1. Manufacturer’s Introduction Introduction Swift espresso preparation system The Swift EPSB grinds, doses and tamps coffee directly into the portafilter, eliminating the need to do this manually. It measures and doses by volume, not time, so waste and product inconsistency are reduced. At the same time, the Swift EPSB enhances coffee freshness by grinding coffee by dose, not by bulk.

3. Important Safety Information & General Precautions from the Manufacturer
Warning Equipment contains dangerous voltages and can be hazardous if installed or operated incorrectly. Non-compliance with warnings or failure to follow the instructions contained in this manual can result in loss of life, severe personal injury or serious damage to property. Some procedures in this manual require the power for the equipment to be turned off and isolated. Turn the power OFF at the power point and unplug the power supply lead by the plug body.

Read & understand all instructions that appear in this manual prior to the installation & operation of the equipment. Do not operate this equipment if it has a damaged cord or plug, if it is not working properly, or if it has been damaged or dropped. Train all staff on the operation of the equipment and verify ability. Do not hose down or splash water on the equipment. Qualified and skilled personnel only should service this equipment. Contact the Supplier for repair or advice.

6. Equipment Operating Instructions Engaging the portafilter The portafilter engages directly to the Swift EPSB. Since the Swift EPSB has no watertight seal, it is not necessary to force the portafilter into place. Engage the portafilter with only a light amount of force. If the grinder shifts on the counter top, you are using too much force.

Operating the SWIFT Once the portafilter is engaged, press one of the start buttons located at the front of the Swift EPSB. The right and left buttons correspond to the right and left bean hoppers. Coffee will be ground, dosed, and tamped from one of these hoppers, depending on which button you press. The red indicator lights located above the start buttons are illuminated when the Swift EPSB is grinding and tamping. Wait for the light to turn off before removing the portafilter. Once the red light corresponding to the button selected is no longer illuminated, you may remove the portafilter from the Swift and engage it into the espresso machine. The Swift EPSB tamps the coffee as it is ground. When the volume of ground coffee in the portafilter reaches the set level, the grinding motor turns off. The tamping motor continues to run for 1-3 seconds, "polishing" the tamped coffee.

Blinking indicator lights The indicator lights will flash for a number of reasons. These are summarized below:

You attempted to start the process with a full portafilter. The safety timer has run out due to: Empty hopper; Closed bean gate; or Plugged hopper chute. There is no portafilter engaged in the Swift EPS.

Adjusting coffee grind To achieve your desired brew time and coffee consistency, a manual adjustment can be made to the grinder to modify the coarseness or fineness of the coffee. (The tamping pressure is not adjustable and remains constant). Rotate the adjustor knobs as described below. (1) Locate the grinder adjustor knob that corresponds to the left or right side of the grinder. (2) Grinding finer coffee will result in a slower pour. To achieve a slower pour, adjust the knobs as follows: • •
Left hopper: Turn the knob counterclockwise. Right hopper: Turn the knob clockwise.
(3) Grinding coarser coffee will result in a faster pour. To achieve a faster pour, adjust the knobs as follows: • •
Left hopper: Turn the knob clockwise. Right hopper: Turn the knob anticlockwise.
When making this adjustment, remember to turn the knob at a minimum of half-turn increments. Brew one or two shots to test the adjustment.
Note: Several variables can affect coffee quality: temperature, humidity, freshness of roast. All of these can cause slight variations in shot times. 8
7. Equipment Care & Cleaning Daily cleaning Daily cleaning of the Swift EPSB is important for the quality of your coffee beverages and for the mechanical life of the equipment. When the cleaning instructions are carried out each day, there will be little chance of old coffee residues spoiling the flavour of your espresso drinks, or interfering with the mechanical operation of your machine. There are three areas that must be cleaned: the bean hoppers, the burr chamber, and the impeller.

1. Close the bean gate to prevent coffee from entering the burr chamber. 2. Grind coffee into the portafilter to clear the burr area of coffee. Usually two doses. 3. Unplug the Swift.

4. Loosen the safety screw that secures each hopper to the base. 5 .Remove the hoppers, while holding the bean gate to prevent them from opening.

6. Vacuum out the burr area. 7. Using a clean towel, wipe the inside of each hopper. Pay close attention to the bean gate area. 8. Reassemble and test for proper operation.
CLEANING THE IMPELLER

1. Unplug the Swift. 2. Remove the tower cover. 3. Push the shaft brake backwards and hold. 4. With the brake applied, use your thumb and forefinger, pressed against the impeller's flaps, to remove the impeller 5. With the impeller removed, clean around the bayonet ring with a brush and wipe loose grounds from this area.

6. Insert the brush into the collection area above the impeller and again wipe away loose grounds. 7. Clean the impeller with a soft dry cloth. 8. Reinstall the impeller by turning counter-clockwise.
USING THE CLEAN-OUT TOOL If either Grinder motor fails to operate, the usual cause is a clogged grinding chute or chamber. 2002 model Swifts now come with a tool that can be used to unclog the chute without disassembling the grinder.
1. With this new modification to the grinder there is no need anymore to remove the tower to use the clean-out tool. 2. Turn the grind adjust knob 4 turns in the direction of “faster pour”

3. Rotate the cover to the grind chute to access the grinding chute hole inside to clean the grinder. 4. Locate the clean-out tool access hole on either side of the coffee chute.
5. Gently and with caution insert insert the Clean-out tool into the hole and apply forward pressure until the tool is fully inserted into the chute. 6. With the clean-out rod fully inserted, wiggle and rotate the tool to loosen the compacted coffee 7. Remove the tool and push the appropriate start button. 8. If the grinders chute clears return to normal operation. 9.If the grinder chute remains clogged, disassemble the grinding burr area and clean thoroughly. Reset grinder adjustment to the original setting

GRINDING BURR REPLACEMENT Periodic burr replacement is required. While the ceramic burrs used in the Swift EPSB have a much longer life expectancy than normal steel burrs, it is still necessary to watch your coffee for the tell-tale signs of burr wear. These signs include inconsistent shot extraction times, and the absence of noticeable change in your espresso when adjustments are made to the grinder.

9. Remove the adjustment gear assembly from the upper burr carrier 10. Rotate the upper burr carrier anticlockwise until the threads are free allowing removal 11. Remove the upper burr carrier
12. Using a flat-tip screwdriver, remove the screws that secure grinding burrs 13. Vacuum and clean out the burr area. Ensure the area is totally free of coffee debris 14. Installnew grinding burrs. 15. Clean and lube the o-ring on the upper carrier. 16. Reinstall the upper mill carrier.

17. Rotate the carrier clockwise until you see the lower mill move 18. Once you locate the point in which the two grinding burrs come into contact with one another, turn the upper carrier counter clockwise 1/4 turn 19. Reinstall the worm gear and line up the knob pin parallel with the side of the grinder 20. Reinstall the clamp ring and tighten. Ensure the screw can be accessed with the grinder cover installed

21. Ensure the knob pin is centered in cover hole. If not, loosen clamp ring screw and adjust 22. Reinstall the knobs and check for freedom of motion. If the knobs are hard to turn, loosen the clamp ring screw and adjust the gear assembly 23. Reassemble the grinder and test for proper operation

-Check that the electrical plug is fully inserted -Switch the on/off switch to the on position (the light should be lit) *Check fuses Pushing the start button and the LIGHTS FLASH. -The portafilter is not fully engaged - The portafilter is already full - The tamper is stuck in the full or up position (see tamper cleaning instructions) - The safety timer has run out due to an empty bean hopper, closed bean gate, or a plugged bean hopper chute. *safety micro-switch is faulty *safety micro-switch rod is not contacting the switch properly
Grind TIME OUT is reached before basket is full. -Check that the bean hopper gate is fully open - Grind coarseness may be too fine - Check passage below bean hopper for obstructions *Adjust grind time reostat
One GRINDING MOTOR does not run (serial numbers 0-655) -Check for blown fuse (see manual under fuse replacement) -If a grinder motor fuse is blown replace it with a 10 amp GDC fuse. Before starting the grinder motor remove the bean hopper (see manual) and ensure that the motor spins freely. If it does not spin freely, follow the burr chamber cleaning instructions and look for foreign objects: nail, paper clip, rock, penny, etc.
One GRINDING MOTOR does not run (serial numbers after 656) -Press the reset button that corresponds with the motor that does not run. If the reset button pops out again, turn the grin d adjust knob 4 rotations forward in faster pour direction, insert the clean out rod (see manual) remove the clean out rod, and restart the grinder. -If the reset button pops out again, remove the bean hopper (see manual) and ensure that the motor spins freely. If it does not spin freely, follow the burr chamber cleaning instructions and look for foreign objects: nail, paper clip, rock, penny, etc. -Do not attempt to reset the breaker more than twice as this action may overheat and damage the triac on the main power board. *Swap the power leads between the two motors to troubleshoot motor and triac. Shot gushes out at first and then slows down -Adjust finish height of impeller

Safety micro switch Impeller Micro-switch - 1 This micro-switch is activated by the impeller disc. The impeller disc rises upward as coffee is dosed into the portafilter. When sufficient coffee has been ground and dosed, the impeller rises up far enough to actuate the micro-switch, which causes the grinder motor to stop.
Safety Micro-switch – 2 This switch is activated when the portafilter is engaged in the bayonet ring. The grinder will not operate if this switch is not activated.
Grinder Motor Reostat – 1 & 2 Adjusting this reostat determines how long the tamper motor runs after the grinder motor has shut off. If the tamper motor stops, the reostat can be adjusted clockwise to increase the polish time. The rheostat determines the maximum amount of time the grinder motor runs. If the grinder motor stops before the portafilter is completely dosed with coffee, the rheostat should be adjusted clockwise to increase the grind shut-off time.

Fuse replacement and reset switches The Swift EPSB has four fuses located at the rear of the machine behind the removable panel. These correspond to each of the grinder motors, the tamping motor, and the electronic controls. Occasionally it may be necessary to replace a fuse. When switching fuses be sure to use only correctly rated replacement fuses. Electronics = 1 ea. @ 125m amps (normal); motor, grinder = 2 ea. @ 10 amps GDC; motor, tamper = 1 ea. @ 1 amp GDC. On model year 2002 and thereafter, the 10 amp motor fuses are replaced with reset switches on the exterior of the grinder. The head of the switch will protrude when it needs to be reset.

1. Unplug the grinder 2. Remove the 2 lower screws on the back panel. Do not remove the ground wire screw 3. Pull the panel out and down to remove it from the grinder 4. Locate the damaged fuse, identifiable by a broken filament and discoloration of the fuse glass

5. Using the fuse tool provided with the Swift, place the tool onto the fuse and slide the yellow sleeve forward to lock the tool's jaws 6. Pull out gently but firmly to remove the damaged fuse and discard 7. Place a good fuse into the fuse tool's jaws and reinstall it into it's slot. 8. Reinstall rear panel, plug in grinder and test for proper operation.

Adjusting finish height of the impeller To ensure consistency of the shot time and shot quality, the tamping impeller must be adjusted to the proper height. Follow the steps below to determine the impeller's height

1. Insert a portafilter 2. Remove the loaded portafilter 3. Engage the portafilter into the Swift and then push either button. Remove and inspect the surface of the coffee puck. Coffee dose too low. Impeller must be raised. The gap between the top of the coffee puck and the bottom of the diffuser screen is too wide. There is little to no indentation in the center of the coffee pack from the diffuser screw.
Correct coffee dose. The diffuser screen is barely touching the upper surface of the coffee pcuk in the portafilter. There is a small indentation from the diffuser screw.(1) There is evidence of the diffuser screen slightly touching the coffee pack around the outer circumference.(2)

Coffee dose too high. Impeller must be lowered. The diffuser screen is pressed into the coffee puck, evidenced by a pronounced ring from the diffuser screen around the circumference of the portafilter.(1) There is also a deep indentation in the center of the coffee pack from the diffuser screw.(2)
HOW TO PERFORM THE ADJUSTMENT:

1 . Remove the four screws that secure the tower to the Swift. 2. Remove the tower from the grinder and locate the white Teflon disc directly under the tamping motor. Inserted in the Teflon disc there is a brass collar. As you rotate the disc you will notice three holes into the brass collar where an HEX screw is inserted. Locate the slot where the HEX screw is installed. The screw is installed in the slot that lines up with the flat side of the impeller’s shaft.

3. Using a Long-arm L-key 3/32 HEX SIZE (part# 5.129 in your kit), loosen the screw several turns. It is not necessary to completely remove the screw. 4. Pulling the shaft brake, use your other hand to rotate the impeller one or more complete turns. Rotate the impeller to the left (anticlockwise) to lower the impeller, DECREASING THE DOSE. Rotate the impeller to the right (clockwise) to raise the impeller, INCREASING THE DOSE. Once set the height of the impeller tighten back the HEX screw on the shaft.
IMPORTANT MAKE SURE TO LINE UP THE SCREW’S HOLE WITH THE FLAT SIDE OF THE SHAFT. IF YOU TIGHTEN THE SCREW ON THE ROUND SIDE OF THE SHAFT, WHILE OPERATING THE SCREW WILL LOSE GRIP AND THE GRINDER WILL SUDDENLY CRASH. Once the proper adjustment has been made, reassemble the grinder and check for proper operation.
