 minutes.
2 lb spareribs 1 bottle BBQ sauce Directions: Place ribs into a crockpot and cover with ½ bottle BBQ sauce. Cook on high for 5-6 hours. Add rest of BBQ sauce in the last 1 hour to 30 minutes. Enjoy!

1 tsp garlic powder ½ Tbsp dried basil ½ Tbsp dried oregano ¼ tsp red pepper flakes freshly cracked pepper to taste
Directions: Add broth to a large pot. Break the fettuccine in half to make stirring easier later, and then add it to the pot. Also add the canned tomatoes (undrained), olive oil, onion (thinly sliced), garlic, basil, oregano, red pepper, and some freshly cracked black pepper. Make sure the ingredients are submerged under the liquid, place a lid on top of the pot, and then turn the heat on to high. Allow the pot to come up to a full, rolling boil over high heat then remove the lid and turn the heat down to medium. Allow the pot to continue to boil over medium heat, without a lid, for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed. Stir the pot every few minutes as it cooks to prevent the pasta from sticking to the bottom, but avoid over stirring which can cause the pasta to become sticky and mushy. The pot must be boiling the entire time.

Directions: In a medium size bowl, combine avocado, tomatoes, and lemon juice. Set aside. In a skillet, brown the cooked chicken with the olive oil and garlic salt over medium heat for 3-4 minutes. Take off of heat and add chicken to each pita. Top the chicken with a large spoonful of the avocado mixture, all within the pita pocket. Can be served cold or broiled in the oven for 3-5 minutes.

2 medium squash, sliced 1 large onion, sliced into rings 1 potato, chopped
1 bell pepper, sliced 1 lb sausage, browned
Optional Marinade: 3 Tbsp olive oil 1 Tbsp balsamic vinegar 2 Tbsp lime juice 1 tsp sugar
1 tsp salt 1/2 tsp pepper 2 Tbsp basil 2 Tbsp minced oregano
Directions: Combine veggies in a large resealable bag. Set aside. In a small bowl, whisk all marinade ingredients until smooth. Pour into bag with veggie/sausage mixture, seal bag, and turn several times to coat veggies. Refrigerate veggies 1-2 hours. Once veggies have marinated, remove from the bag and discard the marinade. Heat a grill to medium-high heat. Place nonstick tin foil on heated grill and evenly spread veggies and sausage on top. Toss and stir veggies and sausage occasionally on grill until veggies are tender and browned, about 10 minutes. Serve veggies and sausage warm from the grill!

Stuffed Ham and Swiss Biscuits
1 lb bacon English muffins
1 can refrigerated biscuits Sliced swiss cheese
10 eggs 1 bag shredded cheese
Directions: In a skillet, fry bacon until crispy. Fry or scramble eggs to your liking. Place bacon, eggs, and cheese on English muffin and serve.
Sliced deli cooked ham
Directions: Heat oven to 350. Separate dough into 8 biscuits. Cut slit on 1 side of 1 biscuit, forming a deep pocket. Place 1 slice of cheese and one slice ham inside biscuit. Press dough over filling, sealing edge of biscuit; place on greased cookie sheet. Repeat with remaining biscuits, cheese, & ham. Bake 15 minutes or until golden brown. Serve immediately
