The contents of this manual are generic and not all the functions described may be available on your product. The manufacturer declines all res ponsibility for possibl e inacc uracies c ontained i n this pamphlet, due to printing or c opy errors. 2.0 COOKING MODES AND AUXILIARY DEVICES PROGRAMMABLE Models (Fig. 3) Convection hot forced air (temperature range between 20 - 270°C) Combination hot forced air and steam (Temperature range between 20 - 270°C) Steam (temperature range between 20 - 100°C)

2.0A Description of cooking cycle or cooking program: Manual cooking cycle or program: Food c an be cooked in a single phas e. During the cooking program you can acti vate or deacti vate the above mentioned devices and automatisms , adj ust cooking chamber temperature, core probe temper ature, humidification and cooking time. Automatic cooking program or cycle: Food c an be cooked with more p hases , and totally automatic ally. During the program it’s possible to temporar y modify the above mentioned devices and automatisms and adjust cooking temperature, ti me and humi dification

2.1 STARTING PROGRAMMABLE Models (Fig. 3) Ensure that water suppl y are turned on and that the electricity s uppl y ups tream is s witched on. The dis play (A) will show following messages: the mess age OVEN TWO with referenc e to the ins talled softwar e version (ex. V-00.05), the mess age OVEN NORMAL and at the end the mess age OFF (from now on we will call this sequenc e on the display (A) “stand-by”). The bac k lighted display (L) will visualize a r ed point, while displays (M) and (N) will be s witched off . Press the button ON/OFF (A1) 3" long; th e graphic display (A) will visualize first the mess age SINGLE PHASE RECIPE and then the message MANUAL along with indication of cooking time s elected in the last manual cooking c ycle.. The white leds (R) and (V) will indicate the las t selec ted co oking mode, dis plays (L) (M) (N) will switch on up to the previ ous s elected c ooking program. To select a c ooking mode press the button "multifunction" (Z). If the white led (R) is switched on, it means that con vection mode is ON. If the white led (V) is switc hed on, it means that steam mode is ON. If both white l eds (R) and (V) ar e s witched on, it means that combination mode is ON . To visualize the selec ted cooking parameters, press the encoder -knob (B). The leds (L1), (M1), (N1), (S) or (H) indicate to which c ooki ng parameters the data shown on the displ ays (L), (M) and (N) refer. 2.3 SETTING AND STARTING OF “CONVECTION” MODE WITH MANUAL COOKING (Fig. 4) This manual program is made up of a single phase, correspondi ng to convecti on hot forced air cooking mode.

To select this c ooking mode press multifunction button (Z) again and again until the white l ed (R) is s witched on clos e to the s ymbol . Press the encoder- knob 2"long , the control panel will visualize:

On LCD displ ay (A) the message M ANUAL and the cooking tim e of the last selected convec tion c ycl e . On bac k lighted display (L) the selected temper ature will appear for about 2”, then the display will show the real cooking c hamber temperature. The value is confirmed when the white led is on (L1). The bac k lighted display (N) shows the coo king time of the previous selected convection cycle. The val ue is c onfir med if the white led (N1) is on. If in the last convection c ooking c ycl e the s kewer probe has been selec ted, the dis pl ay (N) will show the las t sel ected core probe temperatur e. This value is confirmed if the white l ed (S) is on. The bac k lighted display (M) will show no value, because in the convection c ycle the humidification c ontrol c annot be acti vated. If the oven door is open, the displ ay (N) will show the mess age o Pn. If you wish to sel ect a coki ng cycle maintaining the sa me values shown on the displays, you j ust need t o press START/STOP button (C) to start the c ycle.

2.3A Modification of cooking chamber temperature (Fig. 5) The value shown on the display (L) is the one of the c ooki ng chamber temperature and c an be sel ected between 20°C a nd 270°C. Jus t in c ase you selec t low s peed fan, the max. temperature to sel ect will be 220°C.

To modify (L) value proc eed as follows: First chec k convec tion mode has been sel ected, if not sel ec t it using the multifunction button (Z) followi ng the instructi ons described in par. 2.1; Press first the enc oder-knob (B) 2" long to visualize the selected c ooki ng par ameters, then the white led (L1) will switch on; press a s econd ti me the enc oder-knob, with a si mple clic k to adjust the val ues. The white l ed (L1) is blinking to confirm that it is possibl e to modify the cooking temperatur e parameter. Select the new value, by rotating the enc oder - knob (B), cl oc kwis e to increase the val ue and countercloc kwise to decreas e it. Then push the encoder-knob to store the desired value. If you don’t need to modify other cooki ng parameters, press ST ART/STOP button (C), to start the cooking c ycle. During cooking c ycle the display (L) shows c ooki ng chamber temperature and the displ ay (N) how long the cooking phase has begun. T o visualize the parameters click the encoder - knob. 2.3B Modification of cooking time (Fig. 6) The s oftware of this oven allows to selec t a cooking time between 1 minute up to 9 hours and 59 minutes, or without any time limit. To modify the value of dis play (N) proceed as follows:

Press first the encoder- knob 2” long, then turn the encoder-knob until the white led (N1) switches on, then press a second ti me the encoder knob to modify the values. The white led (N1) is blinking to confirm that it’s possible to adj ust the parameter of cooking time. Select the new value, by rotating the enc oder - knob (B), clockwise to i ncreas e the value and c ountercloc kwise to decreas e it. T hen push the encoder-knob to store the desired val ue. The dis play (A) will show the message MANUAL and the selec ted time. During cooking c ycle the display (L) visualizes c ooki ng chamber temperature and the displ ay (N) how long the phase has begun. T o visualize cooking parameters clic k the enc oder -knob.

2.3C Modification of core probe temperature (Fig. 7) This oven permits to control the c ore temperature of the food to be cooked, as an alternative t o c ooking with a certain s elected ti me . When the white led (S) on the c ontrol panel is on, the value shown on the display (N) is the one of the c ore temperatur e, measur ed by a s kewer and can be sel ected between 20°C and 99°C.

To modify the value of the displ ay (N) proc eed as follows : first press the enc oder- knob 2" l ong, verify the white led (L1) is on, then turn the enc oder -knob until the white led (S) s witches on, then press the encoderknob for a sec ond time to modify the values . The white led (S) is blinking to confirm that it is possible to modify the core temperatur e parameter. Select the new value, by rotating the enc oder - knob (B), cl oc kwis e to increase the val ue and countercloc kwise to decreas e it. Then push the encoder-knob to store the desired value. The dis play (A) will vis ualize the messages "MANUAL" and "00.00", onc e the c ooking c ycle has begun, this value will indicate how long the c ooki ng phase with core probe has begun. 2.3D Activation of Δt Function (Delta T) (Fig. 8) To ens ure that during the entire cooking c ycle of big pieces of meat, the loss of salts and organol eptic s ubs tanc es is ver y low, it is ver y i mportant that the differenc e between c ooking chamber temperature and the temperature of the product to be c ooked remains steady. This difference is c alled “Delta T”, shortly Δt . The s maller this value is, the better the cooking results will be. This functi on allows a more delicate cooking proc ess: the food is more tasty and the weight l oss is reduced.

It is possible to acti vate this function onl y if pr eviousl y you have selected the parameter “core probe” to determine the c ooking duration. The Delta T val ue c an be selec ted between 30 and 150°C. To select “Delta T ” function proceed as follow: Press first the encoder- knob to c onfirm the val ue of the core probe temperature, then turn it the white l ed (H) is switc hed on. Click the encoder-knob to sel ect Delta T value.
Select the new value, by rotating the enc oder - knob (B), cl oc kwis e to increase the val ue and countercloc kwise to decreas e it. Then pus h the enc oder-knob to s tore the desired value. The dis play (A) will vis ualize the messages "MANUAL" and "00.00", onc e the c ooking c ycle has begun, this value will indicate how long the c ooki ng phase with core probe has begun. If you don’t need to modify other par ameters you c an press START/STOPbutton (C) to start the c ooking c ycle. During cooking c ycle the display (L) will show the c ooking chamber temper ature and the display (N) the core temperatur e meas ured by the s kewer in the cor e of the pr oduc t to be cooked . To visualize the selec ted parameters click the encoder -knob; in this c ase the display (N) will show alternativel y the c ore pr obe temperature, c onfir med by the white led (S), which mus t be on and the one selected for Delta T valued, indicated by the white l ed (H).
While pressing the multifunc tion button (Z) during convecti on cooking c ycle, you activate steam generation inside the c ooking c hamber. In this case the white led (M1) remains s witched on, until you keep pressed the multifunction button (Z) . This function is particularl y useful at the end of specific c ooking c ycl es to improve the "brown" effect on the food.

2.4 SETTING AND OPERATION OF “STEAM” MODE IN MANUAL COOKING (Fig. 9) This program is manual and is made up of a single phas e, corresponding to the steam c ooking mode. To select this cooking mode pr ess multifunc tion button (Z) again and again until the white led (V) is switched on clos e to the s ymbol

Press the encoder-knob 2"long , the c ontrol panel will visualize: On LCD dis play (A) the mess age MANUAL and the cooking time of the last selected steam c ycle On bac k lighted displ ay (L) the selected temp erature will appear for about 2”, then the display will s how the real c ooking chamber temperatur e. The value is confirmed when the white led is on (L1). The bac k lighted dis play (N) shows the cooking tim e of the pr evious selected steam cycle. If in the last coking c ycle the s kewer has been used, the display (N) will show the previous selected temperature; This val ue is c onfir med if the white led (S) is on. The bac k lighted display (M) will show the fixed value "99", that cannot be m odifi ed because the percentage of humidific ation in steam c ycle is fi x. If the oven door is open the displ ay (N) will show t he mess age o Pn. If you wish to sel ect a cooking c ycle maintaining the s ame values shown on the display, you just need to press START/STOP button (C) to start the c ycle. 2.4A Modification of cooking chamber temperature (Fig. 10)
The value shown on the display (L) is the one of the c ooki ng chamber temperature and c an be sel ected between 30°C and 100°C. Select the new value, by rotating the enc oder - knob (B), cl oc kwis e to increase the val ue and countercloc kwise to decreas e it. Then push the encoder-knob to store the desired value. If you don’t need to modify other cooki ng parameters, press ST ART/STOP button (C), to start the cooking c ycle. D uring cooking, the displ ay (L) shows the temperature inside the c hamber and the displ ay (N) how long phase began. To view the preset par ameters clic k on the enc oder.

2.4E Modification of cooking chamber humidification (Fig. 11) For the “Steam” phase the percentage of cooking chamber humidification is 99% and cannot be modified. Very important notice: It’s well known that steam temperature at atmospheric press ure cannot reach values more than 100°C. The electronic s ystem of the oven s hows on the graphic dis play (A) the message “HIGH TEMP.” , eac h ti me you s elect the steam phas e with a c ooking chamber temperature higher than 100°C.

The mess age is for information only, this situati on happens after a “convection or combi nation” phas e, with temperature higher than 100°C , each ti me you don’t carr y out a cooling cycle to decreas e the c ooki ng chamber temperature. The el ectronic s ys tem allows the functioning with steam also in this situati on.

2.5 SETTING AND OPERATION OF “COMBINATION ” PHASE IN MANUAL COOKING MODE (Fig. 12) This program is manual and is made up of a single phas e, Fig. 12 corresponding to the c onvection hot forced air with steam, also called c ombination mode. To select this cooking mode press multifunction button (Z) again and again until the white led (R) is switc hed on close to the symbol and the white led (V) close to the s ymbol Press the encoder-knob 2” long, and the c ontrol panel will vis ualize: 1 On LCD dis play (A) the mess age MA NUAL and the cooking time of the last selected combi nati on c ycl e. 2 On lighted dis play (L) the selected temperatur e will appear for about 2”, then the display will show the real cooking chamber temperature. The val ue is c onfir med when the white l ed is on (L1). 3 The lighted displ ay (N) shows the cooking tim e of the previous select ed combin ation cycle . This value is confirmed when the white led (N1) is on. 2.5E Modification of cooking chamber humidification (Fig. 13) The electronic s ystem of this oven permits to s elect a percentage of cooking chamber humidificati on between 1% and 99%. To modify (M) value proceed as follows : chec k the combi nation c ycle has been s elected, or sel ect it as described at paragraph 2.1; Press the encoder- knob (B) 2" long to visualize the selected parameters, and then the white led (L1) switches on; Turn the enc oder-knob till the white led (M1) tur ns on, then press a second ti me the encoder-knob to modify the values .

2.8 C OOKING DEVICES AND AUTOMATISMS IN THE MANUAL PROGRAMS 2.8A Cooking chamber release valve (Fig. 14) All models c an be equipped with this s ystem, that is us ed to adj ust humidification insi de the coking chamber. Opening and clos ure of the rel eas e val ve can be done turning the knob (A). This system lets the humidificati on to go out of the cooking chamber. Fig.
ATTENTION: This device is optional on all models except for models 15 x 1/1 GN.

2.8B Cook & hold (C & H) (Fig. 15 and 16) The function Cook & Hold permits to effec t at the end of the cooking cycl e a “HOLDING” cycle at a steady temperature of 50°C with no limit of ti me. This function can be acti vated in manual convec tion and combinati on programs and also in automatic cooking programs whose l ast phas e corres pond to the above menti oned programs. The modality C & H can be ac tivated after you have started the above mentioned programs; keep the button (E) pr essed 2” long (Fig.15) until the display (N) (Fig.16) shows the mess age H Ld , alternated with visualization of c ooking ti me, that can be decreas ed in case of c ooking with ti me and that c an be incr eased in c ase of cooking with c ore pr obe. For cooki ng cycl es with s kewer, also with Δt c ontrol, the Cook & Hold phas e c an be acti vated once the s elected temperature is reached, the mess age H Ld on the displ ay (N) will appear for the entire holdi ng phase. The end of the cooking time or the reac hed core temperature, are signaled by a buzz er. To cancel Cook & Hold func tion, once it is acti vated, keep the button (E) 2" long, until the display (N) will not show the message HLd anymore. Very important notice: In the cooking c ycles with c ore probe, if you don’t take the food out of the c ooki ng chamber at the end of the c ooking c ycle, the c ore temperature of the product continue to incr ease by force of habit; and cons equentl y the c ooking point will be forged. For this reas on C&H is not advised for cooki ng with core probe.

2.8C Cooking chamber cooling cycle (Fig. 17, 18 and 19) The cooking chamber cooling c ycle allows , thanks to the ac tion of the motor fans while door is open, the quic kly reduction of the cooking chamber temperature.

This function can be ac tivated by pressing the button (P) (Fig.17) then the white led (P1) will switc h on. If the oven door is closed on the display (N) will appear the mess age OPn (Fig.18). By opening the door the display (N) will show the message COL and the cooling cycl e starts. (Fig.19). The electr onic s ystem al ways suggests this option wi th high speed fan. By pressing the button (F) it’s possibl e to modify s uch setting and select low s peed fan, in this c ase the white l ed (F1) will switc h on. When the temperature of 30°C is reached, the motorfans stop and the mess age C ol is flashing on the display (N) . The c ooling c ycle can be i nterrupted with button (P), and can be temporar y stop closing the door. During cooling cycle, the display (L) will show the decreasi ng temperature i nside the cooking chamber.

2.8D Cooking chamber pre-heating (Fig. 20 e 21) After you have s elected the c ooking c ycle parameters, it is possible to do an automatic pre-heating of the c ooking chamber accordi ng to the s elected values . By pressing the button (E) (Fig.20) the c ooking chamber preheating starts, the white led (E1) confirms the acti vation of this functi on. The electronic s ystem will provi de to automatic ally increas e of 30°C the selec ted pre-heating temper ature in convecti on and combinati on mode; during this phas e the display (N) will vis ualize the mess age PrH (Fig.21). When the sel ected pre-heating temper ature is reached, you c an hear a warning buzz er, the val ue will flash on the display (N) until you open the door. T o deacti vate pre-heating, press again the button (E) or press (C) to start the previousl y s elected c ooki ng cycle.

Important notice: the maximum pre- heating temperature is the same as the max. wor king temperature; if the s elected temper ature is the max., you cannot increase it of 30°C. Very important notice: to obtain good cooki ng results, it is al ways advisable to do the preheating, before putting the product insi de the cooki ng chamber .

2.8E Activation of double speed fan (Fig. 22)
When you selec t CONVECTION or COMBINATION c ooking phases, the electronic s ystem al ways s tarts the oven with max. Speed fan, otherwise when you s elect ST EAM c ooking phases , the s ystem always starts l ow speed fan. The button (F) allows to c hoos e between low and high speed fan; if the white led (F1) is switched on, it means that low speed is activated.

Very important notice: the fan speed must be chosen in relati on to the food to be c ooked, keepi ng in mi nd that if you s elect l ow speed fan the max. allowed temperature is 220°C.
2.8F Internal chamber lighting (Fig. 23) All models are equi pped with c hamber lighting, c ontrolled by button (D). A little delay i n the lighting of the lamps , is to be considered normal.

3.3 COOK & HOLD FUNCTION COMBINED WITH AN AUTOMATIC PROGRAM The func tion Cook & Hold per mits to effect at the end of the c ooki ng c ycle a “HOLDING” c ycl e at a steady temperature of 50°C with no limit of ti me. To combine a "Cook & H old" holding phase with an automatic cooking program, pr oceed as follows: Once you have sel ected the automatic c ooking program, press the encoder-knob to confirm suc h program, then tur n the encoder-knob till you reac h the last phase of the program. At this ti me, press the button PRH/HLD (E) 5" long, the white led (E1) will turn on, to c onfirm that the holding phas e has been c oupled with the c ooking pr ogram. Turn the enc oder-knob again to selec t the first phas e of the program and press it to confirm. Now it is possible to start the automatic program by pressing the START/STOP button.
At the end of the automatic c ooking program, the display (A) will show the message HOLD ON to c onfirm that the holding phas e has been ac tivated.
Note: "Cook & Hold" hol ding phas e c oupled with an automatic c ooking program, maintains the same humidification parameter as the last phase of the program: if the las t phase of the program was c onvection mode, C ook & Hold phase will be convec tion mode at 50°C. The same thi ng is for steam and combination mode; F or the combi nati on mode also the percentage of humidificati on will be kept.

3.4 DEFERRED STARTING OF AN AUTOMATIC COOKING PROGRAM The electr onic s ystem of this oven allows the deferred starting of both a manual c ooking c ycle and an automatic cooking program. For the manual cooking cycl e, set the cooking parameters as described at paragraphs 2.3, 2.4 and 2.5 and turn the oven off by pressing ON/OFF button for 3". Press ST ART/STOP button for 10", the display (A) will show the mess age START DELAY TIME. By turning the encoder-knob you can s elect on display (N) the delay with which you want to s tart c ooking. Note: this value can be sel ected between 1 minute and 9 hours and 59 minut es. Press the encoder-knob, the display (A) will show the mess age START RECIPE: MANUAL; press the encoderknob again to start the countdown till you reach the automatic starting of the selec ted automatic c ycle. If you want to couple the deferred starting with an automatic c ooking program, when the display (A) will show the mess age START RECIPE: MANUAL, turn the encoder- knob till you vis ualize the desired program, press the encoder- knob again to start the c ountdown.
Note: while cooking with deferred starti ng, it’s i mportant to keep in mind that in this cas e you cannot preheat the cooking chamber bec aus e the food is already insi de the c ooking c hamber , and so it can be necess ar y to modify the cooking parameters to c ompensate the l ac k of pre-heating.

4.0 PROGRAM FOR WASHING AND MAINTENANCE “XT CARE PROGRAM” Due to help and promote the daily was hing and maintenance of the ovens, the manufac turer studied and tested for this purpos e a pr oduc t line, whic h is c ompletely compatibl e with the materials the cooking chamber and boiler are made of. The complete washi ng and maintenanc e operations and its products is called “ XT CARE PROGRAM” and consists of:
“XT CLEAN”: Detergent in tablets “DET ABIN OX®” for cooking chamber washi ng “XT POLISH”: Sparkling aid tabs “ BRILLINOX®” for cooking chamber rinsing
THE MANUFACTURER DOESN’T ACCEPT COMPLAINTS OF ANY TYPE AND FORM REGARDING TH E EFFICACY OF THE WASHING CYCLE , IF YOU HAVEN’T USED TH E PRODUCT S OF THE “XT CARE PROGRAM” LINE IN THE RECOMMENDED MODALTIES AND QUANTITIES. 4.1 AUTOMATIC COOKING CHAMBER WASHING It’s well known that the cooking c hamber cleaning is the basic prerogati ve of hygiene, r emove the risk of bacterial contaminations of the product to be cooked, avoid any dirt encrustations maintaining the s tainl ess steel AISI 304, of which the cooking cham ber is made. THE C OOKING CHAMBER HAS TO DO ALWAYS THE WASHING CYCLE AT THE END OF THE WORKING DAY. This c ycle is particularly advised if you cooked food using temperature more than 100°C, with convec tion or c ombination c ycles, that c aus e the dr ying up of the food residuals on the sides of th cooking chamber. The ovens with programmable c ontrol panel device, are equipped with the automatic self -cleaning system “XT ECO-CLEANER” of the cooking chamber; that foresees the an exclusi ve use off the solid detergent “DETABINOX” in prac tical c ylindrical s haped tabs. “DETABINOX®” is the product the manufacturer advises for this very important function, the cleaning cycle has been studied and tested with this product perfectly compatible with the materials the cooking chamber is made. Important advice: the entire cooking chamber and all the parts inside it, are manufactured in stainless steel AISI 304; on request the fan can be als o manufactur ed in s tainless steel AISI 316, a higher quality i n comparison to AIS I 304. Eventual oxidations si milar to rust, typic al of ferrous materials, variati ons in the as pect of above mentioned stai nless s teel, are caused by a misuse, a contac t with water with a high concentration of chlorine, corrosi ve substances and/or use of wr ong cleani ng detergents or an improper use of them. Very important: Keep in mind that the products nor mall y us ed i n the kitc hen to clean pans and/or other tools of s tainless steel, are not al ways proper to clean the c ooking chamber of the ovens and furthermore c ould c aus e relevant damages. The manufacturer doesn’t accept any complain regarding oxidations, concerning the parts manufactured in stainless steel above mentioned especially if the cooking chamber hasn’t been cleaned using the detergent “DETABINOX” suitably studied for the washing of the above mentioned steels. EVENTUAL PARTS DAMAGED BY IMPROPRE USE OF CLEANING PRODUCTS, NOT IN COMPLIANCE WITH ABOVE DESCRIBED INSTRUCTIONS WILL NOT BE REPLACED AND/OR REFUNDED U NDER GUARANTEE.

4.2 Using an automatic cooking chamber program Befor e doing the was hing c ycle it is nec essar y to strictly follow the instructi ons: Remove the trays-holder on the right side of the c ooking chamber and positi on the holder as indicated in fig. 4.2A. Pull out the XT CLEANER was hing container (A) (Fig. 4.3B) from its seat, (s ee the c omponents table 4.3). It is enough to turn it countercloc kwise and to pull it in axial way to ins ert the detergent tabs “DETABINOX®” (B) respecti ng the quantities i ndicated i n the table 4.3; Position agai n the cleaner washing c ontainer (A) in its original seat and close the oven door. Push the multi-function button (Z) for 5 s econds to gain access to the automatic programs . Turn the enc oder knob till you vis ualize on the display (A) the program n° 68 SHORT CHAMBER WASHING or n° 69 LONG CHAMBER WASHING. Click on the enc oder- knob to confirm the chosen program, pus h the START/STOP button to start the automatic was hing cycl e. The s hort program consists of a 40 minutes single washing step and a 5 mi nutes rinsing step. The long program consists of a 60 minutes was hing step and a 5 minutes rinsing step. Once the washing step is finished, it is possibl e to open the oven door and insert in ever y XT ECO CLEANER seat a “BRILLINOX” chamber rinsing tab i n order to obtai n a more efficient rinsing. Closing the oven door the washing c ycle will start over again.

Washing step: The rotation of the cleaner washing is acti vated, the water action melts “DETABINOX” tabs and liberates the s ubstanc es inside them in a semi -liquid form. The mec hanic action of the fans will spread s uch s ubs tanc es in all cooki ng chamber surfac es, es peciall y in the parts where the manual was hing cannot arrive. During this phas e the c hemical ac tion of the detergent will remove all grease and encrustations of s auces from all sur faces of the cooking chamber. Rinsing step : This phas e is ver y i mportant because it is used to remove all detergent residuals. Very important notice: the use of the spar kling aid in tabs “BRILLINOX” ensur es a good rinsing of the c ooking chamber. Note: it’s possible to select the automatic washing programs , without entering multiphase programs . It’s enough to turn the encoder- knob, when the dis play (A) will show the message MANUAL, selec t the washi ng program by pressi ng the encoder- knob and press START button to s tart it.

Attention: If the c ooking c hamber temperature should pass 40°C, after having pushed the START Button, the el ectronic s ys tem will give an acoustic signal (buzzer). On the dislay (A) the message “HIGH CHAMBER TEMPERATURE” will be shown alternating to the mess age “OPEN DOOR” to signalize the need of cooling the chamber down. When the above menti oned message appears, the operator has to do a cool -down c ycle with opened door. Once the temperature falls under 40°C, the electronic s ystem will give again an acoustic signal (buzzer) And on the display will appear the messages “TEMPER ATURE OK” and “CLOSE DOOR” to advise that you can go on. VERY IMPORTANT NOTICE: ALWAYS CHECK AFTER THE WASHING CYCLE AND BEFORE STARTING THE COOKING CYCLE, THAT THERE AREN’T ANY DETERGENT RESIDUALS INSIDE THE CONTAINER (A) AND ITS SEAT. IF THERE ARE ANY, REMOVE THEM CAREFULLY WITHH A JET OF WATER. VERY IMPORTANT: THE WASHING CYCLES CANNOT BE INTERRUPT ED. 5.0 SETTING OF THE LANGUAGE The electronic s ystem of this oven allows to manage mess ages and names of automatic programs on display (A) in different languages, to make writing and understanding easi er. To select the desired l anguage, proc eed as follows: Press START/STOP and PRH/HLD at the same time for 10"; the display (A) will show the mess age here on the right hand side. If the vis ualized language is correct, you jus t need to turn the enc oder -knob to go on with the s election of temperature unit of measur ement. If you wish to s elect another language press the encoder -knob, turn it until you visualize the desired language and then press the enc oder-knob again to c onfir m the value. 5.1 SETTING OF TEMPERATURE IN °C OR °F Once you have selec ted the language, the electronic system suggests you to choos e the desired unit of measurement for the temperature. The oven suggests you for default the unit of meas urement in centigrades (°C), if this option is correct, turn the enc oder to pass to the following option which is the pass word. If you need to selec t Fahr enheit (°F) degrees, press the encoder- knob, then turn it until you visualize °F at the end press it again to confirm the value. 5.2 PROTECTION PASSWORD FOR AUTOMATIC COOKING PROGRAMS The electronic s ystem of this oven allows to protec t with a password the automatic cooking program parameters. Suc h pass word will be as ked to modify already stored parameters, as described in the previous paragraphs. It is allowed to create a single pass word, to modify programs with more phas es, between no 01 and 67. Only who knows the password, c an use it. Once you have c onfirmed the unit of meas urement, the electronic s ys tem suggests you to acti vate a password. The display (A) will s how the message here on the right hand si de, if we turn the encoder the pass word will not be activated. To ac tivate the password, turn the enc oder-knob until you visualize on the dis play (A) the message here on the right hand side, then press the encoder -knob to c onfirm your choice. To create your pass word you c an use numbers from 0 to 9. Turn the encoder and press it to confirm eac h one of the numbers of the pass word. Once you have enter ed the pass word you c an modify the c ooki ng parameters of the selected automatic program. Very important: modifications you do while the automatic program is worki ng, are limitated to the execution of the program. At the end of the cooki ng program the s et parameters will go bac k to the val ues before modification. Instead the modifications done while the oven is not carryi ng out any automatic program, will be definite.
5.3 TURNING THE OVEN OFF To turn the oven off, press ON/OFF button for 3". When the oven is off, the control panel is as in the drawing on the right hand side. Note: if we turn the oven off, while the oven is carrying out a multiphas e recipy, at the following lighting of the oven the electronic s ys tem will begin fr om the l ast phase. 8.0 MAINTENANCE It is compulsor y to turn the main switc h off and close the water on-off val ve, both i nstalled upstream from the oven before ser vicing it. The oven should be cl eaned at the end of eac h wor king day, using specific products onl y. If an anti fat-filter is installed (supplied on request) it needs cleaning after ever y 3 cooking c ycles, because it gets clogged. Cooking would be uneven and also c ooking ti me would be longer. All stainless s teel parts should be: 1- cleaned with clear, soapy water; 2- rinsed with water; 3- dried thoroughly. It is absolutel y forbidden to use scrapers, metal s oap pads and other common s teel tools as they could besides scratc hing the s urface, deposit iron particles that, oxidizing would cause rus t to for m. DO N OT WASH THE APPLIANCE WITH JETS OF WATER DO N OT USE PRODUCTS T O WASH THE STAINLESS STEEL PARTS, WHICH CONTAIN CHLOR ( BLEACH, CHLORINE ACID) EVEN IF WATERED DOWN 8.0A Analogic Cleaning the cooking chamber of analogic models All food and r esiduals and greas e must be removed from the coking chamber eac h time it is used for cooki ng. The juices and fat that drip from the food and fall to the bottom, are c onveyed to the drain in the centre. T o clean the oven, use a degreasing product s uitable for stai nless steel, a spray-on product for instanc e, that covers all areas, especi ally the bac k of the s uction conveyor. Then proceed as follows: 1- Heat the oven to a temperature of 50°C; 2- Appl y the degreasi ng product i n the rec ommended quantity; 3- Close the door; 4- Select the steam c ycle; 5- Turn the oven on for 20-30 minutes. After this ti me open the oven door, protecti ng your eyes and s kin from the fumes , and then was h with water or put the rem ovabl e parts in the dishwasher. The fan mus t be kept cl ean to avoid grease and fat from depositi ng on the blades causi ng motor revolutions to decreas e leading to a reduction in the flow of air and dangerous mechanical str ess to the motor itself. When the applianc e is not used for long periods of ti me : 1-Turn the main switc h off 2-Close the water on-off val ve ( both installed ups tream from the oven); 3-Leave the door open so air can circulate and prevent bad odors; 4-With a cloth s pread a thin protecti ve layer of Vaseline oil on all stainl ess steel surfaces;

8.1 WHAT TO DO IN CASE OF A BREAKDOWN AND/OR EXTENDED PERIOD OF NON U SE If the oven does not work properl y, br eaks down or if the s afety thermostat triggers, switch the oven off, disc onnect the elec tricity and water suppl y and notify the technical assistanc e s ervice. All work of installation, maintenance and repairs should be carried out exclusively by qualified and authorized personnel. The appliance s hould be c hec ked at l east onc e ever y 6 months for which purpose we suggest stipulati ng a maintenanc e contract. ATTENTION The manufacturer declines all and ever y res ponsibility attributable to tr anscription errors in this handbook and r eser ve the right to make any modific ations to the applianc e if it may feel necess ar y and may not alter its functi onal char acteristics. 9.0 COOKING TIPS 9.0A Convection cooking: The convecti on s ys tem, with hot air and temperatures ranging from 50 to 270 °C is suitable for c ooking: first c ourses , meat, fish, vegetabl es and cakes . Different foods c an be c ooked together at the s ame temperature without flavours getting mingled. For the bes t results us e GASTRO NORM type baking trays with edge, al ways leaving a space of at least 3 cm between the food you are c ooking and the baking tray above it: this is to leave room for the air to circulate properl y. It is always good practice not to let food go beyond the tray’s edge. If this is not possible do not put this tray immediately under another one. To choos e the bes t c ooking temperature bear the followi ng rule in mind: select a temperatur e that is about 20% below the one normally us ed in traditional, non fan, ovens. The forced ventilati on system of these ovens guarantees s horter cooki ng times . If you fail to follow this rule, it is possibl e that the food you are c ooking will not be perfect. 9.0B Steam cooking: With this method, at temperatur es var ying from 50-100°C you c an boil, defrost, sterilize and regenerate all foodstuffs. Steam, without pressure guarantees even, delicate cooking: the food looses almost none of its vitamins or mineral salts and cooking ti mes are muc h shorter c ompared to those when water is us ed. We al ways r ecommend usi ng the perforated G.N. tray so that, when c ooking is fi nished , there is no water on the bottom of the tray. If you need to us e the c ooking liquid you can put an ordinary G.N. tray underneath. When c ooking different types of vegetables together remember that the s tronger flavoured ones shoul d al ways be put at the bottom of the oven. 9.0C Steam-convection cooking: This method, commonl y c alled “ combined”, that joins the advantages of c onvention with heated air (speed, saving on energy and room) to s team (maintaining the nutritional and organoleptic properties), is excellent for food that has to be cooked quic kly at high temperatures and with a lot of steam. In this way the food stays tender and loses ver y little weight. It is particularl y suitable for braised meat, stews and large pieces of meat for which we al ways advise using the heart-temperature control with the s kewer probe. 9.0D Vacuum cooking: This is the s ystem that lets you s team cook vacuum pac ked food at a maxi mum temperature of 90°C. F or this type of c ooking we suggest using the r ungs because with this kind of pac k there is no danger of leaks.

9.1 TIPS FOR CONVECTION COOKING 9.1A Baking firs courses: To cook lasagna and other oven baked pas ta, we suggest using the 45 and 60 mm deep G.N baking trays depending on the thic kness of the product. Cooking temperatures c an var y from 160 to 180 °C, while temperatures above 200°C are needed for browning. 9.1B Roasting meat: Always use G.N. baking trays for cooking meat, chic ken and fish, the depth depending on the siz e of meat to cook. Al ways r emember that the food should be no higher than the tray. With this cooking method you will need ver y littl e condi ment; jus t grease and fl avour the food before putti ng it in the oven. Cooking temperatures can range from 150 to 180 °C and shoul d be set acc ording to the size of the piec e of meat. The bigger it is the lower the cooking temperature. 9.1C Grilling: Place the food on the grills provi ded with the oven after having brushed on oil and herbs for flavouring. For the bes t result the food should be arranged so that there is enough spac e between eac h pi ece to allow optimum ventilation. 9.1D Bakery products : To cook food that rises we s uggest using 40-60mm high baking tr ays; vice versa for other products that do not rise, like biscuits , etc. the 20 mm high trays can be used. For an even better result we suggest using enamelled steel or al umi nium baking trays. These materials , thanks to a better trans mission of heat, guarantee exc ellent results. 9.2 REMEDIES TO COOKING HITCHES If cooking is uneven: Chec k that there is at least 3 c m between the food cooking and the tray above it: if there is less spac e it will not allow correct ventilation of the food to be cooked. Make sure that the foods to cook are not against eac h other which would prevent correct ventilation between them. Cooking temperature might be too high, tr y with a lower temperatur e. If the food cannot stand direct contac t with the hot air it mus t be put i n suitabl y deep G.N. contai ners. If the food is dry: Reduc e cooking time. The temperature mus t be adequatel y lower ed. R emember that the lower the temperatur e is the less weight will be los t. The combined c ycle for a humidity rich cooking environment was not selected. The food was not greased with oil or juices before it was put i n to cook
