       MOHAWK WACKY WAFFLES What makes this everyday breakfast treat so wacky? Twists that you wouldn’t expect! Just like Mohawk’s Wacky Wednesdays - when campers wear pajamas, inside-out clothes and silly hats to camp turning your waffles “wacky” makes the day that much more fun. (And they’re not just for Wednesdays!) Ingredients for Basic Waffles:* 2 cups all-purpose flour 1 tablespoon sugar 1 teaspoon baking powder ½ teaspoon salt 3 eggs 1 ¾ cups milk ½ cup canola oil Cooking spray *Of course, a ready-made waffle mix such as Bisquick® works just fine, too! Equipment: ¾ ¾ ¾ ¾ Two large mixing bowls Whisk Ladle or large spoon Waffle iron (NOTE: Do not use without an adult’s help!) Steps: 1. 2. 3. In a large mixing bowl, stir together the flour, sugar, baking powder and salt. In another mixing bowl, whisk the eggs together with the milk and oil. Add this mixture to the dry ingredients mixture, and stir until just moistened (should be lumpy). ADULT HELP TIME! Preheat your waffle iron. Spray the inside of the iron with cooking spray and when it’s ready, spoon in some batter and cook each waffle until crisp! (Many waffle machines will beep to tell you they’re done cooking.) „Wacky‰ Variations: ‐ ‐ ‐ ‐ Tex-Mex Waffles – Make basic waffles, leaving out the sugar and adding ¾ cup cheddar cheese and a pinch of mild chili powder to the batter. Cook waffles and top them with salsa, sour cream and beans or shredded chicken. Banana Split Waffles – Make basic waffles. Top with vanilla ice cream, sliced bananas, cherries, whipped cream and chocolate sauce. Yum! Pizza Waffles – Make basic waffles, leaving out the sugar. Cook until just lightly browned. Top each waffle with a thin layer of tomato sauce and shredded mozzarella cheese. Bake in a toaster oven or under the broiler for 1-2 minutes, until cheese melts. Veggie Waffle Sandwiches – Make basic waffles, leaving out the sugar. Let cool. Spread with a thin layer of hummus or cream cheese. Layer on sliced cucumbers, tomatoes and shredded carrots (or any other veggies you like). Top with another waffle for a delicious, healthy sandwich!
