AR-7E/VH Rotisserie Quick Reference Guide Pre-heating the Electric Rotisserie 1. Ensure the filters inside the hood are correctly in place and the door is closed. 2. Turn on the hood by turning the power switch to the ON (“I”) position – Note that the fan indicator light will illuminate while running 3. Wait 5 seconds and press the “Reset” button to allow the rotisserie to be turned on. 4. Press the ON/OFF button to turn the rotisserie on. – The display will show the last set holding temperature. 5. Press the COOK key. – The display will show the last set cook temperature. – The preheating light will become illuminated. 6. Set Cook temperature by pressing the up and down arrow keys. 7. Press and set the COOK key again for 2-step cooking (optional). 8. Set Cook temperature again by pressing the up and down arrow keys (optional). 9. Press the TIME key. – The display will show the last set cooking time. 10. Set Time by pressing the up and down arrow keys. 11. Press the TIME key for 2-step cooking (optional). 12. Set Time by pressing the up and down arrow keys (optional). – If you used 2 step cooking the previous cycle, and you want to do single step cooking this time, you need to change the second cooking time to 0:00 13. Press the HOLD key. – The display will show the last set hold temperature. 14. Set Hold temperature by pressing the up and down arrow keys. 15. Press the HOLD key again to add browning time. 16. The light marked “ready” will be lit when the oven has been pre-heated to the correct cook temperature. Loading the Electric Rotisserie 1. When preheating load product onto skewers – Insert whole chickens with the legs toward the square end of the skewer. Load up to 3, 3-1/2 lb (1,6 kg) chickens per spit for a total of 21 chickens or 4, 2-1/2 lb (1,1 kg) chickens for a total of 28 whole chickens. 2. Insert the tapered prong end into the outermost hole on the right drive wheel until it catches. 3. After placing one skewer into the oven, rotate the rotisserie using the jog button to load every other position. 4. Continue to load the skewers by skipping every second space to maintain balance within the rotisserie. Cooking 1. After loading the skewers, press the START button. 2. Timer will sound when the cooking cycle is complete. 3. Check internal temperature. 4. Once the product has reached the desired internal temperature, push the STOP button. Holding To stop a cooking program early and continue to hold. 1. Press STOP; the Rotisserie will stop. 2. Press ON/OFF; The rotisserie will continue in the hold mode. 3. Press START; The rotisserie will begin to rotate and hold at the set temperature. 4. Once the product has reached the desired holding time push the STOP button. Unloading Electric Rotisserie 1. After you have pushed the stop button, open the door. Using heat resistant gloves, do the following to remove the skewers: – Grab each end of the skewer. – Gently slide the skewer to the left to remove the tapered prong end from its holes on the drive wheel. – After completing previous step, gently slide the skewer to the right to remove the two pronged end from its holes on the drive wheel. – Place skewers onto rack and proceed to the packaging area. – To maintain a balanced drive wheel, rotate using the jog button to remove every other skewer. 1-800-558-8744 www.alto-shaam.com 9136 (09/11) AR-7E/GC Rotisserie Grease Collection Guide 7. Loosen black knob to release telescoping funnel. 1. Open oven door and pull grease tray forward. 2. Position grease collection trolley in front of oven. Extend telescoping funnel. 4. Using hand protection, turn elbow drain 90° to the down position. 5. Allow grease from pan to drain into the grease collection trolley. 6. Using hand protection, turn elbow drain 90° to the up position. 9. Push grease tray back into oven and close oven door. Return grease trolley to its original position. 10. Check grease level in the rolling grease collection unit after every drain cycle. 8. Allow telescoping funnel to return to its starting position. 3. Position telescoping funnel behind elbow drain.
