Texture C – SMOOTH PUREED This food texture includes foods which are smooth and lump free but they may have a grainy quality. They should be moist and cohesive enough to hold their shape on a spoon. A blender, vitamiser or food processor will be required to produce foods of this texture. It is important that texture modified diets are well balanced. Choose a variety of foods for your meals. This will ensure that your body is getting all the nutrients it needs. RECOMMENDED FOODS Meat Chicken Fish ƒ Meat/ chicken/ fish dishes blended with gravy or sauce. Serve with extra gravy or sauce Meat Alternatives ƒ Pureed baked beans, lentils or other cooked beans ƒ Tinned refried beans or Hummus ƒ Soufflés and mousses eg. salmon mousse ƒ Pureed scrambled eggs ƒ Eggs blended into soups (prior to cooking) ƒ Soft silken tofu ƒ Pureed or well mashed vegetables without chunks, lumps, pulp or seeds ƒ Homemade or canned soups that have been pureed in a blender and strained. ƒ Smooth lump free cereals eg. Semolina, pureed Porridge, baby rice cereals Vegetables Soup Breakfast Cereals Other Cereals ƒ Well cooked pasta, noodles or rice that has been pureed in a blender with added sauce. ƒ Gelled bread/cakes (bread/cake which has been soaked in jelly or gel so that the entire food portion becomes soggy) Fruit ƒ Stewed or canned fruit that has been pureed in a blender ƒ Mashed banana or pawpaw ƒ Fruit packs labelled ‘puree’ Dairy foods & Desserts ƒ Milk, milkshakes, fruit smoothies ƒ Plain or vanilla yoghurt (no lumps), Fruche ƒ Custard , Mousse, Soft cheesecake (no base), Ice cream ƒ Smooth cheese pastes eg. Smooth ricotta FOODS TO AVOID ƒ Whole or minced meats that have not been pureed in a blender ƒ Lentils or legumes that are not pureed or well mashed to a smooth paste ƒ Fried, poached and hard boiled egg or scrambled eggs that are not pureed ƒ Sticky or cohesive foods eg. Eat six (6) small meals a day instead of 3 larger ones. This important if you get tired when eating larger meals or if you are a slow eater. Try to use the food that the rest of your household is eating to make your pureed food. This will save time and money. When you blend or mash food, add liquid for a moist, smooth texture. For example when mashing fruit or vegetables, add milk, fruit juice or cream. To blend meat to a smooth paste, add gravy, stock, milk or cream when blending. Use foods of different colours to make your meals look more appealing. Use herbs and spices to add interest to foods.
